Amid the flurry of holiday activity, it is my pleasure as Acting Mayor to wish the people of Sooke a happy and safe holiday season. As a long-time resident of Sooke, I always look forward to spending the holidays with friends, family and neighbours in this wonderful town that I am proud to call home.

The holidays are a time to reflect on the year past and to look forward to what is to come. This past year, we have seen many exciting improvements to our town, not the least of which is the addition of the roundabout on Sooke Road. One of Council’s top strategic priorities is to enhance community livability, with a particular focus on improving the Town Centre. Council looks forward to continuing improvements to the Town Centre in 2016.

As I look back on the past year, I also wish to thank all of the organizations, individuals and volunteers who work hard throughout the year to make Sooke a better place to live. We are a town dedicated to caring for one another and I am filled with great pride to know that there are so many kind, hardworking people in our community.

I am hopeful that each of you have a joyful and peaceful holiday and that as we turn to the New Year, we all look together towards a prosperous 2016.

Kahlua Pecan Brown Sugar Baked BrieRecipe from: Deb Stolth | Serves: 6-8

Ingredients1 whole wheel of Brie (19 ounces) Costco sells one, President Brie is the best for this recipe1 cup Kahlua 1 cup packed light brown sugar1 cup chopped pecans (I do leave mine mostly whole for looks)Serve with Keebler Club crackers

DirectionsPreheat oven to 350 degrees. Start by carefully slicing the rind off the top of the Brie wheel, but do not remove completely. Bake for 15 minutes. When the Brie is done baking, the top can be easily removed to expose the creamy cheese.

While the Brie is baking, in a medium saucepan, bring Kahlua and brown sugar to a boil and simmer for 10-15 minutes, until a syrupy consistency is made. Throw the pecans in for 2 minutes at the end to warm them through and completely cover with the sauce.

Remove the Brie from the oven (removing top rind) and pour Kahlua sauce over the Brie.Serve warm with crackers.

Servings: Makes about 4 cups tomatoesIngredients4 cups cherry tomatoes (about 2 standard pint baskets)1 pound beefsteak tomatoes (about 2 large tomatoes)1 large red onion , quartered1 tablespoon kosher salt3 large lemons1/2 cup white tequila1/2 cup plain or citron- or pepper-flavored vodka1/4 cup cider vinegar1 tablespoon Worcestershire sauce1 tablespoon freshly ground black pepper2 teaspoons sugar1 1/2 teaspoon Tabasco sauce , or to tasteMargarita dipping salt , for servingDirectionsWith a wooden or metal skewer, puncture each cherry tomato with 5 to 10 holes; place in a nonreactive bowl.By hand, or in a food processor with knife blade attached, finely chop beefsteak tomatoes; transfer to a medium bowl. Finely chop onion; add to beefsteak tomatoes. Stir in salt; let stand 5 minutes. Strain mixture through a fine sieve, pressing hard on the solids (should yield about 2 cups liquid). Discard solids.Grate zest from 2 lemons. Squeeze enough juice from 3 lemons to equal 1/2 cup. Gently stir tomato water, lemon zest, lemon juice and remaining ingredients (except margarita salt) into cherry tomatoes. Cover and refrigerate, keeping tomatoes submerged in liquid, at least 3 days or up to 1 week.To serve, spear each tomato with a toothpick or wooden skewer. Put some of the liquid in a glass bowl or vase; place tomatoes in the liquid. Serve margarita dipping salt on the side.

Peanut Butter Bon Bons

1 can Pillsbury Ready to Spread Vanilla Frosting Supreme1 c peanut butter1/4 c butter2 c graham cracker crumbs1 can Pillsbury Ready to Spread Chocolate Fudge frosting Supreme

In a large bowl combine vanilla frosting, peanut butter and butter with a fork until well blended. Stir in crumbs until well mixed.Form into 1” balls and chill 1 hour.In a small saucepan melt chocolate frostingover low heat stirring occasionally.Dip chilled balls in melted frosting.Allow excess to drip off.Place on cooling rack over wax paperLet stand at room temp until dryabout 6 hoursStore in cool dry place

Next Day Frozen Fruit Salad

1 c sour cream or yogurt250 mi cream cheese soften1/2 tsp vanilla2 c miniature marshmallows2 c peach slices drained and crushed1 1/4 c maraschino cherries drained reserve some for garnish1 c crushed pineapple drainedIn a large bowl blend sour cream, cream cheese and vanilla

Fold in remaining ingredients.Spoon into oiled 4 c decorative moldor 8x4 loaf pan.Freeze until firm about 2 hours.To serve unmold and cut into wedges or 1” slicesGarnish with reserved cherries.

Forbidden Pleasures... Chocolate Ginger CookiesThey’re heavenly!

3/4 cup shortening1 cup white sugar1 egg1/4 cup molasses2 cups flour1/4 cup sifted cocoa1 teaspoon baking soda2 teaspoons crystallized ginger1 teaspoon salt

White sugar for rolling

1. In a medium bowl cream theshortening, sugar and egg untillight and fluffy. Whip the molasses in.

2. Sift together all the other ingredientsexcept sugar

3. Gradually add creamed mixture.

4. Shape into tablespoon-sizeed balls.

5. Roll in sugar and place on cookie sheet. Press and bake at 325 degrees for 10-15 minutes

** Watch carefully they tend to burn easily around the edges
