Utilizing our recently acquired, hand selected Elijah Craig single barrel bourbon...we’ve once again redefined the simplicity of the Old Fashioned and given it a welcomed warm wintery twist. Slip into your grandmother’s hand knit sweater with the snowflake patterns, belly up to the bar, leaving snow melted salt puddles under your boots and barstool, and sit rosy cheeked with your closest friends while enjoying this rich addition to the Merchant Old Fashioned canon. Doctor Albert Hofmann | 11

Rittenhouse rye, Branca Menta, chocolate orgeat, coconut milk, egg white and shitake mushroom tincture

On April 19th, 1943, Dr. Albert Hofmann purposefully ingested 250 micrograms of lysergic acid diethylamide (or LSD) and rode his bicycle home from his lab in Basel, Switzerland. This was the first ever acid trip and began what would become a lifelong relationship with the drug for the Doctor. He referred to it as

“medicine for the soul”, and championed its effects while proposing many uses for it in psychoanalysis.

“It gave me an inner joy, an open mindedness, a gratefulness, open eyes and an internal sensitivity for the miracles of creation. I think that in human evolution it has never been as necessary to have this substance LSD. It is just a tool to turn us into what we are supposed to be.”

Wolves in the Throne Room | 11

St. George Terrior gin, Averna amaro, spruce syrup, Bittercube Cherry Bark Vanilla bitters and lemon juice

In the description of their Terroir Gin, St. George Spirits writes: “We wanted to make a spirit that conveyed what we love about the monumental groves of trees, moist and misty glens, and sunbaked chaparral of our favorite local parklands.” Similarly, Olympia, Washington based band “Wolves in the Throne Room” are beautifully described by bartender Steve Vasos as being “a pure mountain spring of sylvan spirituality, (they) represent an atavistic rebellion against humanity’s willful amputation of its natural heritage. Think unfettered rivers, rain storms falling on ancient cedars, mountains, wood smoke, Norse mythology, long winters and the solace provided by wild forests and nature.” He doesn’t talk much, but that Steve is a real deep dude.

Reading through Phillip Pullman’s epic trilogy of fantasy novels “His Dark Materials”...we got to thinking about dæmon’s. You see...each human character in the books has a “dæmon” which is a physical manifestation of their inner soul that takes the form of an animal. As we said, it got us to thinking about what our dæmon would be. Thor, the wonderfully redheaded barkeep behind this wintery carbonated cocktail, would undoubtedly have an orangutan as his dæmon. Cuz of the hair and the hairy arms. In Australia...the nickname for redheads is “ranga” which is short for orangutan. #possiblenewnickname

Ruby of the Rio Grande | 12

Cinnamon Milagro Blanco tequila, Ancho Reyes ancho chili liqueur, maple syrup, cayenne tincture and carbonated water

One of the most delicious grapefruits one can have is the “Texas Red” grapefruit, or “Rio Red” grown along the banks the Rio Grande in southern Texas. It was carefully cultivated by a farmer named A.E Henninger after he came across a natural mutation or “sport” grapefruit growing in his grove in 1929 that tasted much sweeter than the others he was growing. We here at Merchant know this little tid bit because we’re citrus nerds. That’s right you read correctly. We get nerdy about citrus fruit and we’re not afraid to admit it. And you know what? That’s part of the reason our drinks are so darn delicious...so just back off about it, all right? Anyhoo… let this wonderfully citrusy and refreshing nerd beverage transport you to the southern tip of Texas, taking your mind off the snow and frigid air outside, if only for a moment. For a longer vacation, we recommend Kayak, or Travelocity.

Falcon Feather Cloak | 10

Plantation Barbados 5 year rum, Smith and Cross rum, winter spice syrup, lime and grapefruit juices

Norse Goddess Freyja was known to be a bit of a party girl, with a penchant for thrill seeking and fine material possessions. One of her most well known possessions was her cloak, made of beautiful falcon feathers. We’ll bet she looked pretty bangin’ in her falcon feather coat, bar hopping around the afterlife on a Friday night. Anyone who would dawn the cloak would be immediately transformed into a falcon. The poem Þrymskviða features Loki borrowing Freyja's cloak of feathers and Thor dressing up as Freyja to fool the lusty jötunn Þrymr. In the poem, Thor wakes up to find that his powerful hammer, Mjöllnir, is missing. Thor tells Loki of his missing hammer, and the two go to the beautiful court of Freyja. Thor asks Freyja if she will lend him her cloak of feathers, so that he may try to find his hammer. Once, here at Merchant...bar manager Thor Messer asked to borrow bartender Carlos Espinosa Lopez’s purple velour pimp coat because he’d forgotten his muddler at home and needed to run out and grab it. The coat looked ridiculous on him.

Hermit Crab Crash Pad | 13

In college...I had a buddy named Derrick. Everyone called him “Deazy”. He was a Hermit Crab. He was an 8th year senior working on a bachelor degree in communications. His parents were loaded. Anyway, after Deazy got kicked out of the fraternity for stealing mollusk shells and general uncleanliness, he got himself an apartment on State Street that we would all party at. Every month we would do a Tiki party at Deazy’s apartment that became quite legendary: “Deazy’s Freaky Tiki Queasy”. That dude could make the best Mai Tai you’ve ever had, especially for a decapod crustacean. We lost touch after college. I wonder what ever happened to Deazy? I should look him up on Facebook...

Ah whiskey... Sweet glorious whiskey. We could fill volumes with the history, politics, and description of this heavenly liquid, but our printer is charging us by the word and we don’t want to keep you from a drink for too long. Cliff Clavin might tell you that distillation arrived in Scotland sometime before the 15th century after being invented by Babylonians in Mesopotamia in 2nd millenium BC. But who wants to sit next to that guy at the bar. In short, we will just say that whiskey, or “water of life” as it was translated from, is a complex and wonderful subject. Anyone looking to find more information might reference “The Ultimate Guide to Spirits and Cocktails” by Andre Domine, “The Whiskey Bible” by Jim Murray or “But Always Fine Bourbon” by Sally Van Winkle Cambell.

gin The word “gin” gets its origins from the Dutch word “genever,” which means juniper. This is a nod to the botanicals that give gin its life and herbaceous qualities. Made with botanicals such as juniper berries, bitter orange, grapefruit, coriander and jasmine, gin is easily one of the best base spirits for building complex and balanced cocktails. While London Dry is perhaps the most popular style, gin was actually invented by the Dutch in the late 16th century for medicinal purposes. rumKill Devil. Demon Water. Pirate’s Drink. Rum. No spirit has been more maligned,

mystified and loved the world over. While rum often conjures images of palm trees and

blue island waters, it was a major economic driver in Colonial America, fueling colonial

and international trade. Before the Revolutionary War, there were 140 rum distilleries

in America and the average adult male drank 3 pints of rum a week (similar to our

Old Grand-Dad intake here at Merchant). Even George

Washington drank Barbados rum at his inauguration in 1789, a

party we’re sorry we missed.

No matter where it is produced, rum is distilled from sugar

cane. Where it goes from there is endless. Some rums are

aged for 12-15 years while others go straight into the bottle.

So whether you’re sitting in the sun enjoying a Daiquiri

or sipping an aged rum while warming yourself from the

Wisconsin winter, sit back and Salud!

Tequila & Mezcal Both Tequila and Mezcal are made from the agave plant, but they differ in

their methods of production and the region the agave is harvested. Mexican

law limits the production of Tequila to the state of Jalisco and limited regions

of several other states. The agave is picked by hand and then roasted or

steamed in a stone oven. Mezcal on the other hand is produced primarily in

Oaxaca, but can be produced in other regions as well. The agave is roasted in

subterranean pits covered with earth and heated by wood over 3-5 days. For

both varietals, blanco spirits are bottled 60 days after distillation, reposados

between 2 and 12 months and anejos at least 12 months, but no more

than 3 years. Whew, take a breather, you just learned a lot right there,

go have yourself a Paloma.

rise in popularity in America.

Sixteen years after James Bond sips his first Vesper

(See Classics) vodka, an item not considered necessary

in an American bar twenty years earlier, surpasses

whiskey as the highest selling spirit in America with

an annual US consumption today of 50-60 million

cases. While it is a smaller part of our menu, we love

the distilleries that make it by hand in small batches

2013 Great American Beer Festival Silver Medal Winner and all around amazing beer. There is a sweetness to this beer, but the cranberries give it just enough sour and tartness to make it incredibly well balanced.
