This year the Seafood Fest kicks off the month with events February 29-March 5 and the fun continues with the Wine & Food Fest in Sea Pines, March 7-12, and Piano Competition, March 7-14. The 9th Annual Hilton Head Island Seafood Festival returns to the Shelter Cove Community Park on March 5. Visit the King Neptune Statue at Shelter Cove Harbour

The towering 12-foot bronze statue of Neptune, which doubles as a larger-than-life sundial, serves as an iconic symbol of Shelter Cove Harbour at Palmetto Dunes, welcoming visitors to the entrance of the popular waterfront dining and shopping location.

Designed and installed by sculptor Wayne Edwards, this much-loved statue serves as a tribute to Neptune, the Roman god of the sea. The King Neptune statue, which depicts a bearded Neptune holding his signature trident, serves as a popular centerpiece at Shelter Cove Harbour. The statue is strategically mounted on a circular base with numbers around the edge.

When the trident’s shadow falls across the 26-foot wide base, the numbers indicate thepre cise time. Hailed as the world’s largestfigurative sundi al, the statue was origi nallycast at a foundry in Princeton, New Jerseyand shipped by truck to Hilton Head Island in1983. Engineers made meticulous measure-ments before the one-ton statue was installed,

ensuring that it would be located at the ideal angle to indicate the time.

They oriented the sculpture towards true south by aligning the constellation Ursa Major with the North Star.

An official dedication for the statue was held at Shelter Cove Harbour on August 11, 1983, attracting residents and visitors alike. Today, the King Neptune statue delights gen-erations of visitors to Shelter Cove Harbour, impressing adults and children of all ages. Stop by to see King Neptune in person and to expe rience a true Hilton Head Island icon.

This much-loved statue serves as a tribute to Neptune, the Roman god of the sea.

Directions:

• In small bowl mix mayonnaise,eggs, Worcestershire sauce, TexasPete hot sauce, Old Bay seasoning,dry mustard and parsley until smooth.

• Fold in crab meat. Add crackercrumbs.

• Lightly toss.• Refrigerate for 20 minutes.

[Important]• Mold together gently.• Sprinkle paprika. Add melted butter

on top.• Preheat oven to 350 degrees.• Cook until lightly brown.• Drizzle Chipotle mayonnaise on top

Makes 10 3-oz crab cakes.

I n the early 1990s, the “French Paradox” madeheadlines, and began the trend that put red wine in a healthy light. The paradox was that

the French had lower death rates from heart dis-ease in the 1980s than countries such as the United States and the United Kingdom, even though they had similar rates of smoking, high blood pressure and consumed diets high in cho-lesterol and saturated fat. Doctors suggested the reason could be that the copious amounts of red wine they consume protects from heart disease. Critics denounced this study citing that before the 1980s, French diets consisted of much lower lev-els of cholesterol and saturated fats. Since these dietary changes were so recent, the consequences of the poorer diet did not have time to make a difference. However, a similar study conducted a decade later showed results similar to the 1980s study, making the critics argument tougher to prove.

In 1995 Danish researchers found that, among 6,000 men and 7,000 women, those who drank three to five glasses of wine a day had a 49 percent lower rate of death over a 10-year period. Drinking the same amount of beer was not associated with a lower death rate, and three to five glasses of hard alcohol increased the death rate by 34 percent. However since the researchers did not look at lifestyle factors, is was possible that wine drinkers live longer because of other lifestyle choices, such as eating healthier or exercising more. Therefore this study was deemed inconclusive. However, another 29-year-long study showed red wine drinkers have a 34 percent lower mortality rate than beer or vodka drinkers.

It has been known for quite some time that the tannins in red wine contain procyanidins, which is known for protecting against heart disease. But it wasn’t until 2003 when scientists started getting excited about another ingredient, resveratrol (found in red wine, berries and chocolate), that could extend the human lifespan by 30 percent and help to remove chemicals responsible for causing blood clots, which is the primary cause

of coronary disease. A daily dose of red wine cuts blood clot-related stroke rates by 50 percent.

The story of red wine and cancer has been a complicated one, but it took a turn for the worse this year. In the past, studies have suggested that red wine may be able to reduce the risk of pros-tate, as well as lung and colon cancer, but prob-ably only for light to moderate drinkers. A prepon-derance of research sug-gests that heavy drink-ing increases the risk of lung, colon, liver, stomach and breast cancers.

Regardless of all the ever-changing scientific data on red wine and health, one con-stant has been the correlation between good health and over-all happi-ness. So if a glass or two of red wine a day paired with a great meal, enjoyed with friends or to just decompress after a stressful day contributes to your happiness, then drink up. Cheers!

In my jewelry box, I had several items gathering dust. There was a truly ugly 10K gold ring with drab, green jade given to me by my high school boyfriend. There was also a truly beautiful 18K gold hat pin with a fox

head on it, a gift from my grandfather. It's pretty, but I don't wear hats. Then, there were several pairs of button earrings I "outgrew." I prefer dangle earrings now and a bolder look.

As you might have guessed, each one of these unworn, unwanted pieces of jewelry met a different fate. The ugly 10K gold ring was scrapped because, well, it was ugly! The beautiful 18K gold hat pin was repurposed into a charm. The button earrings were given to my nieces with hopes that they will think of me when they wear them.

As you sort through your unworn jewelry item by item, here are some options to consider:

• If the jewelry has great sentimental value, hold on to it. No precious metal or gems are asvaluable as your memories of loved ones. Even if the item is not in fashion now, go aheadand wear it anyway, keeping memories of your loved ones close to you.

• Give it away to someone you love. There is simply no better use for unwanted jewelry. Whywait until the end of your life to give away items you no longer wear, when you could see the enjoyment they bring to those you love right now?

Believe it or not, at one time it was rare to see an alligator.

They were an endan gered species, hunted almost to the point of extinction. Many were killed for their leather to make shoes and purses, or for their meat, or just because people were afraid of them.

Today we can see alli gators pretty easily since they are now protec t ed by the Endangered Species Act.

If you ever see an alligator, leave it alone.

Don’t try to make it move or “do some thing” by throw ing sticks or other things at it.

Alligators can move really fast. In fact, they can outrun any human over a short distance. There is a myth that if an alligator chases you, run in zig-zags. This isn’t true. They can turn in different direc tions just fine, so you won’t lose them.

Another VERY important rule to remember about alligators is don’t feed them. This is so impor tant that it’s against the law to feed alligators.

Normally alligators don’t want to be around people. But, when someone feeds them, the ‘gators learn that where there are people, there is food.

So, when you see alli gators around the Low country, admire them from a distance.

Although mucky and smelly, the salt marsh is an important part of the Lowcountry. In actuality, the salt marsh produces more food for the environment than rain forests. The green grass that dominates the marsh is called salt marsh cord grass or Spartina. When this cord grass dies each winter and decomposes, its nutrients are released into the marsh mud, creeks, streams and even into the ocean. Weeks of cold bad weather brought on a case of cabin fever, so a prediction of calm seas left me with no choice but to

head off the beach in search of the wily sheeps-head. The dilemma at hand was a serious lack of fiddler crabs, the bait of choice for the sheepies. Captain Herb Rennard of Palmetto Bluff and I had discussed stories of success with clams and mussels, so we loaded up on those. To make it a complete busman’s holiday, we completed the crew with Captain Bryan Benson of the Bayrunner and Captain Ben Ranney of the Finatic.

Arriving at the reef, we dropped the clams down onto the structure with much anticipation. Nothing happened immediately but Captain Ben soon announced a solid hookup with a good-sized fish. A few minutes into the fight it became apparent that it was no sheepie, but a full-grown fish none-theless. I hooked up, not long after, to something large myself, but like Captain Ben’s it didn’t dis-play the classic up and down seesaw battle—the

trademark sheepshead fight. Soon we had a pair of 20- to 25-pound black drum on board, too big to keep.

The main goal was table fare (and I rank sheepshead right at the top), so we moved to another spot on the reef. After catching small sea bass, ringtails and other assorted small reef fish at that spot, and the next, but no sheepshead, we decided that the big black drum were at least top notch sport and resolved to head back to the original spot. We were not there minutes before Captain Herb tied into a nice one pushing 30 pounds. The bite was still on and action steady.

Captain Bryan hooked up and the fish made a searing run that almost spooled him. Muttering “probably a stingray,” he fought and the battle raged for a good 15 to 20 minutes, only to culminate in loud hoops and hollers when it broke the surface. The black drum was pushing 60 pounds, if not more! We lost several more this size to the reef and ended up with a dozen or more between 30 and 50 pounds.

Now there are two theories in regards to bait. One prescribes to the size of the bait matching the fish. The other is “you can catch elephants on peanuts.” The small bits of clams we were fishing with left credence to the lat-ter. I have, at this time of year, crushed the big black drum on tiny fiddlers. I might add that these fish were caught on light tackle trout rods with small 2/0 hooks.

We left the reef with nothing for dinner, but satisfyingly tired. As for the sheepshead, next time we will bring fiddlers. If you want to catch some, March is the time!

F oxes have been found in folklore and fables for hun-dreds of years. They are represented as cunning, wise, adaptable and at times treacherous. All of these attri-

butes make them a well-fitted resident of our South Carolina Lowcountry.

The red fox, Vulpes vulpes, is the largest of the true foxes and spread through many areas of the world. It is thought that their species moved from Asia to the Americas by cross-ing the Bering land bridge as far back as 300,000 years ago. Their fur is most commonly red with white underbellies, while silver, black and cross-coloring are occasionally found in the species. The most distinguishing mark is their white-tipped tail. They can weigh between seven and 14 pounds and will reach lengths of three to four feet long. Males are known as dogs and females are vixens. They communicate through vocalizations, facial expressions and scent marking. There are 28 known vocalizations used by red foxes.

Red foxes can be found around all of South Carolina. They tend to stay around agricultural areas, pastures, mixed vege-tation woods and, at times, suburban zones. As solitary ani-mals, they establish ranges. At times a single male and up to two females may occupy the same range. They will occa-sionally fight over territory, especially if food is involved. Individual foxes create a main or natal den that will be 15 to 20 feet long. Foxes will use other animals’ abandoned dens as emergency burrows for quick escapes and will have sev-eral in their territories. They are mainly nocturnal animals, being more heard than seen at night. In Hilton Head, they are most commonly spotted at sunrise or sunset.

Red foxes are omnivorous. Insects and carrion make up the majority of their diet. They are known to hunt down small rodents, rabbits and birds, including chickens and turkeys. During the summer, fruit and berries are added to their diet.

In the South Carolina Lowcountry, red foxes begin to pair up for breeding in late fall and early winter. The pair will share

a den until the young are born. Gestations last up to 53 days with vix-ens bearing between four to eight kits. The kits stay in the den for the first month of their life, with their eyes open-ing after 10 days. Nursing may last up to eight weeks, after which the mated pair will bring regurgitated food and then live rodents for hunting practice. The kits will stay with the vixen until fall. At times young females stay with their mother to care for the new litter. Red foxes reach their maturity at 10 months old. The oldest red fox docu-mented in the wild was 12 years old.

Red fox populations tend to stay con-sistent but do have a small decline over time. Kits can be hunted by owls and hawks. Adults and young are sus-ceptible to car accidents. Fox popula-tions are also influenced by rabies and mange outbreaks. It is said that red foxes are more common to con-tract rabies than other animals, lead-ing to up to two human-bite-related cases a year. There is worry for the red fox populations as coyotes move in and take over their hunting territories.

While the weather is a little unpredictable in early spring, it is the best time of year to go kayaking in the Lowcountry. After years of

kayaking around here, I’ve developed a few favorite pad-dles, several of which are in the Pinckney Island National Wildlife Refuge. Each of these trips offers something dif-ferent, depending on what type of paddling you like and what you want to see.

Squished between Hilton Head and mainland Bluffton, Pinckney Island National Wildlife Refuge is about half tidal marshlands. Four bodies of water lap the shores of Pinckney, each with their own highlights for the kayaker. On the very southern tip of the island is the Pinckney Island boat ramp. From here you can paddle right into Mackay Creek. This intricately winding creek runs between Pinckney and Bluffton and is unique for its shallowness, never reaching much deeper than 10 feet. My favorite way to paddle here is on an incoming tide, embarking about two hours prior to the high, paddling up the creek and between the two smaller islands in the creek—Big and Little Harry Islands. There is a sandy flat between the islands that is great for getting out of your boat, and as the tide comes in it is fun to paddle over in just inches of water.

If you go left when leaving the boat ramp, you will be in the Calibogue Sound, one of the larger bodies of water in our area. On the right side of the Sound, there are some nice sandy beaches, and usually great dolphin sightings! For those looking for some adventure, you can take the Calibogue to Jarvis Creek, the May River, The Broad Creek or the Cooper River—but be sure to get a waterproof map and check the tides!

Between Hilton Head and Pinckney runs the Skull Creek, a robust creek that boasts the most beautiful sunsets. If you have your own kayak, launch into the Skull from the Rowing and Sailing Center on Squire Pope Road. From here, head north (right) around high tide. At its mouth, the Skull Creek meets the Port Royal Sound—by far the most mighty of Pinckney’s waterways. The Port Royal Sound is the largest natural harbor south of New York and successfully paddling this area is very dependent on fair weather. Wind above about 10 miles per hour can make paddling in the Sound unenjoyably. You can head right in the Sound and land on

Dolphin Head Beach, which is perfect for a lunch spot. Or, if you’re experi-enced and up to it, you can paddle all the way across to Parris Island. Choose a calm day with a morning low tide and light winds out of the south. Depart the hours before low tide, and land back at the Rowing and Sailing Center four hours later. As you approach the other side, you will hear gunfire from the Parris Island Marine Base.

If you don’t have your own boat, you can go out on Skull Creek with an Outside Hilton Head guide. On a regularly scheduled two-hour tour, you can explore the banks of Pinckney for great nature viewing and historical sites. If you are looking to really under-stand and explore Pinckney from the water, you can hire a guide to take you all the way around, through all four waterways! Generally a four- to seven- hour excursion, this immersive program is an experience you will not soon forget. While not ideal for brand new kayakers, this program is suitable for intermedi-ate paddlers and includes stops on some of the most remote sandbars, shell banks and beaches in the area.

However you choose to do it, get Outside at Pinckney Island National Wildlife Refuge this March!

Jordan Spieth has won the hearts of many as he has conquered the golf industry. Spieth left college early after dominating NCAA Men’s Golf as a freshman at the University of Texas winning the Individual Championship. The next year, in 2013, he was PGA Rookie of the Year and the youngest player to earn a PGA Tour Membership, play in the Ryder Cup, Presidents Cup and win on the PGA Tour. In 2015 Spieth was named Player of the Year after winning the U.S. Open, Masters, The Tour Championship, and two more PGA Tour events.

One attribute that makes Spieth successful and sets him apart is the fact that he is an incredible putter, who does it differently. How so? By employing a cross handed grip. He does this, which allows him to make a better, squarer stroke, resulting in more solid impact and ball control. When you place your lead hand lower than your trail hand it can adjust your shoulders, which controls the direction of the stroke. Many golfers unknowingly open their shoulders, giving them a natural stroke that scrapes across the ball, which makes the ball spin and roll away from their target. But not Spieth.

Another interesting characteristic of his play is his

tendency to putt with his eyes on the cup. This allows him to relieve tension and focus. Many golf instructors, including myself, encourage students to do this so they learn to trust their mechanics and play golf on a more unconscious level. Have you heard of “paralysis from analysis”? Analyzing and mulling over all the 1,000 variables in a golf shot can stymie your execution of the shot and steal your joy. Jordan Spieth enjoys the difficult moments in golf because he has learned to react to the target, like in baseball, which was his first love as a kid.

But Spieth hasn’t just found success in his game of golf. Inspired by his sister Ellie who was born with a neurological disorder, he launched the Jordan Spieth Family Foundation, a charitable endeavor focused on providing financial assistance and

support to children with special needs, as well as military families and junior golfers. With all of the opportunities he was given, Spieth chose to serve and help others in the community, which is one of his biggest dreams—to give back in some of the biggest ways possible.

Some things can’t be taught, but technique and respect are teach-able qualities that end up not only shaping a golfer’s game, but also their outlook and attitude, which is one reason the Palmetto Dunes Golf Academy offers a class modeled after Jordan Spieth. It’s there that golfers will learn to be mentally tough, while shown how it’s possi-ble to be playful, have fun and still score lower with imperfect technique.

RULES FOR THE ROAD:Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

Travel the pathways at speeds that allow for the safety of pedes trians and other users.

Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

Please do not ride on roads where a pathway is available.

Please ride single file and keep a safe distance from other bicyclists.

WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.

Please yield to pedestrians. When resting or stopped, please move off the pathway.

Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash light. Bicycles must have a red rear reflector and a headlight when biking at night.

When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left.

Bicyclists should always wear a helmet, especially children 12 and under.

Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the pathways.

Be courteous, alert and predictable.

At low tide, the Island’s 12 miles of beaches are ideal for biking. Public beaches are indicated on the Island

Events’ Island Map.

Our map also shows the existing public pathways. Many kiosks are located

along the pathways with an Island-wide map on one side, and a localized map of

the area on the other.
