Balloons for a
Balanced Lunch
Our nutrition education involves the healthy marketing of our serving line.
To teach the concept of balance to our elementary-aged customers we use the concept of Balloons for a Balanced Lunch. Each balloon represents a different food group.
Blue is milk, Red is fruits, Green is vegetables, Yellow is grain, Purple is protein.
A lunch tray with every color balloon is a healthy one!
Nutrition Tip of the Month Mindful eating while watching TV!
When you are pre-occupied you
are less likely to notice your body
sending signals of fullness. If you
want to enjoy a snack during your
favorite TV show pre-portion
instead of eating it straight from the bag!

Nutrition Intuition In 1987, Registered Dietitian Karen Fynan built a company based on the principles of Nutrition & Service naming her company Nutri-Serve Food Management to reflect these beliefs. Nutrition has always been at the forefront of menu planning with the goal of creating a serving line that teaches our customers about healthy meals. We believe our exponential growth to 83 districts over the last 25+ years is a result of our commitment to serve tasty and healthy meals to our customers. Nutri-Serve’s Corporate Dietitian, Kristen Mueller, RD, works collaboratively with our leadership team to plan our monthly menus and provides nutrition support and education to students, athletes & school staff.
N ational School Lunch Week
was created in 1962 by President
John F. Kennedy in recognition of the
ongoing efforts of food service
professionals to provide healthy lunches to
students across the nation. The National
School Lunch Program is the largest of the federal child nutrition programs with
95% of elementary and secondary schools participating. This year’s theme is about
appreciating the diversity of food our country has to offer. This month’s menu has
incorporated the School Nutrition Association’s theme of recognizing the different
regions of America and serving something unique to each region.

Menu Descriptions-page 4
Grown-up Grilled Cheese
We take the traditional grilled cheese to a whole new level! With American, mozzarella & cheddar cheeses all melted on whole grain white bread with a slice of turkey bacon— you will be loving grilled cheese for years to come!
* Southwest Turkey Salad Rachael Ray sure does know how to get kids to eat salad! Diced roasted turkey seasoned with pepper, dried cilantro & Cajun spice on top of tomatoes, cucumbers, cheddar cheese, crunchy noodles, turkey bacon. We recommend light ranch dressing! All salads on this menu are made from a mixture of spinach and other greens!
Apple, Cranberry & Mozzarella Salad
It’s the ultimate Fall salad and a great choice for our vegetarians! It’s a super sweet salad with crunchy apples, chewy dried cranberries and mild flavored mozzarella cheese. We love it with raspberry vinaigrette.
Chicken Salad Sliders w/Grapes
It’s a unique twist on traditional chicken salad….we add chopped grapes for a touch of sweetness! This delicious chicken salad is served on mini two-bite sliders. An easy to eat finger food for our young customers!
Antipasto Salad
Ham and cheese rolls, Salami triangles and pepperoni circles served over a garden salad. It’s like your favorite Italian sandwich over a bed of veggies and mixed greens. We love Italian dressing with it!
Ham & Cheese Pinwheels The ultimate finger food! It’s similar to a wrap sliced up into narrow two bite pieces minus the lettuce, tomato & condiments which can be a deterrent for our young picky eaters. Our veggie lovers load up on fresh veggie sides with their pinwheels.
* Cheesy Mac and Trees A creative Rachael Ray idea to sneak in some extra veggies for our young customers. We add broccoli in with our traditional whole grain mac and cheese. All the kids notice is its cheesy delicious-ness!
* BBQ Turkey Sloppy Joe
Rachael Ray puts a healthy twist on the traditional sloppy joe choosing turkey which is lower in fat than beef. With some peppers, onions, BBQ sauce and hot sauce served on a wheat bun it will surpass all expectations.
Sides: Chocolate Hummus– Ground chic peas with a touch of chocolate powder and sugar. We love it with graham crackers!
Easy Cheesy Broccoli Bake– broccoli baked in olive oil and topped with cheese
Cauliflower Popcorn– cauliflower baked in olive oil and topped with cheese
Pumpkin Twister– vanilla yogurt, pumpkin, nutmeg, cinnamon, allspice
Mello Jello– Melon in gelatin
