Enzyme b sung thm: rt ngn qu trnh sn xut nc mm, nhiu nh khoa hc nghin cu s dng enzyme protease c ngun gc thc vt, ng vt, vi sinh vt b sung thm vo trong qu trnh ch bin nc mm. - Cc enzyme c ngun gc thc vt Cc ngun thc vt cha protease ng dng trong sn xut nc mm ch yu l u , da. Protease t thc vt khng nhiu v hot khng cao so vi ngun t vi sinh vt. *Papain: Papain l mt loi protease c trong nha cy u. ccnc nhit i papain c dng lm mm tht t rt nhiu th k trc. Papain c tnh chu nhit cao, pH ti thch l 4,5. Papain c n nh trong dung dch pH 5, khi pH ca dung dch gim xung 3 hoc tng ti 11 th tnh n nh b gim. Qu trnh thy phn chu nh hng ca cc yu t: - Nhit ; pH; Lng mui; Lng enzyme v loi enzyme b sung; Din tch tip xc; Bn thn nguyn liu c. Cch tinhnh: Nguyn liu c sau khi x l c trn u vi 0,1 % ch phm enzyme protease o trn u trong 30 pht enzyme khuch tn u trong nguyn liu, sau trn mui t l 5% so vi nguyn liu c v cho vo thng c np y. Chn tn tht cho qu trnh x l nguyn liu c cm l 0,1%. Lng c cm mua vo thc t l: 1 020 000 : ( 1 0,001) = 1 021 021 kg 3.5. Khi lng nguyn liu c tp dng ch bin chp ngn ngy Khi lng c tp cn ch bin trong 1 nm l: G tp = 4 348 509 1 020 000 = 3 328 509 kg Qu trnh x l nguyn liu c tp tn tht l 1%.
