In Memory

This book is in memory of our beloved Lois

McCoy. This book was her dream. She collected

all the recipes and had plans for the book but God

in His infinite wisdom called her home before she

finished. This is her book. Lois, we love you.

Cherry Fluff Salad

1 can cherry pie filling

1 can Eagle brand milk

1 tsp. lemon juice

nuts, optional

1-12 oz. can crushed pineapple, drained

mix all ingredients and add a large container of cool whip.

Pretzel Salad

1 c. broken pretzels

1 stick margarine

8 oz. pkg. cream cheese

1 c. sugar

2 c. cool whip

1 large strawberry jello

2 c. boiling water

10 oz. frozen strawberries

First layer, mix melted margarine with pretzels. Add 1 Tbsp.

sugar. Bake at 350˚ for 6 minutes, let cool. Use 9x13 inch pan,

second layer, beat cream cheese and 1 c. sugar until smooth.

Pour on top of first layer. Third layer, add water to jello, mix

until dissolved, add frozen strawberries (that have been put in

blender) to jello mixture. Put in refrigerator and semi-gel. Pour

this mixture on top of second layer and chill.

Macaroni Salad

4 c. cooked elbow macaroni

1 c. Mayo

½ c. chopped celery

½ c. chopped onion

salt & pepper

Mix thoroughly and add small jar pimentos. Refrigerate.

Layered Vegetable Salad

½ c. celery chopped

½ c. chopped onions

1 ½ c. mayo

1 c. sugar

4 oz. grated cheddar cheese

¼ c. bacon bits

1 head of lettuce shredded finely

1 pkg. frozen peas (partially cooked and cooled)

Start putting all ingredients as given in layers in a casserole pan,

chill several hours before serving, sprinkle bacon bits on top of

the salad before serving.

Tamale Soup

2 cans hominy (drained)

1 cans corn (drained)

2 cans diced tomatoes

1 pkg. taco seasoning

1 can Ro-tel tomatoes

Brown 1 lb. hamburger meat with chopped onion, put all

ingredients in crock pot, bring to simmer, add 2 cans tamales

after cutting them into bite size pieces. Don’t cook long or

tamales will not be firm.

1 cup marshmallows

1 cup coconut

1 pineapple

1 cup fruit cocktail

(drained)

1 cup sour cream

1 cup cottage cheese

1 cup mandarin oranges

pecans (optional)

Mix all ingredients well, chill and serve.

Tortellini Salad

1 package frozen cheese

tortellini

1/4 cup white wine vinegar

1 packet dry Italian Dressing

Mix

1/2 cup Mayo

1/4 cup Cesar Salad

Dressing

1/2 tsp garlic powder

1/2 tsp Italian Seasoning

1/4 cup finely chopped red

bell pepper

Cook tortellini according to package directions. Cool quickly to

stop the cooking process. Mix the other ingredients into

medium bowl and then add cooled tortellini. Chill before

serving.

Mom's Potatoe Soup

1 medium onion, chopped

3 green onions, chopped

chives only

3 stalks celery, diced

1 stick butter

9 diced potatoes

milk, at least 1/2 gallon

**Combine all ingredients and use enough milk to cover

potatoes in pan. Cook on stovetop until potatoes tender. To

thicken soup, if needed, gradually add instant potatoe flakes to

desired consistency. If no instant potatoes available, make a

white sauce to thicken by combining 1/4 c. melted butter, 1/4 c.

flour, and 1 c. milk in separate bowl, stir well then add to soup.

Salt and pepper to taste.

Oriental Coleslaw

1 pkg coleslaw mix

3-5 green onions, chopped

chives only

small pkg sunflower kernels

small pkg sliced almonds

2 pkgs Ramen noodles

Dressing:

3 TBSP cider vinegar

1 tsp soy sauce

3/4 c. oil

1/2 c. sugar or equivalent

sugar substitute

1 tsp mustard

1/2 tsp salt

**Break up Ramen noodles (while still in their package works

well, hitting on it with something.) Do not cook them and do

not use the seasoning packet. Mix all slaw ingredients

together. Mix dressing in a separate bowl, then pour over slaw

and mix well.

Note: Healthier version, use low sodium soy sauce, 1/2 c. olive

oil and 1/4 c. canola oil, and 12 pkts of Sweet n' Low, with no

additional salt. Still very yummy.

Mexican Casserole

1 1/2 lb. ground beef or

diced chicken

1 12 ct. pkg soft corn

tortillas

1 onion, chopped

1 green pepper, chopped

12-16 oz shredded cheese

1 can tomatoes w/green

chili's (like Rotel)

3 TBSP oil

1 can cream of mushroom

soup

1 can cream of chicken

soup

Salsa

Sour cream

**Saute onion and green pepper in the oil. Thoroughly cook the

meat and drain. Mix onion, pepper, meat, soups, and

tomatoes. Heat until bubbly. layer some tortillas in a 9 x 13

pan; top with meat mixture, then some cheese. Repeat for two

or three layers. Cover with foil. Heat in oven set for 325 for 20 -

30 minutes until bubbly. Serve with salsa and sour cream.

Great with a salad, spanish rice, beans, or cornbread.

note: can use 2 cans crm of mushroom soup and no crm of

chicken

Homemade Sloppy Joes

2 lb ground beef or ground

turkey

1 pkg dry onion soup mix

2 TBSP brown sugar (or 2

pkts artificial sweetner)

1/4 c. mustard

1/2-1 c. ketchup

extra ketchup

**Brown the meat and drain well. Mix remaining ingredients,

mix well and heat until hot. Add more ketchup if you like, or

have on the side for individuals to add as desired. Serve on

buns.

Camping Trip

Uncle Bill Gervais, Jimmy, my dad and I would take fishing

trips to a place called “Pine Knott Crossing”. That was on

Little River just south of highway 3. This one time, Uncle

Bill, Jimmy and I fished all day in this boat made from old

car hoods. After the day of fishing, we pulled the boat up

to shore. Dad told me, “Son, you better tie that boat up.”

I said, “Oh, it’s not going to rain. It will be alright.” He

repeated, you better tie it up but I said it’s alright. Next

morning we woke up and sure enough, the boat was gone!

Jimmy and I looked up and down the shore. Finally, I saw

the boat across the river. Usually the water in that river

was cold. Jimmy and I flipped a coin to see who was going

to swim across and get the boat. I lost. I had to get in that

cold water! I pulled my clothes off and jumped in

surprised to find that water as warm as a bath. Even

though the water was warm, it was a lesson learned.

Egg Salad Stuffed Tomato

6 Hard Boiled Eggs (Chopped) ¼ Cup Chopped Celery

2 Tbs. Chopped Onion ¼ Tsp. Dry Mustard

1 Dash Pepper ½ Cup Borden-lite line plain

yogurt

1/3 Cup Chopped Pimento (Stuffed Green Olives)

Tomatoes for stuffing

In medium bowl combine ingredients, stir until blended, chill,

serve stuffed into fresh tomatoes or as a sandwich spread.

Tuna Salad

1 can tuna, drained

½ cup mayonnaise

¼ cup ripe olives, if desired

¼ cup chopped onion

¼ cup chopped green

pepper

Lettuce leaves

Cherry tomato halves

In medium bowl, stir together tuna, mayonnaise, olives, onions

and green pepper. Cover and chill, serve on lettuce-lined

platter, garnish with cherry tomatoes.
