Winter and Easter are behind us, Spring is officially here and the kids are excitedly talking about the end of the school year. We have one of the largest Summer Back Pack programs in the history of the daycare. We have a waiting list with several families hoping to enroll their child. If your child is enrolled in this program, remember that the $150 per child activity fee is due by May 2nd.

I want to once again thank our families for coming out to see our children perform during our spring concert. They worked so hard for several weeks learning the songs and hand motions. As always, they did a fantastic job of entertaining us. The children’s performances are always a highlight of our year.

Vacation season is right around the corner. I want to remind you of our vacation policy. All children enrolled for 6 consecutive months who are full-time, will receive 2 weeks of tuition at half rate. Part-time children enrolled for 6 consecutive months will receive 1 week of tuition at half rate. Requests for half rate tuition must be made two weeks prior to your vacation. Your child cannot be in attendance during this vacation time.

Be sure to fill out the Request to Administer Medication form and bring in a tube of sunscreen for your child. Put your child’s name on the tube using a Sharpie pen. Licensing regulations will not allow us to use aerosol sunscreen so please do not bring it. Be sure to bring it in the original container. Here’s What’s Cooking It’s time to get the grilling tools out just in time for your Memorial Day gathering. For something different than chicken or hamburgers give this tasty flank steak a try. Leftovers make great fajitas.

Marinated Flank Steak ½ cup vegetable or canola oil 1/3 cup soy sauce 1/4 cup red wine vinegar 2 tablespoons fresh lemon juice 1-1/2 tablespoons Worcestershire sauce 1 tablespoon Dijon mustard 2 cloves garlic, minced 1/2 teaspoon ground black pepper 1-1/2 pounds flank steak In a medium bowl, mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. Place meat in a shallow glass dish or a heavy duty zip lock bag. Pour marinate over the steak, turning meat to coat thoroughly. Cover and refrigerate overnight or for 6 hours. Oil the grill grate and preheat to medium-high heat. Place steak on the grill. Use remaining marinade for grilling then discard. Grill meat for 5 minutes per side, or to desired doneness.

Jell-O Strawberry flavor gelatin 1 package (3 oz.) Jell-O Berry Blue flavor gelatin 8 oz. tub of Cool Whip Cream cheese frosting-optional Cream Cheese Frosting:

Beat 2 8 oz. packages softened cream cheese and 2 cups powdered sugar in a large bowl with mixer or whisk until blended. Gently stir in Cool Whip until blended.

Bake two 9 inch-round white cakes according to box mix directions.

Cool completely in the pans instead of inverting on wire racks to cool.

Add 1 cup boiling water to each dry gelatin mix in separate small bowls; stir for 2 minutes or until completely dissolved. Pour red gelatin over 1 cake and blue gelatin over remaining cake. Refrigerate 3 hours.

Dip bottoms of cake pans in warm water for 10 seconds to unmold cakes. Fill and frost cake layers with cream cheese frosting. You can also use an 8 oz. tub of Cool Whip by itself in place of the frosting.
