The Bourbon label exists for the sole purpose of our family’s Private Barrel Selection program, and is the only label of its kind in existence. It is non-chill filtered, barrel proof, straight Bourbon whiskey of unusual depth and complexity.

Every barrel is discriminately selected to offer consistent flavor, but with a seemingly individual personality. Eagle Rare is a Bourbon that lives up to its name with its lofty, distinctive taste experience.

CAESARS PALACE JEFFERSON’S OCEAN VOYAGE BARREL SELECTThis Bourbon started out as an experiment with just three Bourbon barrels left out to weather the extreme elements: temperature fluctuations, salt air and the gentle rocking of the ship. The result is a thick, dark Bourbon that showcased complex flavors reminiscent of other spirits. The almost black color and caramel flavors resemble a dark rum as the sugars within the barrels caramelize; the briny, savory taste from the barrels breathing the sea air is reminiscent of Islay Scotch; and at its core, it’s a true Bourbon. Due to a massive demand from consumers, this experiment has now sent hundreds of barrels around the world. Each voyage of Jefferson’s Ocean typically crosses the equator 4 times, visits 5 continents and over 30 ports on an average sailing.

CAESARS PALACE JEFFERSON’S RESERVE BARREL SELECTJefferson’s Reserve is a big, sophisticated Bourbon that has a lot of flavor up front, a lot of weight mid palate and a deep, wonderful finish.

CAESARS PALACE JEFFERSON’S GROTH RESERVE CASK FINISH BARREL SELECTGroth Winery produced the first wine from California to receive 100 points from Robert Parker and produced one of the most outstanding Cabernet Sauvignon’s from the region. The Bourbon took on unique characteristics from the Groth barrel which married together in a supremely balanced spirit. Today, our Groth Cask Finish explodes with luscious dark berry flavors, such as black cherry and blackberry, evident from the red hue that the Bourbon has adopted.

CAESARS PALACE JACK DANIEL’S SINGLE BARREL SELECTBottled at 94 proof, Single Barrel Select layers subtle notes of caramel and spice with bright fruit notes and sweet aromatics for a Tennessee whiskey with one-of-a-kind flavor.

CAESARS PALACE OLD FORESTER BARREL SELECTOur Old Forester Single Barrel Program enables both organizations and individuals to purchase a Single Barrel of Old Forester that is truly one of a kind. It is ideal for restaurants, liquor stores, clubs, Bourbon bars and individuals who want their own unique Bourbon that no one else can offer. Depending on the barrel selected and the angel’s share, each customer should expect between 200 and 240 750L bottles of Bourbon.

CAESARS PALACE HERRADURA DOUBLE REPOSADO BARREL SELECTThe Double Barrel Reposado is aged for 11 months in oak barrels, then another month in a toasted oak barrel. The traditional production process is overseen by Maria Teresa Lara, one of only a few female Maestra Tequileras. "Sweet agave, fruit, spice and light smoke on the nose. The palate offers more agave, vanilla, allspice, clove and oak. The finish is long and peppery, with notes of agave, dried fruit and nutmeg."

CAESARS PALACE PATRÓN AÑEJO BARREL SELECTPatrón Añejo is handcrafted from the finest 100% Weber Blue Agave and is carefully distilled in small batches at Hacienda Patrón distillery in Jalisco, Mexico. It’s then aged in small white oak barrels for 12 to 15 months. The result is a deep gold color with scents of tropical fruits, oak and caramel leaving a tremendous deep finish. Hand selected by our local experts with a limited number of bottles available.
