HISTORY CORNER— An excerpt from the book
“Sandstone—from Gold to Wool and Back Again” by Sally L Senior
The Gold Escorts — page 203 Bushrangers, and particularly bushrangers stealing gold from travellers and coaches, were a major problem in the Eastern States of Australia, but in Western Australia they were just a potential one. Because of this, an armed board or ‘gold escort’ was supplied by the police, to ensure that the gold bullion being transferred from outlying goldfields to the more secure banks in the larger cities reached its destination safely. This trip could entail a journey either to the nearest large town, or right through to the parent banks in Perth. When it is seen how large some of the shipments of gold were, this practice is not at all surprising. Conditions for keeping gold secure on the goldfields varied enormously. Even when banks were established, and they were among the first businesses to open at a new find, only preceded by those who sold provisions and alcohol, they were frequently very flimsy in construction. Often they consisted only of a safe housed in a tent and kept under armed guard. From this humble beginning, the bank usually graduated to a wood and iron structure, and if the field looked to be a ‘goer’, a concrete strongroom/vault would be built within the wood and iron building. It was not until the town looked as though it was going to be permanent that a brick building, with incorporated strongroom, would be built. The remnants of these strongrooms can be seen in many of the deserted gold mining towns that reached moderate size during their life. Until quite recent times, the remains of the strongroom of the WA Bank could be found between Hack Street and Griffith Street, to the south of the Post Office in Sandstone. It must have been quite an exciting experience to encounter a gold escort on one’s travels. The experience made a lasting impression on Albert F. Calvert FRGS, who described the gold escort he met on the road near Yalgoo in 1895, in his book My Fourth Tour in Western Australia: As we neared Yalgoo we met the gold escort convoying the mail coach. A trooper with a revolver in his holster, and a repeating rifle in the ‘bucket’ of his saddle, rode a few yards in advance of the vehicle. On the coach beside the driver sat a senior constable, in the blue uniform of the foot police, and also fully armed. The mounted constabulary wear a short blue jacket, white pants, and knee boots. Large amounts of gold left the Black Range district over the first sixteen years, with the first recorded escort following the opening of the State Battery, and the first crushing, which was completed in late March 1904. This consignment consisted of 2,000 ounces of gold. Other gold escorts of note in those early days were those in December 1904, of 2,800 ounces; in October 1905, of 3,450 ounces; in November 1905, of 2,350 ounces; and in June 1906, of 3,733 ounces. During 1907 alone the two banks in Nungarra, the WA and the Union, forwarded 8,800 ounces of gold to their headquarters from the Black Range district. As more and more mines opened up in the district, the gold produced increased and by January 1908, there was an almost monthly gold escort leaving Sandstone with two police officers. In January 1908, it carried 6,617 ounces of gold, while in early March the gold transport took 7,238 ounces of gold out of Sandstone by coach to Mt. Magnet, to be sent on to Perth. By April, this amount had risen to 8,935 ounces of gold for the month, exceeding the previous record by 500 ounces. …../ to be continued

Pumpkin & Goats
Cheese Tart
Ingredients 2 sheets frozen puff pastry, just thawed 650g butternut pumpkin, peeled, deseeded 120g goat's cheese, crumbled 2 teaspoons fresh thyme leaves 4 eggs 160ml (2/3 cup) thickened cream 185ml (3/4 cup) milk
Method
Step 1 Preheat oven to 220°C/200°C fan forced. Lightly grease a 23cm (base measurement) fluted tart tin and line with the pastry, pressing well into the side. Place on a baking tray and bake for 15 minutes or until light golden. Set aside for 5 minutes to cool slightly. Use your hands to press down on the base to flatten. If desired, use a sharp knife to trim the excess pastry. Step 2 Meanwhile, use a very sharp knife or mandolin to thinly slice the pumpkin. Starting on the outside and working your way in, arrange the pumpkin in the pastry shell in a rosette pattern. Scatter the goat’s cheese over the pumpkin. Sprinkle with the thyme. Step 3 Reduce oven to 170°C/150°C fan forced. Whisk together the eggs, cream and milk in a bowl. Season. Carefully pour over the pumpkin. Bake for 30 minutes or until firm. Season.
