What a fantastic list to gorge on this month!
Squash still get the limelight at this time of year, but mypersonal favourites are celeriac (makes a fab soupinfused with lemon). Cauliflower are amazing roastedin hay. Our Girolles or European Pied Mouton cantransform a simple autumnal salad into a superbvegetarian dish, with the addition of pearl barley,chicken fillets and garlic. Swilled down with our LittleEden Pinot Noir. Crikey, I’m hungry already!
Aubergines are another October favourite, roasted, orgrilled. Goes smashing with a splash of Zinfandel likeour Bulletin offering.

Poached Pears withPanna Cotta and Granita

Ingredients:
Poached Pears withPanna Cotta and Granita
1 Take 4 pears, firm or almost ripe, not overripe. Peel & put in panfairly snugly. Pour in enough Chardonnay to ¾ cover them. Addthe juice of ½ a lemon & 1 orange. Top up with water to covercompletely. Add to the pan a cinnamon stick, a few peppercorns,3-4 cloves, a few strips of lemon zest and 50g sugar. Bring to theboil, stirring occasionally to dissolve the sugar. Simmer untiltender but not soft. Remove from heat & leave to cool.
2 Place the pears in a polythene bag with a tablespoon of thecooking liquor. Refrigerate.
3 Strain the rest of the liquor, discarding the peels & spices. It shouldbe tart, but sweet. Adjust the lemon & sugar only if you think itneeds it. Place in the freezer. That’s going to be your granita.
4 For the panna cotta, split the vanilla pod & place in a pan with750ml double cream. Bring to the boil then remove from theheat. Soak 2 leaves of gelatine in cold water for 5 mins, drain,squeeze & stir in to the warm cream along with 25g caster sugar.Scrape vanilla seeds into cream, discarding pod. Divide mixturebetween 4 small moulds and set in fridge.
5 To serve, remove the granita from the freezer. Slice the pears &unmould the panna cotta. Scratch the granita with a fork & add tothe plated dessert. Serve immediately.

From the Larder
l 2 tsp double cream
l 1 tsp olive oil
l Sea salt & freshly ground black pepper
1 Put scallops in a bowl with 1 teaspoon of olive oil, salt &pepper. Mix gently & refrigerate.
2 Peel the parsnip & cut into pieces. Steam for approximately15 minutes until tender.
3 Blend the cooked parsnip with the cream, truffle oil until silkysmooth & season to taste. Set aside, keeping warm.
4 Heat a dry pan. Brown the scallops quickly for no more thana minute. Place a scallop on each spoon & season withpepper.
6 Add just one drop of truffle oil onto each scallop beforeserving.

l 150ml cold water
Method:1 Finely chop one onion and thinly slice
the other. Sift the flour and bakingpowder into a bowl. Add the currypaste or powder, chopped chilli and agood sprinkling of salt. Add about150ml of cold water to make a thickbatter. Stir in the chopped and slicedonions until they are well coated.
2 Mix together the raita ingredients witha little salt & pepper, then spoon into asmall bowl. Heat about 5cm of oil in awok or deep pan. Add a tiny speck ofbatter. If it rises to the surfacesurrounded by bubbles and starts tobrown, then the oil is hot enough.
3 Add heaped tablespoons of onion mixto the pan, a few at a time, and cookfor a few minutes, turning once, untilthey are evenly browned and crisp -about 3 to 4 minutes. Drain on kitchenpaper, sprinkle with a little salt andkeep warm while you cook theremaining bhajis. Serve with the raita.
