We humans are creatures of habit. We find something we like and

we stick with it. Habit is not a bad thing, but have you ever found

yourself complaining about always going to the same old places

when you go eat? As you’ll discover in the following pages, there’s

openings in and around Plymouth has put us in the enviable position

of having both quantity and quality eating and drinking venues on our doorstep.

More and more different styles of restaurants are now available, from the gastro

pub, to the all-you-can-eat; from the Japanese restaurant, to the finest French cuisine.

With so much choice around, now may be the ideal time to break the habits of a

In this edition we celebrate the colder months as a time to rejoice, and a time to

enjoy the creative and seasonal menus that are being offered to tempt us. It may

surprise you to learn that now, despite the global economic climate, is the best time to

In just twoweeks, it underwent a completeinterior revamp including newwood flooring and plush newfabric seating. Martyn brings withhim a wealth of experience, havingpreviously run the Lemon TreeRestaurant on the Hoe. REFECTORY RAISES THE (NEW) BAROctober has seen the opening of a new bar within The Refectory at Blackfriars Distillery, the home of Plymouth Gin since 1793. The Refectory has been such a success that a new larger bar wasessential. This bespoke bar has been designed specifically for the cocktail market and is the result of acollaboration between Fruition Design of Torquay and the Refectory’s own bartenders. Plymouth Ginhave also launched a new Professional Bartenders (Cocktail) Course, created in partnership with CityCollege Plymouth and accredited by City & Guilds. TOP ROLE FOR MASTER CHEF PETER GORTONThe head chef and proprietor of The Horn of Plenty Hotel & Restaurantnear Tavistock, Peter Gorton, has been appointed vice chairman of theMaster Chefs of Great Britain, the professional association representingthe country's top chefs. Peter has been a member of the Master Chefs forover 18 years – members are elected following proposal by at least tworeferees. Just because the world is in financial meltdown itdoesn’t mean you have to forgo eating out, especiallyif you’re prepared to be flexible. By Nick Bayly.

Apart from foreign holidays and anew car, one of the first thingsthat most people cut back onwhen the purse strings are beingtightened is the number of meals

they have out. Trips to the pub might well goup as the nation attempts to drink away themisery of a recession, but bookings atrestaurants have historically dipped when the financial situation takes a downturn.

But people still need to eat, and they stillneed to get out of the house, so well-managed venues with a loyal customer basethat offer value and great service will stillsurvive, and indeed flourish, in the lean times.However, what is clear is that restaurants at alllevels, from local pubs to Michelin-starredoperations, will find that their customers arekeen to economise. It might be one less bottleof wine, or forgoing a pudding, but cut backswill happen at all ends of the market.

Evidence of this new save-while-you-spendmentality is available from restaurant bookingwebsite Toptable.com, which recentlyreported a 40% rise in the number of bookingsit had handled in the first six months of thisyear. However, of those diners, some 45% weretaking advantage of the more than 900 ‘specialoffers’ available on the site. These astutefoodies are hunting down the best bargainswith a vengence, taking advantage of thebattle for customers on the high street.

Tough economic times for diners also meanstough times for restaurants, and it’s in theseperiods of economic uncertainty that they haveto work hardest to earn your custom, whichputs you, the consumer, in an extremely strongposition, especially if you’re interested in trying

out more top end dining experiences, ratherthan simply bagging a four-for-the-price-of-two deal at your nearest Harvester.

For food lovers, at least, a recessionpresents an eating opportunity not to bemissed. However, bargain hunters need to havea keen nose to sniff out the best deals, as theyare not always as widely promoted as you’dexpect, as top notch eateries don’t alwayswant the word getting out that you can eatout with them for less than a bog-standardmeal at a local pub.

The key to getting a good deal at the bestrestaurants is flexibility. Which means beingable to take off a few hours for a leisurelylunch during the week, or getting to yourtable by 6.30pm in order to allow therestaurant to turn the table for the next sittingat a prime time of 8.30pm. Evenings andweekends are the reserve of full payingcustomers, so timing is everything when itcomes to getting yourself a cut price table.

Equally, you may have to be prepared tochoose from a slightly more restricted menu.

Having a limited number of starters and

main courses means less waste for therestaurant, which means that savings can bepassed on to diners. If you’re a bit picky aboutyour food, it’s always possible to find out inadvance what’s on the menu, so there’s noneed for a vegetarian to arrive and discoverthat pig’s trotters and calves liver is the onlything on the menu that day.

Starting at the top of the tree is always agood idea, and there are few better places inthe West Country than the award-winningHorn of Plenty in Tavistock, recently votedDevon’s best restaurant. It is currently offeringits famous ‘Pot Luck’ three-course dinner onWednesdays for just £28 (compared to £47 onother days). The choice of main courses isreduced from the normal six to three, but with cooking of this quality from the kitchenof Peter Gorton, it hardly matters. Lunch isequally great value, with three courses andcoffee costing just £26.50.

Staying in Devon’s new food capital,Browns, in Tavistock’s West Street, does athree-course set lunch for £25, which includessuch culinary delights as pan fried sea bass and

cauliflower risotto to start, followed by aroasted fillet of rare breed pork and a choice ofthree puddings, including a mind-blowing bakeddark chocolate fondant with liquorice ice cream.

The other key to saving money when eatingout at a top restaurant is remembering thatyou’re first and foremost there for the food. A quality chef can add some serious value to apiece of fish or a cut of meat, but a gin and tonicor a bottle of wine remains a gin and tonic and abottle of wine no matter where and when it isopened, which means showing an element of

self-control with the wine list is essential if youare to avoid doubling your final spend.

Although a glass of tap water is probablynot the finest accompaniment to a confit ofduck, it might make the bill slip down easier atthe end of the month. House wines have apretty poor press, and quite rightly so in someestablishments, but don’t be afraid of askingfor house wines, especially in the smarterestablishments. This is their stock in trade andhas to be of good quality in order for it toremain the ‘recommendation of the house’. Arestaurant with a dedicated sommelier will beable to advise on its provenance, although allstaff should be familiar with its style.

Some restaurants will even throw a glass ofwine into the deal, as is the case at theDartmouth-based Spice Bizarre, voted thebest South Asian restaurant in the South Westin 2008, which is currently offering a budget-saving lunch time menu comprising twocourses, a glass of wine and coffee, for just£9.95. With a choice five starters and six mains(including tandoori salmon and spicy herbcrusted lamb chops), it’s almost cheaper thanstaying at home with the heating on. Eatinganywhere for under a tenner is almostimpossible these days, but for somewhere as

superb as this is nigh on incredible.Staying in the east, Devon’s only Japanese

restaurant, Yukisan, situated in Plymouth'sregenerated Barbican area, also offers somefantastic deals, especially on its set menuofferings. A feast of salmon sushi, Gyozadumplings, wasabi steak, stir fried monk fishand green tea ice cream costs £27 a head. It may seem a tad pricey, but it’s a snip when compared to the a la carte fare.

High quality, contemporary Italian restaurantsare a bit thin on the ground in Devon, so

Plymouth is lucky to have Zucca, a stylish andelegant restaurant with a superb location on theBarbican. A cool retreat from the city by day,offering great-value lunches and al fresco dining,in the evening the restaurant changes into aromantic, atmospheric space serving fine Italianstaples and a la carte specials, complementedby a grown up wine list.

Businessmen and women in a hurry arealways interested in what’s widely termed asan ‘express lunch’, which aims to offer a fast,

but far more enjoyable alternative to asandwich at the desk. Plymouth’s businesscommunity has been beating a path to thedoors of Tanners Restaurant since it firstopened in 1999, and its own take on ‘lunch onthe run’ includes two courses in the beautifulPrysten House, which is located a bread roll'sthrow from the historic Barbican, for just £15.

Being close to the Barbican is also a bigdraw for early diners at Chloe’s restaurant,which is located just three minutes from thestage door. This popular French bistro runs apopular pre- or post-theatre ‘menu rapide’which starts from just £16.50 for three courses.

The only stipulation is that you must vacateyour table by 7.40pm or arrive after 10pm.With prices like that, who needs to bothergoing to the theatre? Just get used to eatingearlier and leave time to go on to a bar andmake a real night of it. The message for thisnew season of austerity is to be prepared totry new places at new times and push theboundaries of your culinary experiences. Younever know, you might find a simple pleasurein enjoying good food for less money!

I would love to cook for Wesley Snipes and Heston Blumenthal. I would probably cook them anything from our current menu to guarantee that it would be something they would like.

In your experience what is the mostimportant thing about cooking?Using the most locally sourced produce, not only because it’s the best but also tosupport local suppliers. Producing a balanced seasonal menu with attention to detail being at the top of my list.

Are you in or out? There are currently 25,964restaurants in the UK, a figurewhich has barely changed since 1996. The big difference

is the number of meals served in thoseestablishments, up from 609 million to 702million. The eating-out market is now worth£27.5bn in Britain, a rise of more than 25%since 2000. Some 35% of total food spend isnow outside the home, compared with just20% 15 years ago. However, this figure still lags behind those drive-through lovingAmericans, where out-of-home spend on food remains more than 50%.

Breakfast on the go: We are fast turning into a nation which likes to have its breakfaston the run. Research shows that over the pastfive years there has been a 10% increase inbreakfast sales. Although fast food chains and coffee shops have been the mainbeneficiaries of this trend for brekkie on thego, an increasing number of restaurants areopening their doors early to catch the hungrycommuter who wants to linger slightly longer over a bacon bap.

Peter Backman, managing director ofconsultants Horizons, said: “Although breakfastsales account for a large percentage ofMcDonald’s turnover, other chains, particularlythe coffee operators, are giving the fast foodgiant a run for their money. However UKfoodservice operators are also beginning toexploit the opportunity breakfast sales offer,including restaurants like Café Rouge and pubchains such as JD Wetherspoon.”

Beer, beer, we drink less beer: Sales of beer inUK pubs declined by 4% in 2007, while sales ofwines and ciders grew by 1%. Factors behindthe fall included competition from cheapsupermarket alcohol, the smoking ban, and ageneral move away from beer towards moreexotic drinks. Last year Britons drank an

average of 228 pints, compared with 326 pintsin the Czech Republic and an Irish tally of 300.

Closing time: There are 58,000 pubs in theUK, but they are currently closing at a rate of67 a month. At this rate of decline, this meansthat by 2062 there will be no pubs left.Anyone fancy a pint before it’s too late?

Pizza proves topping: Britain’s love of pizzashows no sign of cooling off. Not only arethere more than 10,000 pizzerias in the UK,but Gondola, owner of the pizza chainsPizzaExpress, Ask and Zizzi, tops the charts as the largest restaurant operator in thecountry, with a whopping 525 venues.

Top of the takeaways: Kentucky FriedChicken and Pizza Hut owner Yum! is thelargest operator of ‘quick-service’ restaurants(‘fast food’ to you and me) in the UK, with its 1,377 outlets nudging McDonald's intosecond place with 1,247 venues. The biggestgrowth in the market in 2008 was achievedby sandwich specialists Subway, which added314 new outlets to take its total to 879 andclimb from fifth to third position. The otherkey growers were Domino's Pizza (whichadded 90 outlets to reach 470) and Prêt àManger, whose 33 new stores helped it risefrom 10th to seventh position in the table of quick service restaurants.

Pubs for grub: Food is increasingly bigbusiness for British pubs. Last year pubs servednearly 1.1 billion meals, compared with the 642million served in restaurants. The British Beer& Pub Association estimates that, in the past10 years, food sales in the UK’s 30,000managed pubs have risen by 165%. Some 80%of all pubs now offer food, compared withabout half in the mid-1990s, with the numberof pub diners now outstripping the number ofdrinkers, with the average pub now gettingmore than 25% of its turnover from meals.

Curry in a hurry: With Indian cuisine officiallythe UK’s favourite food, it is not surprising thatIndian restaurants dominate the ethnicrestaurant market. The Guild of BangladeshiRestaurateurs estimates there are some 9,800Indian restaurants in the UK, with the tradeworth around £3.2 billion.

The vast majority – 85% – of these are infact Bangladeshi-owned and not Indian at all.

However, during the past ten years, Thaifood has been the fastest growing cuisine, withthe number of restaurants increasing by 4,325%.

The number of Japanese restaurants,predominantly fuelled by the growth ofsushi, has gone up by 2,260%, while fish andchip restaurants have gone down by 30%.There are now well over 150 Japaneserestaurants in London alone.

Class in a glass: Although binge drinking among young women is supposed to be on the rise, men still drink twice asmuch as women, necking an average 18.7 unitsa week, compared to 9 units for women,according to data from the Office forNational Statistics. However, the biggest socialchange has been the rise in middle classdrinking, with men and women in ‘managerialand professional’ households drinking anaverage of 15.1 units a week, compared to 11.6units for households classified as ‘manual’.

Lovely bubbly: Despite the credit crunch, itseems that UK drinkers still like to pop a bottle

of bubbly whenever there’s something tocelebrate, and even when there’s not. In 2007,UK consumers drank 39 million bottles ofFrench Champagne. The top ten consumingmarkets of champagne are England, America,Germany, Italy, Spain, Belgium, Switzerland,Holland, Japan and Australia, although China’sfondness for the fizzy stuff is reported to beon the up. Last year, sale of champagne hit therecord of 660,000 bottles, representing a ninefold increase in the last five years.

No shortage of measures: While pubs havebeen offering wine in measures for manyyears, the Government is introducing newregulations next year which require allrestaurants to serve wine in glasses whichhave volumes inscribed on them (175cc or250cc). Not very elegant, but at least it means an end to short measures.

CLOSING TIME: THERE ARE 58,000 PUBS IN THE UK, BUT THEYARE CURRENTLY CLOSING AT A RATE OF 67 A MONTH. AT THISRATE OF DECLINE, THIS MEANS THAT BY 2062 THERE WILL BENO PUBS LEFT. ANYONE FANCY A PINT BEFORE IT’S TOO LATE?

Cider boom goes pear shaped: The UK’s brief flirtation as a nation of cider drinkerslooks to have cooled as quickly as a glass of Magners over ice, as poor weather and our notoriously fickle drinking tastes begin to take effect. Sales of cider in the UK grew23% in 2006 to 965 million pints following thearrival of Magners Irish cider, but sales are nowin freefall following dismal summer weather,England’s failure to make the EuropeanChampionships and a shortage of apples.

The latest trend is for pear cider, known as Perry, with Swedish brandKopparberg selling more of its pear-basedbeverage than it does in Sweden.

Iremember when I tried my first Englishwine in 1976, it was a Somerset wine fromPilton Manor, a blend of grapes so alien tome I couldn’t even pronounce them! And the taste? Frankly dull with no charm

and little fruit to the finish; but I perseveredand started to collect as many English winesas I could trying to understand the type ofgrape that would grow well and producewines of quality on a commercial basis.

Over thirty years later the UK wine industry is here to stay with over 350vineyards producing grapes varieties ofexcellent quality making Red, White, Rosé and Sparkling wines some competing veryfavourably on the international market.

As a restaurateur I have supported thedevelopment of English (and Welsh) wines andtruly believe that every Restaurant wishing toserve and produce dishes with local foodsshould also have a local wine to match.

Back to history and vineyard sites that havepaved the way for Westcountry wines tosurvive we have to start with the historicYearlstone near Tiverton. The late GillianPearkes founded this sloping site in 1974planting grapes with names such as Siegerrebe,Reichensteiner, Seyval Blanc and Huxelrebe.

In main these grapes were cross-bred to

withstand our climate and disease. Yields were low and quality patchy butperseverance and ongoing technical know-how enabled grape growers tounderstand our soils and climate.

Moving on to Sharpham vineyard in 1982Mark Sharman planted Madeleine Angevine,Huxelrebe and Seyval Blanc aiming to makearomatic whites high above the beautiful River Dart near Totnes. Success followed, the best grapes identified to produce higher yields and quality ensued.

Meanwhile Bob Lindo was planningretirement from the RAF with the aim ofmaking the best Sparkling wine he could inCamel Valley near Nancallos close toWadebridge. Nearly twenty years on the Lindofamily have succeeded with what has been

described as one of the very best (and multi-award winning) Sparklers in the UK!

So the scene is set to produce wines that define our climate and can certainly be more than a match for the lovely fish,shellfish and seafood we are blessed with here in the Westcountry.

Sharpham and Camel Valley wines havedeveloped their businesses to includeexcellent visitor’s centres where the wine-making process is easily explained. Tastingfacilities are also available to discuss andcompare wines for special occasions orperhaps for an original and thoughtful gift for family and business colleagues.

When visiting local restaurants thatspecialise in original local dishes my tip wouldbe to search out some of these excellent winesinstead of the tried and tested wines that oftenfestoon the wine list and confuse with theiroften wordy or flowery descriptions.

Most people choose their food before theirwine! So why not try reversing this process byselecting a bottle of Camel Valley BrutSparkling as an aperitif. It will certainly rivalChampagne with its sheer class and quality andcharge the taste buds well into the first course.Shellfish such as Helford Oysters, Port IsaacLobsters, South Devon Crab and Scallops allcome to mind as dishes with some flavour thatrequire a wine with character, Camel ValleySparkling Brut, also known as Cornwall notChampagne, will deliver with panache.

At Sharpham vineyard the grape MadeleineAngevine has become a very successful grapeproducing white wines with true Englishflavours of Elderflower, Apples and hedgerowfruit. It is also an excellent component forblending with other grapes enablingconsistency throughout the range.

Previously used American Oak Barrels areoften included in the wine making process atSharpham enabling the winemaker anothertool when producing his range.

Try matching Sharpham Dart Valley Reserve (DVR) with inventive vegetarian dishes or an eclectic Tapas election.

Sharpham Barrel Fermented or EstateSelection are a tad more complex and matchlocally smoked Salmon and Mackerel, lightlyspiced free-range Chicken dishes and thebrilliant soft cheeses from Devon and Cornwall.

In general the still white wines from bothSharpham and Camel Valley like to beconsumed young to maintain their fruit and acidity so keep for up to two years old to retain the very best flavours.
