Dear Friends,I’m sure you’ve all noticed how Christmas seems to get earlier and earlier each year. I couldn’t believe seeing panettone for sale in September, four months out from Christmas.
Just think about that. To be in the shops by September, this panettone must have been shipped from Italy in August, which means it was produced in June or July. That’s the middle of Italy’s summer, which was particularly hot this year.
Traditionally panettone making would only commence once the summer heat had passed and the cooler autumn days enhanced the slow leavening process. Furthermore, authentic panettone should only be made with butter which is affected by the heat, so not surprisingly many of these early panettone are made with margarine plus a lot of stabilisers and preserving agents.
The pastry houses we work with; Perbellini, Gilber, Flamigni and Rustichella d’Abruzzo, are just commencing their panettone and pandoro production by late September. This allows them to use pure butter, natural aromas and flavours, and leave out the artificial colours and preservatives. They are packed into refrigerated containers in October and arrive in Australia in November as fresh as can be.
Some things, like Christmas itself, just can’t be rushed and are well worth the wait.
I hope you enjoy reading through this year’s Christmas Selection, at the back of this issue, you’ll also find news about some favourite products that will soon be back in store, as well as details of our Cooking School and Wine Education classes for the first half of 2016.

Pasticceria Perbellini
Perbellini:Tradizione e Qualità ItalianaErnesto Perbellini and his two brothers, who are well into their 60s, are fifth generation pastry cooks. They make their renowned Panettone and Pandoro at their pasticceria on the outskirts of Verona in the northern Italian region of Veneto.
The Perbellini Panettone and Pandoro are made at the end of October as the cooler weather settles in. The dough is hand worked and then allowed to naturally leaven. After baking they are allowed to cool and then hand wrapped by the Perbellini Family. This ensures all the products are of the best quality and utmost freshness.
The Pandoro, or “golden bread”, is the classic cake symbol of Verona and contains no candied fruits or sultanas whatsoever. Enclosed with the Pandoro is a sachet of delicate vanilla powdered sugar which is sprinkled over the top of the cake like snow and allowed to sit for about 10 minutes so that it slowly dissolves and the aroma permeates gently through the moist Pandoro.
Perbellini Panettone is naturally leavened and the addition of soaked sultanas, candied citron and Mediterranean orange peel produces a wonderfully zesty fragrant benchmark Panettone. Perbellini uses butter and eggs, not margarines and therefore wedges of the Panettone can be rewrapped in foil and placed into a hot oven with the flame switched off for about 5 minutes so that the ingredients moisten and emit a tempting aroma.

A traditional Venetian buttery cake, made to a 100-year old recipe. It has a brioche-type texture with no dried fruits, but topped with a crumbly almond and crystalized sugar topping. Enjoy it slightly warmed accompanied by Moscato d’Asti.
A classic Venetian biscuit cake. This almond and butter crumble is traditionally eaten all year round, and is usually enjoyed at the end of a meal, dipped in a glass of sweet dessert wine.
Historically, this cake was called Pan dei Siori, or in Veneto dialect ‘The Aristocratic Torta (cake)’, as the ingredients that make up this delicacy were only affordable by the rich. It is made using raisins, candied lemon and orange, walnuts, almonds and dried figs all encased by an aroma of cinnamon.
These exquisite puff pastry fingers are made with the finest quality butter. With a similar texture and taste to the French mille-feuille dessert, these biscuits are also perfectly ideal for dipping in hot chocolate or to accompany coffee.
These biscuits have a morish bittersweet flavour; amaretti literally means “little bitter things”. Similar to macaroons, these crisp, airy biscotti are made from bitter almonds. They can be served crushed over whipped mascarpone or ice cream, or with coffee or a sweet dessert wine or liqueur. Try them in a cake, or trifle.
A light sponge cake, rich with soft apricot confit drops and finished with a soft almond glaze. An Enoteca Sileno favourite, it comes presented in an attractive gift box. Enjoy it slightly warmed with a semi-dry Prosecco.

Gilber:Piemontesi dal cuore dolce.In 1965 a small pastry workshop was started in Turin where the ability and enthusiasm of the young master pastry-cooks saw the production of panettoni (Christmas cakes), colombe (Easter fruit cakes) and amaretti (almond biscuits).
Today Gilber continues to produce top quality, traditional lines using carefully selected ingredients. The “Piemontese” panettone with its characteristic hazelnut and almond icing, is the pride of the Gilber production. Naturally leavened and rich with ingredients, it is the fruit of delicate workmanship.
This natural rising process exclusively uses cultured yeast, with no added chemical yeast, and requires a full 48 hours to guarantee the sponginess, softness, and fragance that characterize all Gilber baked products.
This unique cake is prepared with quality ingredients and is a true pastry-cook’s work of art. A classic, tall-style Pandoro, it is light and fluffy in texture with no candied fruits or sultanas.
Gilber’s flattened ‘pandoro’ is definitely one for the gourmand’s palate. It is extremely light and fragrant and is prepared purely from the fruit cake dough mixture without any fruit added.

Sinatti: The Real PanfortePanforte is a traditional Italian dessert cake of fruits and nuts. Literally translating to “strong bread” in reference to its spicy flavour, history shows that panforte was paid to the monks and nuns of a local Sienese monastery as a tithe, and was believed to be a favourite food of the Crusaders.
Today however it is usual to enjoy a small piece after a meal, with coffee or a dessert wine; though some enjoy it with their coffee at breakfast.

Panforte Nero Panforte delle DameAlso called “White” Panforte be-cause of its dusting of powdered sugar, this sublime combination of almonds, honey, candied fruits and spices is the most common and best known panforte. It is the true taste of Siena.
The “Spiced” Panforte is a com-bination of candied orange and melon combined with honey, al-monds, spices and crumbled wa-fers encased in a layer of bitter cocoa.
This version is similar to the tra-ditional Margherita, but with cho-colate added to the basic ingre-dients, before being encased in a dark chocolate glaze.
A traditional Sienese sweet made from caramelising sugar with candied orange & lime peel then adding almonds, ha-zelnuts and honey and baking the resultant mix. The whole bar is finally encased in dark chocolate. It has a complex ta-ste, the result of the fusion of many different ingredients and flavours.

Some say these chewy biscuits were traditionally served to travellers on horse-back as a source of nourishment for long trips; others hold that the sweets were the usual snack of servants who worked in the stables of rich Italian aristocrats in Siena, famed for its horseracing. Either way, they are a tasty treat. Made from flour, almonds, and candied fruits, they are flavoured with aniseed, coriander seed and millefiori honey.

In the ancient local dialect, Garbèl means dry, crisp and pleasantly tart. It is a wonderfully versa-tile sparkling wine: its 13 grams of residual sugar place it between the Brut and Extra Dry styles. With a creamy mousse and delicate persistent cascade of bubbles, this wine has generous aromas of pear, yellow apple and melon, and a palate with admirable fullness, balance and length, closely mirroring the aromatics of the nose. The fruitiest of the Adami range, Garbèl is the perfect sparkling wine with which to start any dinner or party.
Bosco di Gica is the ancient name of the location where the Adami family vineyards are grown. With a creamy mousse and delicate, long-lasting bead, the aromas are rich with excellent fruits scents of yellow apple and peach, whilst the palate displays a delicious vein of acidity, and a crisp, savoury mouth-feel which lingers. Dryer than a spumante, this is an excellent aperitif, but also a versatile sparkling wine, complementing fish, shellfish and crustaceans.
Recognised by Gambero Rosso as one of Italy’s top Proseccos year after year, this is the esta-te’s flagship Prosecco, and is the benchmark for Prosecco today. Rich, supple, elegant and full-bodied, it is an unusually long-lived spumante, and with some time spent on lees, the Giardino has more yeasty, bready, Champagne-like characters. It is fairly full and round, but still lovely and dry on the palate, making it great as an aperitif or at the end of dinner with fresh fruits. “Spring in a glass”.
The Bellini originated at the famous Harry’s Bar in Venice, and was favoured by the likes of Ernest Hemingway, Sinclair Lewis and Orson Welles. From the slopes of Mt Etna comes this infusion of Tarocco blood orange peel, herbs and sugar. This bright amber liqueur has a bold, silky, semi-sweet citrus zest flavour that can be enjoyed neat, on ice, with chocolates and pastries. It is also a versatile ingredient for cocktails.
A dessert wine and among the most elegant and pleasant, it is best consumed when young when it truly expresses the fragrance of the grape. It has a beautiful nose of raspberries and cherries with hints of dried rose. The palate is soft and off-dry with an explosion of delicate bubbles, fragrant red fruit, hints of herbs and good length. Bra-chetto d’Acqui is probably the only wine in the world which marries well with chocola-te, and at only 5.5% alcohol, you can even enjoy it for breakfast on Christmas morning.
A sparkling white wine derived mainly from vineyards around the province of Asti in Piemonte. Brilliant gold straw colour with an elegantly intense and fruity bouquet typi-cal of the Moscato grape, it is pleasantly sweet on the palate and lightly frizzante, clean and refreshing. With a low alcohol level of 5.5% and around 118g/L of residual sugar, it makes an excellent accompaniment to pastries, especially spicy ones, as well as fruit. Great with a light, fruity dessert, and the perfect breakfast wine, it is traditionally drunk to accompany Panettone at Christmas time and Colomba cake at Easter.

In Italian, the term ‘biscotti’ refers to those sweet biscuits which are twice cooked. The traditional cantuccini biscotti were baked, cut and then re-baked, allowing the biscuits to maintain their freshness for a long time. Ghiottini are made with whole, skinned Mediterranean almonds, “A” class egg yolk and millefiori honey. This traditional Tuscan honey from the Montalbano hills has a beautiful amber colour and rich, deep flavours.
Babà are miniature cakes, soaked in sugar syrup then saturated in rum. In Naples, babà are often enjoyed as a snack, served cool with an espresso. They are won-derful served with ice cream and a dollop of cream. Sometimes, they are filled with whipped cream and served with fruit. For a heavenly afternoon break, try a gelato affogato. Spoon some vanilla ice cream into a coffee cup with two babà. Pour an espresso over the babà and ice cream.

Senzanome is an ancient speciality from Pescara, Abruzzo. A dense mixture of local, candied fruits is mixed with orange and lemon peel, almonds and honey. The mixture is then covered in a thin layer of quality dark chocolate and allowed to set. Senzanome is available is snack size pieces and also as a small torta. Each variation provides an excellent festive snack which beautifully exemplifies the confectionary of Abruzzo.
A very rare and prized liqueur is arriving from Italy in extremely limited quantities to the shelves at Enoteca Sileno. Aurum, Italy’s answer to Grand Marnier, is a golden orange liqueur made from brandy that has matured for 8 years in selected casks. The brandy is infused with orange peel and
saffron, which imparts Aurum’s signature golden orange colour. The nose displays a wide variety of characteristics including mandarin, bergamot and orange primary fruit followed by floral and honey infusions. The warm and velvety palate is lengthy and layered with orange, mandarin, sweet Meyer lemon. Drink Aurum neat in a tulip glass or over ice. It can be mixed into cocktails or poured over strawberries for a decadent dessert.
Pour ingredients in a shaker filled with ice. Shake then serve in a highball glass filled with ice. Decorate with an orange segment or twist of zest.
Enjoy the paper-thin crisp bread from Sardinia with antipasti, cheese, cured meats, dips, soups or crumbled into salads.

There are few dishes that make the dramatic impact of pasta or risotto made with Nero di Seppia - cuttlefish Ink. Combined with a sautee of fresh seafood it can be used to
make a stunning risotto or to dress a plate of pasta. Or, if you are making pasta at home, it can be added to the dough to make black ribbons of pasta with a delicate marine sweetness.
Fusilli al Nero di Seppia con Calamari, Pomodoro e cime di finocchio. Serves 2 main, 4 starters
In a pot of salted boiling water cook 250g of Fusilli al Nero di Seppia. Meantime take 4 small, cleaned calamari and cut into narrow tubes leaving the tentacles attached together.
Sautee them over high heat with a little olive oil and garlic until the calamari changes colour. Reduce the heat and add a 4g sachet of La Riunione Nero di Seppia and 2-3 tablespoons of boiling water from the pasta pot to make a deep black sauce. Take 6 cherry tomatoes, cut them in half, squeeze out the seeds and chop roughly.
Once the fusilli are cooked al dente, strain and return to the pot. Pour in the calamari and cuttlefish mix, add the chopped fresh tomato and combine.
For a deeper, richer seafood flavour add 1 tablespoon of Scalia Colatura di Alici, the intensely flavoured reduction of anchovy. Garnish with fennel tops or dill.

Benza Extra Virgin Olive Oil, Whole Taggiasche Olives and Black Olive PasteIt is not an exaggeration to say I eat something produced by Benza every day. I use the whole olives in salad, or I warm them gently with a little garlic and rosemary and serve them as an antipasto. The Benza olive paste is the best available and I’ve tried them all. Great spread on a cracker or a nice piece of crunchy bread. Gluten free of course. And their Primuruggio extra virgin olive oil made with 100% taggiasche olives is in a class of its own. Amazing drizzled over any dish, from salads to steamed vegies. I even use it as a body moisturiser.
Naturbosco TartufataThis blend of black truffle, porcini mushrooms, anchovies and olives can be used for so many things. I often thin it down with a little olive oil and use it as a quick and decadent pasta sauce. For a luxurious Sunday morning brekky, I spoon a little Tartufata onto scrambled eggs. I spread it on crostini and serve it as part of an antipasti platter. I’d also recommend stirring a spoonful to other savoury dishes like braised beef to add richness and depth of flavour.
Bellei Borettane Onions in Balsamic VinegarDon’t give me the jar cause I will finish it all off, especially with either some Pecorino Romano or Reggiano. They are delicious in panini with salami or mortadella. Love the crunch when you bite into them and that lovely sweet and sour taste.
Rossa Sicily Blood Orange Jam This product comes from one of the most unique agricultural areas of Sicily, Mt Etna. It has nothing artificial; just tarocco blood oranges and brown sugar. If you love the flavour of oranges, this is the product for you. I use it mostly on toast for breakfast, but I’ve also experimented a lot with this Jam. It’s a great match with all cheese. Amazing with fresh ricotta or yogurt.

Zýmē Wines: Valpolicella EssenceThe name Zýmē, from Greek, means “yeast.” Yeast is, of course, an indispensable element in the world of oenology, but it also bears a symbolic meaning, representative of fundamental values in winemaker Celestino Gaspari’s professional and existential journey. The actualization of his passion for vine and wine was set into motion alongside his former father-in-law; the legendary winemaker Giuseppe Quintarelli.
Gaspari was 20 when he came under the influence of the late Quintarelli, one of the great Maestros of Italian Wine and father of the Amarone style. He spent years working with Quintarelli and other winemakers of Amarone, Valpolicella, and Valpolicella Ripasso, before developing the personal vision and style which would become Zýmē.
Sig. Gaspari is also the Vice President of the Italian Federation of Independent Winegrowers (Federazione Italiana Vignaioli Indipendenti – FIVA), whose mission is to preserve the integrity of the winemaker’s autonomy, and to elevate quality and authenticity of Italian wine. Members of FIVA pledge to be fully representative of their own vineyards, harvest, bottling and selling of their wines. The organization was founded in 2006 as a delegation of small, independent producers to be ambassadors to the Ministry of Agriculture in Italy, and eventually Europe as a whole. There are now about 800 members of FIVA throughout Italy.

Da Ponte: They wrote the book on grappa.
At the end of the 19th century, the Da Ponte brothers began producing quality distillates at their home in Veneto. This small business venture led Matteo Da Ponte to write and illustrate an alchemic handbook titled Il Manuale della Distillazione. The manual, which was first published in 1896, contains diagrams of alembics—double-vessel stills connected by a tube—which Da Ponte patented to capture the most concentrated aromas and compounds found in grape pomace. The book was the first of its kind and the process outlined in the text came to be known as the “Metodo Da Ponte”, a method of distillation which respects the grape varietals’ innate characteristics.
Da Ponte’s art of distilling, depicted in his 1896 manual, is the foundation for productions at the distilleria today. While the traditional alchemic methods are still employed, Da Ponte uses state-of-the-art vacuum and aromatisation processes to produce the highest quality distillate possible.
Situated in the hills of Valdobbiadene-Conegliano in Veneto, the Da Ponte distillery maintains a close connection with its surroundings by using local
grape varieties and understanding the unique terroir of the Prosecco-growing region. Only the highest-quality selected pomace, fresh from harvest and exclusively from Conegliano and Valdobbiadene, the DOCG Prosecco zone, is used in the distillation process.
Ageing is another important step for production of quality grappe. French Limousin oak barrels are used in the lengthy ageing process, which lasts from four to 12 years or more. Proper ageing yields a smooth-textured spirit with clean-edged aromatics and overall balance and harmony of flavours.
The Da Ponte distillery can count themselves ahead of the pack with their environmentally-minded operations. Biomass boilers and modern thermal energy recovery systems purify exhaust, gases, and other by-products of the distillation process. Da Ponte also relies on solar power for electricity, which reduces their greenhouse gas emissions by 70 tonnes per year.
