At Tatua, we believe in building long-term personal relationships with customers. We design products with our customers through a collaborative process. We value being agile, flexible and responsive to customer needs, which enables us to commercialise products within tight time frames. Our strong technology and product development focus coupled with our expertise in exporting product globally, ensures for excellent long-term customer relationships.

LocationTatua’s head office and manufacturing facilities are situated in the heart of New Zealand’s richest dairy pastures at Tatuanui, in the Waikato region. Tatuanui is 35km east of Hamilton and 130km south-east of Auckland.

Our New Zealand location provides an ideal, safe source of high-quality foods and food ingredients. New Zealand has low levels of industrialisation and is free from many of the agricultural diseases found in other countries. The 109 shareholder farmers who supply milk to Tatua are all located within 12 kilometres of the manufacturing plant. This supply base allows for careful control over milk quality and ensures a consistently high-quality and fresh local source.

More than 190 million litres of milk is processed at Tatua per year. From this raw milk, Tatua manufactures a wide range of consumer, food service and ingredient products, of which 95% are exported globally to more than 60 countries.

Contract Manufacture:Tatua has extensive experience in developing and commercialising a broad range of specialised ingredients and food products. Our experienced technical team is able to offer innovative and cost effective manufacturing solutions within tight time frames.

Tatua’s Ingredients team works in close collaboration with key customers to supply premium high-quality dairy ingredients manufactured from fresh New Zealand milk. We manufacture spray dried caseinate, whey protein concentrate and anhydrous milk fat (AMF) offering superior flavour and functionality for a wide variety of food applications.

CaseinateOur extensive range of caseinates includes calcium, sodium, magnesium, potassium and mixed caseinates. The high protein content and bland flavour of our caseinates makes them ideal for use in baby foods, medical nutrition, sports nutrition and diet products. They have excellent functional properties, acting as emulsifiers and stabilisers in a wide variety of applications.

Whey protein concentrate (WPC)We specialise in producing high-purity whey protein concentrates (WPC)witharangeofoutstandingfunctionalandnutritionalproperties.Bothgellingandnon-gellingWPCsaremanufacturedforuseinawide

variety of food and nutritional applications.

Anhydrous milk fat (AMF)Anhydrousmilkfat(AMF)isahigh-quality,puredairyproduct. It is derived exclusively from fresh New Zealand cream. AMF is used to enhance mouth-feel, appearance, flavour and aroma of food products. Tatua AMF is ideal for use as a food ingredient in confectionery, bakery, ice cream and many other consumer products. It can also be used with skim milk powder to produce recombined fluid milk and other milk products.

specialty nutritional ingredientsTatua’s Specialty Nutritional Ingredients product range includes a variety of protein hydrolysates and highly purified bioactive proteins and peptides such as lactoferrin, phospholipids and lactoperoxidase. All of these have an extensive range of biological functions. Potential applications for these products include: sport and enteral nutrition, infant formulae, meal replacement and mineral supplementation.

Tatua has a wide variety of technologies and a flexible approach that enable us to work in close partnership with our customers to co-develop specialty ingredients. We also contract manufacture technically complex ingredients for our customers.

Protein hydrolysatesProteinhydrolysatesaremanufacturedbyaddingenzymestoproteins.Theenzymesbreakdowntheproteinsintosmallerpeptidesand free amino acids. We manufacture a wide range of dairy (casein,whey)andnon-dairy(wheat,soy)proteinhydrolysatesandbioactive products. Hydrolysates have improved solubility, reduced allergenicity, enhanced heat and acid stability and reduced viscosity, compared to intact proteins, especially casein.

LactoferrinLactoferrinisaniron-bindingproteinfoundnaturallyinhighconcentrations in human milk. It has an extensive range of biological properties including: bacteriostatic and bactericidal agent; antifungal (againstCandida)andantiparasitic;naturalantioxidantandimmunomodulatory properties.

Glycomacropeptide (GMP)GMPisalarge,glycosylated,heat-stablepeptidecleavedfromkappa-casein by the action of chymosin. Many of its biological properties are associated with the presence of sialic acid residues. GMPpropertiesinclude:ahighlevelofglycosylation;antibacterial;antiviral adhesion; antitoxic qualities; modulation of digestive hormones; low level of aromatic amino acids; and high levels of branched chain amino acids.

PhospholipidsWe manufacture two phosholipid free flowing powder products. These powders have a creamy flavour, are rich in phospholipids and haveemulsifyingproperties.Phospholipidsaresuitedtoarangeofdietaryapplications including infant, adult and sports nutrition applications.

foodserviceWe offer products to a variety of Foodservice customers including hotels, restaurants, cafés, quick service restaurants, bakeries and industrial food manufacturers. We manufacture innovative high-quality cream and dairy based products under our own Tatua brand and our Foodservice technologists work alongside key customers to co-develop and manufacture customer-specific products for foodservice outlets worldwide.

Tatua™ Dairy Whip® / Aerosol creamTatua™ Dairy Whip® is made from New Zealand farm fresh cream, which has been ultra-pasteurised to maintain its freshness, flavour and long life. We manufacture our own brand of aerosol cream, Tatua™DairyWhip®WhippedCream,ina500gcateringsizedcan for foodservice customers and we contract manufacture aerosol creamin250gand400gcansizesforcustomersinSouthAmerica,South-EastAsiaandAustralasia.

consumer productsWe specialise in the manufacture of innovative high-quality dairy products for retail customers worldwide, including supermarkets and convenience stores. We work closely with key customers to co-develop and contract manufacture customer specific products.

Our consumer products range includes Aerosol Cream and long life ultra heat treated (UHT) cream based products. Aerosol Cream, Mascarpone, Crème Fraiche and Sour Cream are manufactured under our own brands, Tatua™ and Tatua™ Dairy Whip®. We also contract manufacture for FMCG retail customers in New Zealand and Australia.

Tatua™ Dairy Whip® whipped cream/aerosol creamTatua™ Dairy Whip® is made from New Zealand farm fresh cream, which has been ultra-pasteurised to maintain its freshness, flavour and long life. It is ready to use straight from the can offering reduced fat cream. Tatua™ Dairy Whip® has 22% less fat than standard cream*, Tatua™ Dairy Whip®Litehas48%lessfatthanstandardcream*;(*standardcreamcontains35%milkfat).Tatua™DairyWhip® ChocolateDessertToppingisachocolateflavoureddesserttreat. They are packaged in 250g aerosol cans. Tatua™ Dairy Whip® is also available in a 400g can.

MascarponeMascarpone is a velvety soft Italian-style cream cheese that is rich, creamy and spreadable. Its velvety texture is similar to thickened whipped cream. It has a long shelf life and is available in 200g aseptic prepac pouches. Most people know it as the key ingredient in the Italian dessert, Tiramisu, but it can also be used as a base for sweet and savoury dishes.

Crème FraicheCrèmeFraicheisadeliciouslytangysouredcreamthathasathickvelvety texture. It is perfect to use in place of cream in cooking as it doesn’t curdle or separate. Its velvety texture is similar to thickened whipped cream. It has a long shelf life and is available in 200g aseptic prepac pouches.

Sour CreamSourCreamisaculturedsoftandcreamylonglifepasteurisedsourcream with a distinctive tangy flavour. A versatile product that is ideal for baking, desserts, savoury meals and dolloping. It has a long shelf life and is available in 200g aseptic prepac pouches.

dairy flavour ingredientsOur Dairy Flavour Ingredients team is focused on producing natural, high-quality dairy flavour ingredients that recreate the New Zealand fresh milk, cream, butter and cheese flavour profiles that have become the benchmark in the Asia Pacific region.

We provide strong technical support and work collaboratively with customers to develop products to meet their specific needs.

The natural dairy flavours allow cost reductions in many applications through partial replacement of dairy ingredients with flavours and lower cost, vegetable based ingredients. This also allows lower cholesterol and lower fat products to be formulated.

Our flavour ingredients team delivers a flexible, innovative business approach to dairy flavour ingredients for the global food and beverage industry. We focus on rapid product development to take new and innovative dairy flavour concepts from the laboratory through to commercial manufacture.

bionutrientsTatua’s Bionutrients division specialises in the manufacture and supply of peptones required for biopharmaceutical production, diagnostic media, dairy starter culture media, microbiological fermentation media and cell culture media.

Casein peptonesTatua casein peptones are manufactured in New Zealand from New Zealand casein solids produced by Tatua from fresh high-quality Tatua milk. A variety of casein peptones can be customised to meet

specific customer applications.

Soy peptonesTatua also produces a range of soy peptones.
