Heat the oil and pop in the mustard seeds.After a minute, sweat the leeks in but don’t let them catch any colour.Add the rice and stir for a couple of minutes until pearly and shiny.Add the stock and cover.Bring to the boil and turn the heat down to a minimum.When no steam comes out from under the lid, check with a chopstick that all the liquid has been absorbed (it should feel as if it catches slightly on the bottom of the pan).Fluff up with a fork and stir in the spinach.I normally cook this recipe in an ovenproof pan with lid, so I can pop it in a 240ºC oven after reaching the boil. It cooks more evenly, especially when doing larger quantities!

You’ll need:*2 cup basmati rice*sunflower oil*4 small leeks, washed and sliced*1/2 tsp mustard seeds*handful of spinach or 2*3 cups vegetable stock, seasoned to taste

sat 8 Wormfood presents Fofoulah The sound of Senegal has always been a favourite flavour here at Canteen so this London-based fusion of West African tradition with bass-boosting synths and electro-dub production should have no trouble getting the Saturday party started

sun 9 Hillfolk Noir These three musicians from the good ol’ US of A specialise in Junkerdash, a kind of moonshine distillation of American folk, blues and popular music heard on the wind from a fire lit swamp any time in the last fifty years. Featuring well-bashed suitcases, keening saw and raw, honest vocals this is the smartest kind of hillbilly hooch you’ll ever burn your mouth with.

MON 10 Canteen Jazz Session An open jazz jam session for seasoned players to join the house trio and others in exploring classic jazz & latin tunes.

TUE 11 Jon Hicks Sizzling virtuoso Jon Hicks can somehow create the intricate melodies and relentless rhythms of a full-on ceilidh band from his solo acoustic guitar

WED 12 Milon Saxophonist Dino Christodoulou weaves his own soundtrack ranging from classic modern jazz to Cypriot wedding dances and Greek traditional tunes.

THU 13 Dead Belgian And we’re talking Jaques Brel here, people: the timeless (and dead) Belgian genius of barbed chanson. Beloved of Scott Walker and others, Brel’s epic songs have rarely had so wonderfully irreverent a tribute as the one this lot give him, each song getting a swooning trash-folk demolition job that’s nonetheless true to the spirit of the man as well as being ridiculously entertaining.

FRI 14 Klezmer Kollectiv 8-piece combo from the teeming underworld of Cardiff’s music scene who trawl the up-beat schmaltz of Central European Jewish dance music.

SAT 15 Solko Bringing the values of classic dub production into a rockier frame of mind, this brass-bedecked 7-piece from Suffolk pack a mighty dance floor punch.

SUN 16 Russell Swallow Singer-songwriter Russell Swallow has a jaunty way with a tune and his heart appropriately on his sleeve at all times.

MON 17 Guy Calhoun Versatile singer/songwriter draws on a definitely English heritage with echoes of Nick Drake and Richard Thompson in his original tunes.

TUE 18 Blackberry Wood This lot are a total circus distilled into one 7-piece ball of musical mayhem. They look like a Prohibition shoot-out in a downtown burlesque and they sound like Balkan gypsies trying to pass for veteran swingsters and, what’s more, they’re coming all the way from Canada just to entertain you. How can you not be there?

WED 19 Hayes Code Saxophonist Andrew ‘Schoolboy’ Hayes leads this funky 5-piece soul-jazz project bringing a set of tasteful tunes from left of field.

THURS 20

Rob Heron & The Teapad Orchestra When you’ve got the musical resources that this 7-piece collective have you can try your hand at pretty much everything and that’s exactly what the Teapad Orchestra do - from Cajun to ragtime, Western Swing to Hokum Blues they’ve picked some fine influences and tasty tunes with proper authentic flavour.

FRI 21 Afro ClusterThey love that funk, Afrobeat and hip-hop and they refuse to choose. Cardiff collective Afro Cluster put it all together and, by jingo, it fits.

SAT 22 The Snare Proper Cockney ska merchants with a definite Nutty flavour, a Snare song usually tells a story of urban life and love set to a brisk and jazzy two-step beat.

SUN 23 Thomas Ford Sometime Blues engine of the Dirty Harmonics, guitarist/singer Thomas Ford’s solo shows conjure up country blues and delta grooving magic.

MON 24 Canteen Jazz Sessions An open jazz jam session for seasoned players to join the house trio and others in exploring classic jazz & latin tunes.

TUE 25 Jack Pescod Remarkable self-taught pianist Jack Pescod has absorbed a wealth of influences and ideas from jazz, classical and Indian traditions.

WED 26 James Ladd Trio There’s an earthy, timeless sound, reflecting echoes of country blues, contemporary R’n’B and old-time swampy stuff from New Orleans.

THU 27 Classica Afrobeat It’s a crazy notion - taking the richly funky Afrobeat of Fela Kuti and arranging it for an 11-piece orchestra of jazz and classical musicians - and maybe only the Italians could have pulled it off. But there’s no arguing with the results as Classica Orchestra Afrobeat find echoes of baroque in the Nigerian polyrhythms and exuberant solos of their magnificent Fela tribute ‘Shrine On You’.

FRI 28 Crinkle Cuts Lively 8-piece combo making a fine mix of old-school chops and modern musical ideas shaking up ski, funk and reggae.

SAT 29 Andy Christie Quartet Welcome return of this jazz pianist, formerly of this parish, who’s lately released a new album ‘Imaginary Friends’
