KIDNEY BEANS WITH RED WINE & PARSLEYIngredients:
1 cup Chick Peas1 cup Kidney Beans
1 tablespoon Olive Oil1/4 cup Fresh Parsley
2 tablespoon Red Onion1/4 cup Red Wine1/4 teaspoon Salt
Preparation:1. Boil the beans by adding
salt and oil.2. Then reduce the heat to
simmer for ½ hour.3. Add wine, chopped
parsley & onions and continue simmer for another 10 minutes.
4. Serve hot or chilled.
CARROTS WITH LEMON & HONEY
Ingredients:3 Carrots
1/8 inch Fresh Ginger1 teaspoon Honey
1/4 cup Lemon1 pinch Salt
Preparation:1. Steam the carrots and
place in a bowl.2. Mix together the other
ingredients and drizzle over the carrots.
RED PEPPER CURRY CHICKEN WITH RICEIngredients:1 lb Chicken
1 cup Asparagus1/2 cup Coconut Milk
1 tablespoon Coconut Oil1 tablespoon Curry Leaves2 teaspoon Curry powder
1 cup Red Bell Pepper1 teaspoon Chili Flakes
1 teaspoon Salt1/2 cup Onions
Preparation:1. Place a pan on medium
heat & add coconut oil.2. Add onion & saute until
caramelized.3. Pat chicken with curry
powder & keep aside.4. Add asparagus & red bell
pepper to the pan & cook for 5 minutes.
5. Add curried chicken & cook thoroughly for 10 - 15
minutes.6. Add coconut milk & curry
leaves and reduce the heat.7. Allow to simmer for 15
minutes.8. Remove from heat, add salt
& pepper flakes.9. Serve with rice.
BEETS & GREENS WITH COCONUTIngredients:
1/2 lb Beet Greens1 cup Beets
1/4 teaspoon Black Pepper1/4 cup Coconut Flakes
2 tablespoon Coconut Oil1/2 inch Fresh Ginger
1 teaspoon Sugar1/4 teaspoon Salt
Preparation:1. Chop the beets &
greens.2. Add remaining
ingredients to 2 cups of water & bring to boil.
3. Lower the heat & simmer for until beets
are soft.4. Remove cover & cook
on medium heat until the liquid just touches
the base of the pot.
CRISPY CORN TORTILLA WITH HONEY
Ingredients:1 tablespoon Ghee
1 tablespoon Honey1 cup Masa
1/4 teaspoon Salt Preparation:1. Prepare home-made
tortillas or buy from the store (Tortillas contain masa & salt included in
the ingredients).2. Fry tortillas in ghee.
3. Slather honey onto each tortilla & fold.
4. Serve warm.
