A 1 Day Introduction Course on 1 JULY 2019 | 7 OCTOBER 2019 N22, IBD, UTM Johor course introduction The edible bird nest (EBN) industry is a multimillion dollar enterprise as the raw or unprocessed bird’s nest is valued at RM 2,000 to 6,000/ kg. The cleaned nest is retailed at the price range of RM8, 000 to RM20, 000/ kg and is one of the indus- tries that are not affected by the global recession. Due to its high price and demand, there have been many reports of fake or adulterated EBN made from fish skin, mushroom, algae, karaya gum, red sea weed, Tremella fungus, natural plant gum, sodium alginate, jelly fungus, jelly, fish isinglass and egg white. These materials are routinely incorporated during commercial processing prior to final sale and increased the weight between 10-30%. Hence, it is a great concern to authenticate the purity of EBN and regulates the law to inspect EBN sold in the market to combat adulteration. House farming of swiftlets begun in Indonesia as early as 1800. The industry has considerable developed since then. EBN is cultivated by cross fostering, where the eggs of the white bellied swiftlets are replaced with the eggs of EBN produc- ing swiftlets, thus establishing a new population of EBN producing swiftlets. While population of the cave EBN swiftlets have been declining due to over exploita- tion of their nests, this reduction has been considerably off set by the rapidly growing house farming of the EBN swiftlets in Indonesia. Dried and cleaned EBN is double boiled with sugar to become bird’s nest soup for consumption. With the advancement in technology, a large variety of EBN related products has emerged in the market. These products are readily served in canned or pre-cooked form; some even incorporate EBN in Nutraceutical and cosmeceutical products. In Traditional Chinese Medicine (TCM), EBN is believed to offer good effect for treating consumptive diseases, curing tubercu- losis, dry coughs, suppressing cough and phlegm dyspnea (difficult breathing), alleviating asthma, hemoptysis (coughing blood), improving the voice, asthe- nia, stomach ulcer, relieving gastric troubles, and general weakness of bron- chial ailments. Institute of Bioproduct Development (IBD) had involved in the EBN research for over 10 years and had developed several good relationship with the related industry and authorities. IBD aware that public education on EBN is a must to avoid any misunderstanding of the EBN hence could literate the public to choose a quality product for consumption. 1. course tutorDR LEE TING HUNDr. Lee Ting Hun has set up and currently heads the Edible Bird’s Nest Unit in Institute of Bioproduct Development, Universiti Teknologi Malaysia. He is the pioneer in carrying out bird’s nest and swiftlet ranching research in Malaysia. He has lead 20 over numerous government and private sectors projects amounting more than RM2 million. He has also published 30 over indexed journals papers, conferences and seminars papers, book and book chapter.

For over a decade, he has invented numerous processes and innovate some noble products related to bird’s nest, nutraceutical and cosmeceutical. His contribution to the industry has won him the Malaysian Scientist Award and the Geneva Invention and Innovation Award.

Dr. Lee has also co-authored the Malaysian SIRIM standards for Edible Bird’s Nest and Swiftlet Ranching Standards. More recent, he has also been appointed as Malaysia Bird’s Nest Expert.
