ChefsStephenKaltandGeoffreyZa-karian go back to the 1980s when theyboth worked in the kitchen of the fam-ous Le Cirque in New York. With bothnow part of Borgata’s food and bever-age team, they still get the chance totalk food in the kitchen.

“We always say we’ll do somethingtogether,” Kalt said.

That something is happening FridaywhenChefKalt and Iron Chef ZakarianpresentdinneratFornelletto.Zakarian,lifestyle culinary consultant for TheWater Club hotel, will prepare horsd’oeuvres and cocktails for guests,while Kalt follows with a four-coursedinner at his restaurant. Each coursewill be paired with a particular wine.

“This is the type of dinner we do notwant to go all night, but to representwhat we do,” Kalt said. “Three savorycourses and a dessertwork out correct-ly.”

Each course will be about half whatthe restaurant normally serves. Thegoal is to finish and not be overly full,Kalt said.

“We do not want people to gorgethemselves.Wewant each course to ex-cite the palate. But if we give too muchfood, theycan’thavethe lastcourse,”hesaid.

Kalt’s gourmetmenu begins with Si-cilian salad, a mix of endive, blackber-ries, blood orange, avocado and mint,paired with Ocone Falaghina, fromCampania. The second course featuresgnocchi with black mission figs, brownbutter, parmesan cream and sageserved with Ca Viola Dolcetto, fromPiedmont.

The third course highlights lambchops with roasted artichokes and sun-chokes, sheep's milk, ricotta angelottiand fava bean pesto, coupled with Ten-uta Caparzo Brunello di Montalcino,fromTuscany.And the final course pro-vides guests with lemon panna cottawith marinated strawberries and pas-sion fruit foam. Atlantic City has plenty of clubs toparty the night away. But the Founda-tion Room offers a unique perspectivein its eclectic multi-room venue, itsworld art and its ambiance. To capital-ize on the setting, the FoundationRoomlaunchedAfterHours lastOctober.Par-tygoerscanwander fromroomtoroom,choosing seclusion if they so desired.

The idea was to provide a late lategathering as Saturday night gave waytoSundaymorning,withguestDJs.Theactionbeganat10p.m., butanewcastofDJs took root at 2 a.m. and lasted untilthe sun came up. This month, the roomdissolvedtheearlymorningseparation,blending it into one eight-hour party.

While the overall approach stays thesame, part of the emphasis is now on at-tracting locals, said Howard Weiss, re-gional director of nightlife operations,strategy and development for the East-ernDivision of Caesars Entertainment.

“Wewant a destination after the oth-ernightclubsclose.Wethinkof thisasaplace for people in the business to hangout when they get off work Saturdaynight,” he said.

For the working stiff, After Hourspromises no real long lines and at $10 tostart, doesn’t cost much to get in.

While the new slant may do awaywith major celebrity DJs, the crew ofmusic spinners andhosts—most famil-

Weiss is taking advantage of the ce-lebrity entertainment at Harrah’s PoolAfter Dark by bringing DJs and hostsacross town to the Foundation Room.

“The strategy for summer, everycoupleweeks thePool hostwill go to theafter party afterward,” Weiss said.

Earlier this month, Dennis Haskins,known to “Saved by the Bell” fans asMr. Belding, hosted a SchoolsOut partyat Foundation Room after partying atThe Pool. This Saturday, DJ Konflikt, aa Pool After Dark resident DJ, willmake the trek from Harrah’s to Show-boat to spin the music until 6 a.m.

Weiss acknowledges that the open-ing of Revel factored into the change.Showboat wants to attract Revel’s par-tygoers and employees. This is a per-fect alternative to wind down, he said.

“A lot of people like to go out laterand stay out to thewee hours. They liketo eat breakfast at 7 or 8 and then go tobed.”

At night time, yellow bursts of neon bathe the oncedrab exterior of the former Trump Marina. The brightlights outside mark just one element in the transforma-tionof thehotel casino in thewakeof the$38millionacqui-sition last spring by Golden Nugget.

The interior underwent a rebirth as well, not just withphysical changes but with a complete overhaul of offer-ings. Every hotel room got a makeover.

The $150million renovations and face lift that restoreda tired property concluded this month, and to celebrate,Golden Nugget has four days of grand opening eventsplanned beginning today with entertainment throughoutthe building.

“This is a brand newGolden Nugget. There is nomoreassociationwithTrumpMarina,” saidTomPohlman,exec-utive vice president and generalmanager ofGoldenNug-get. “We have a fully functional property. This is a cele-bration for our loyal customers. A statement that saysGolden Nugget is here and we are ready for summer.”

Golden Nugget swept away the TrumpMarina restau-rants in favor of brands popularized by parent company,Landry’s, includingTheChartHouse andVic&Anthony’sSteakhouse. The latest is the recently opened Asian res-taurantLilly’s.Also enhanced: thenightlife opportunities,fromTheRushLounge to Live, and the creation of a retailrow adjacent to the casino floor.

The transformation also brought on board a new $6.5million spa and a poker room.

“Most places would have shut down during the reno-vations. But people were excited to take the journey withus.” Pohlman said.

The reward for that journey begins today when “CakeBoss” Buddy Valastro unveils the cake he created for theoccasion. Golden Nugget CEO and Chairman Tilman Fer-titta will cut the ribbon to launch the grand opening.

The weekend includes rock band Third Eye Blind, co-median Whoopi Goldberg and country stars The OakRidge Boys. And Valastro does his own interactive stageshow on baking and cake decorating.

“Wewanted toprovideentertainment thathit differentdemographics,” Pohlman said. “We wanted to attract allkinds of people to see what we’ve done and to experiencethe brandnewGoldenNugget.Wedidn’twant to just haveentertainers that cater to younger crowds.”

Other entertainment will be spread throughout theproperty including circus-type performances in the Atri-um, live entertainment in Rush andmotorcyclists on TheDeck. Both Friday and Saturday also will feature fire-works.

Pohlman saysGoldenNugget is notRevel norBorgata,nor will it try to be. It is small and proud of it.

“We appeal to a certain niche. People feel comfortablehere. They prefer that over larger properties,” he said.

“Hopkins vs. Dawson: Once And ForAll,” a 12-round bout for Hopkins’ WBCand Ring Magazine light heavyweightworld championships, is presented spon-sored byCaesarsAtlantic City, among oth-ers. The contest will be televised live onHBO World Championship Boxing begin-ning at 10:15 p.m.

Also featured will be a 12-round heavy-weight battle between Seth “Mayhem”Mitchell and “The Gentleman” ChazzWitherspoon.

But it’s the main bout that has createdthe buzz.

“Bernard Hopkins is a world championathlete who grew up and trained in thegreater Philadelphia area, just a short ridefrom Atlantic City, so this fight is going to

be a great draw,” said Don Marrandino,Eastern Division president for CaesarsEntertainment. “Some of the greatest box-ing matches and sporting events havebeen hosted in Atlantic City and on April28, BoardwalkHall will be the backdrop towhat could be Hopkins’ most historicfights and likely one of the final bouts ofhis career.”

This fight has garnered a lot of vocalsmackdowns between the two fighters.

“Chad Dawson can say whatever hewants, but I am not going to trash talk thisone,”Hopkins said in a release. “Everyoneknows what I am capable of in the ring.They have seen it over 50 times before inthe last 20-plus years. I will say that I amreally happy that this is onHBO so that allofmyfans fromacross thecountrycanseeme continue this unprecedented path.”

Dawson has his own take on the titlefight. “Hopkins is going to have to face hisfears. He tried to run away from me, buthereweareagain. I’mveryexcited to fighton the East Coast because a lot of my fanswill be there to see me live.”

Between his 10-year title reign at mid-dleweight and his victories over AntonioTarver, Winky Wright, Kelly Pavlik andRoy Jones Jr., all after the age of 41, Hop-kins reached the top of the boxing moun-tain once again last May with his victoryover Jean Pascal, breaking the age recordpreviously held by George Foreman.

Today, he is a few months away from

breakinganotherrecordandbecomingtheoldest reigning champion ever as he con-tinues to follow the path of Archie Moore,whomade his last title defense at 47 yearsand 7 months old.

Former WBC and IBF Light Heavy-weight World Champion Dawson (30-1, 17KOs) has long been considered one of thesport’s best pound for pound by boxing in-siders. His victories over respected worldchampions such as Glen Johnson (twice),

Antonio Tarver (twice), and Tomasz Ada-mekhaveproven that he has the talent andathleticism to stay atop his division.

Take in a museum

With funding from the Casino Rein-vestment Development Authority andRevel Entertainment, Garden Pier wasrenovated and strengthened to with-stand storms. The crumbling back endwas removed. And best of all, the twomuseums on the pier will reopen.

Though small, the Atlantic City ArtCenter and the Atlantic City HistoricalMuseum offer a treasure trove of expe-riences. And until now,were awell-keptsecret. But with the opening of Revelacross the Boardwalk, look for largercrowds at the two museums.

Starting in the summer, the art cen-

ter will be open from 10 a.m. to 4 p.m.daily. It has three galleries featuringpainters, sculptors and photographers.Admission is free.

The serenades thatmake up this “Mari-time Mistral” concert represent some ofthe finest writing for wind instrumentsfrom the Romantic and Classical periods.Dvorak’s is folksy and full of the dancerhythms, modal harmonies and sweepingmelodies of the composer’s native Bohe-mia. Mozart’s “Gran Partita” contains in-tricate yet puremusic, haunting yet fresh.
