Butternut Squash Soup – Serves 6Ingredients 2 tablespoons extra-virgin olive oil2 whole carrots, diced (or dice about 12 baby carrots)1 celery stalk, diced1 onion, diced4 cups cubed butternut squash, fresh or frozen1 granny smith apple, peeled, cored and diced4 cups low-sodium chicken broth1/2 teaspoon salt1/2 teaspoon ground black pepperDirections:Heat oil in large soup pot. Add carrot, celery and onion. Cook until vegetables are tender and onion turns translucent, 3 to 4 minutes. Stir in butternut squash, apple, chicken broth, salt and pepper. Bring to boil, stirring occasionally. Reduce heat, cover and simmer until squash is soft, about 30 minutes. With an immersion blender, puree soup or let soup cool and place in batches in blender to puree.Serve warm soup with parsley garnish. Try adding a dollop of sour cream and bits of bacon to add extra flavor.
