Statement of problem: Taling Chan cuisine (Ho Nueng)

Ho Nueng is one of the important Talingchan Cuisine of north people (most of people in Taling Chan immigrated from Lampang). But now new generation in my community (Taling Chan sub district) don’t know how important of this North Cuisine is, and don’t know how to Preparation Ho Nueng., too. So, I do this project to conserve and convince new generation of my community (Taling Chan sub district) to know the value of this tradition and conserve it for further generations.

Taling Chan Sub district is at the southern- most

part of northern Thailand, It is about 498 kilometers

from Bankok by bus. Taling Chan Sub district is

considered to northwest – central Bandanlanhoi in the

western part of Sukhothai Province, northern

Thailand, based on the physical features. The area

cover 334 square kilometers.

-400 grams fish, chicken or pork-rice roast-1 shredded red spur chili-¼ cup coriander leaf-3 tbsp shredded keffir lime leaf-2 tsp leek

Curry Paste-5 dried red spur chili, seeded and soaked in water-3 bulbs garlic-2 tbsp galangal, sliced finely-2 tbsp lemon grass, sliced finely-2 tsp finely sliced coriander root-½ tsp salt-turmeric -shrimp paste

1. Pound the ingredients for the curry paste well to obtain a smooth paste, set aside.2. Cut the fish into thin slices; if the Chicken is used, cut into small pieces, if the pork is used, chop coarsely.4. Add the curry paste to 1 cup in a pot or pan mixing bowl, add the fish and stir well. Break in an season with fish sauce. Stir for further 20 minutes, then add leek, 2 tbsp coriander, and 1 tbsp kaffir lime leaf. Stir well.5. and to wrap with the banan leaf and to steam cooked until
