Summer 2014 Sivan/Tammuz/Av 5774 Volume 18, Issue 5 From Our Spiritual Leader Cantor Henry Shapiro Summertime Jewish Journeys The last parsha we read in the Book of Numbers begins with, Eileh masei b’nei yisroel ..., these are the journeys of the children of Israel who went out of the land of Egypt. Not only does it mention the places traveled, there’s special music to chant along with the locations named. So we get a little travelin’ music with our road (and wilderness) trip. Btw, this particular melody is also used for Shirat HaYam, the Song of the Sea and when naming the tribal chiefs earlier in Numbers. There have been many PJC members also taking trips this summer, journeying from here to there for vacation and to visit family. Though we have a core of regulars at PJC, I’m never quite sure who will be coming from week to week. Even with that uncertainty, we have managed to make our minyans for both Friday nights and Saturday services, be it someone returning from a trip or a family coming to say kaddish for a special yahrzeit, It did occur to me while waiting to make our minyan one Saturday morning, that just a little increase in attendance would make a difference. If you’re someone who comes mostly for holidays and special occasions, consider coming once a month or even once a season extra. Not only will your soul feel better for it, you will be very appreciated by others coming to services. This time of the year is referred to as ‘the Three Weeks.” Meaning the weeks leading up to Tisha B’Av. From the President’s Desk………………………….Robert E. Korfin “It’s Summer Time, Summer Time,” http://youtu.be/WG6zo05tcQA Remember that great oldie? Especially when we think back to the frigid winter we endured. By the time you receive this edition of The Scribe, the dog days will be upon us. In the New York/New Jersey Metropolitan area there’s an expression often asked, “What’s going on in the Garden tonight?” Which refers to Madison Square Garden, the world’s most famous arena. In our neck of the woods, the same question may be posed in reference to Parkway Jewish Center….”What’s going on at PJC tonight?” Over the past year we’ve held Shabbat dinners, Wine Tasting, Israeli Dancing, Klezmer Kabbalat Shabbat, Adult education, a Hebrew Reading Refresher, Picnics, Spaghetti Night, and most recently a Jazz Concert. Don’t give me credit for all or most of those events. You can give your gratitude to Cantor Henry Shapiro for planning almost each of the events listed above. He worked almost single-handedly to make those events happen. So you can join me in thanking Cantor Shapiro as he begins his second year of service to our beloved PJC. Yes, Cantor Shapiro has accepted another contract and we couldn’t be more pleased. What, you say you hardly know Cantor Shapiro? Well, make a point of attending any Shabbat Service on Friday evenings at 6PM or Saturday morning at 9:30AM. The Friday Shabbat is “user friendly” and includes Cantor’s guitar playing and singing the familiar melodies of that “Old time Religion.” Come Fridays or Saturdays….we would love to have you join us. A few weeks ago we held a late Sunday afternoon Jazz Concert in the PJC Social Hall. We had hoped to hold it outside in the PJC Cove but the high heat and forecasted rain brought it indoors and in the comfort of our air conditioning. Had we held the concert outside, you would have seen the beautiful landscaping and planting of flowers. My thanks go out to Debi and Charlie Drummond, as well as Diane Bloomfield and Edy Dickman. They chose the warmest day to come to PJC to pull weeds, plant flowers and put down mulch. Thank you again…. We celebrate birthdays each month at Parkway. In this edition of The Scribe you will see the list of birthdays for this month. I must share a couple of very special birthdays…..Jack Kessler was 93 and Syma Levine 90. Funny, they both look wonderful and not much more than 37. May they live in good health to hear Willard Scott wish them a happy birthday on their 100th and beyond. Have a fun and safe rest of the summer. Before long we will begin to plan for the High Holy Days; and not too long after that it will be time to tune up the snow blower and buy rock salt. And so it goes…..and then we’ll talk again.

Sivan/Tammuz/Av 5774 Penns Corners CSA Farm Share The summer Farm Share program has been going for more than a month now. What started off as root vegetables and early greens is now turning into a greater variety as the summer crops come in. Below are some useful links followed by some recipes. Food Storage tips http://pennscorner.wordpress.com/category/weekly-share-guide/ Cantor’s Swiss Chard/Kale Quick Breakfast

My CSA (Community Supported Agriculture) Penns Corner farm share just started. Now I’m getting all kinds of greens I used to walk right by in the grocer produce section. What to do? One easy and tasty thing I came up with is a super quick and healthy breakfast. I make it in a plastic folding omelet maker I bought from the dollar store. Put a couple of cups of washed (but not dried) chopped spinach, swiss chard or kale in the omelet maker and crack a couple eggs on top. Sprinkle a little feta cheese over it. I happened to have some extra pesto so I added 1/2 tsp over that. Zap it for around a minute and half and voila - it’s done. If you want a near-zero calorie breakfast, make it just egg whites. The chard and kale are tougher greens than spinach so they may need an extra 60-90 seconds or so of pre-zapping before adding the eggs. You have to experiment a little with it. Enjoy. - CHS

Sivan/Tammuz/Av 5774 Recipes http://pennscorner.wordpress.com/category/recipes/ Raw Rainbow Collard Greens Wrap

Ingredients

4 large collard leaves 3/4 cup hummus 1 tomato, sliced into thin wedges 1 medium carrot, cut in half and sliced into thin strips 1 yellow bell pepper, sliced into thin strips 2 Persian cucumbers, sliced into thin strips 1/2 cup pea sprouts 1/4 red onion, sliced into thin strips 1/8 head of red cabbage, shredded 1/2 teaspoon grated horseradish in beet juice

Preparation - Put raw collard leaves in a plastic bag and freeze them until they turn bright green,

about an hour. This makes them more pliable without losing any raw nutrition. - Run the leaves briefly under cold water and lay them topside down on a cutting

board. Using a paring knife, gently shave down the raised part of the spines so the surface of the collard is nice and flat. Spread 3 tablespoons of hummus down the center of each leaf and distribute the rest of the vegetables evenly among the leaves, laying them parallel to the spines. Be sure to leave about an inch on each edge uncovered. Sprinkle horseradish on top.

- Roll the collard tops and bottoms (stem side) inward, fold one of the long sides in, tucking all the filling underneath it, and continue rolling the leaf from that side to the other side to get a tight wrap. Slice in half with a sharp knife.

Sivan/Tammuz/Av 5774 PJC Jazz Concert - ‘O’ What a Difference For a short time on Sunday June 29th, PJC turned into the Parkway Jazz Center. What a great turnout. One of the musicians, Dr. Nelson Harrison, sang his parody of the Henry Mancini tune, Moon River. What a difference one less ‘o’ makes! Below are his lyrics for Mon River. Btw, if you’re looking for other Jazz events around town, Nelson developed and hosts the website, Pittsburgh Jazz Network at http://jazzburgher.ning.com Mon River - lyrics by Nelson Harrison Mon River, shorter than the Nile Its real name takes a while, to say But “Burgh” trippers, on Gateway Clippers Will learn quite a lot when they sail it someday Two inclines, take you to the mount Where you can see the fountain spray And lovers can gaze at the view, a favorite rendezvous From Grandview Avenue, Mon River you’ll see. Mon River, different from the rest Flows North, not East or West or South From high mountain to Point fountain There’s only four rivers that do it that way No islands, sandy on its floor Shipped barges full of ore and coke To steel mills that once used to be, Its major industry But then you couldn’t see Mon River - for smoke
