FROM THE ECC CHEF

Lots of events, and menu changes going on this month at ECC! Come in and try the new lunch and dinner menu add-ons. Be sure to look out for a Grill menu

overhaul in March also, with new burgers and sandwiches. As we all have new goals and desires to be more physically fit as part of the New Year’s resolutions, I

decided to help promote that this month. Eating lighter doesn’t have to mean depriving yourself. Here’s a great recipe for an entrée-salad combination that will tantalize your taste buds and leave you content. The slightly hot and sweet flavors

of the soy and wasabi vinaigrette drizzled over a grilled swordfish with baby salad greens and roasted potatoes make a wonderful lunch or dinner entrée.

Roasted Vegetable and Garbanzo Croquette’s Seasoned and roasted medley of vegetables, blended with garbanzo beans rolled in panko breadcrumbs, and fried to perfection. Served

nestled on a bed of marinara, garnished with parmesan cheese

Bruschetta and Calamari Crispy baguette topped with a mixture of fresh diced tomatoes, basil,

extra virgin olive oil, mozzarella cheese, and garlic finished with Italian herb seasoned breaded calamari

Fire Roasted Artichoke, Cucumber, Tomato, Feta Cheese & Olive Salad

Bright and bursting with flavor from the fire roasted artichokes, fresh cucumbers, cherry tomatoes, feta cheese, and Kalamata olives.

Marinated in a lemon-poppyseed dressing, nestled atop baby garden salad greens

Maple Glazed Duck Breast Lightly Seasoned, Pan Seared Duck Breasts, finished with a pure maple glaze, nestled on colcannon mashed potatoes, with minted baby carrots

Filet Mignon & Lobster Risotto Tower Grilled Certified Angus Filet medallions cooked to your specification & layered with Lobster infused risotto, and fresh asparagus. Presented on

a bed of demi-glace

Banana Toffee Bourbon Cake Banana Toffee Bourbon Cake has layers of vanilla, and toffee banana-

date cake, soaked in bourbon butter glaze, sandwiched between

butterscotch flecked buttercream, and finished with butterscotch whipped cream and toffee crumbles

NEW DINNER ITEMS

6ea Swordfish Steaks, 6oz. Salad Greens for 6 1\2cup Rice Vinegar 3Tbl Lime Juice 3Tbl Soy Sauce 3Tbl Sesame Seeds 3Tbl Cilantro leaves, chopped 2Tbl Wasabi paste 2Tbl Sugar 1\2Tbl Dijon Mustard 1Tbl Ginger, fresh grated 1Tbl Garlic, chopped 1tsp Sesame Oil 1\2cup Vegetable Oil

Whis k t o get her t he ingredients for the dressing and chill. Grill the Swordfish steaks as needed and place warm over the salad greens. Shake and drizzle the dressing over the top and accompany with warm garlic roasted potatoes.

NEW LUNCH ITEMS

Jerk Shrimp and Arugula Salad Gulf Shrimp with Caribbean jerk spices, lightly grilled

nestled atop peppery arugula salad. Garnished with grilled pineapple, feta cheese, and diced tomato.

Finished with a sun-dried tomato vinaigrette dressing

Fitness Frittata Low Carb Open-faced omelet with roasted peppers, mushrooms, sweet onions, spinach & swiss cheese.

Served with wheat toast and fresh fruit

Monterey Chicken “Oscar” Sautéed breast of chicken accompanied by seasoned

lump crabmeat, avocado & white cheddar gratin. Served with rice and medley of sautéed vegetables

Mediterranean Steak & Cheese Hoagie Grilled filet Mignon medallions with goat cheese,

roasted peppers, caramelized onions & herbed vinaigrette drizzle all placed in our toasted hoagie bun

FROM THE SUPERINTENDENT

The greens have been mowed and rolled already in January. This will continue as long as the weather stays mild. The bunkers edging and shaping back to their original size and shape has been completed and sand will be installed in March. I would like to thank Jeffords corporation for the use of the Bobcat excavator which made easy work of the bunkers. Jefferd’s Corp. has some great equipment to make the job easier! Now we will finish up equipment repair and maintenance and turn our attention to tree trimming and limb removal. Spring is just around the corner! Kenny Eggleston Golf course superintendent

January was not as cold as it could have been and we have had very little snow. There were, however, some strong wind storms which blew down 2 large pines 1 fruit tree and a lot of tree limbs laying around the course.
