Ms. Mindy Petersen, MCCS Camp Pendleton Executive Chef,
passed on April 25, 2011 surrounded by family and friends in
Carlsbad, CA.
During her tenure, Ms. Petersen was without equal as both a
culinary artist and civilian Marine, recognized annually for
excellence. Respected and admired by all who know her, Ms.
Petersen will be remembered for the enormous impact she had on
the Camp Pendleton community.
A memorial service was held aboard Camp Pendleton on May 3,
2011 at Pacific Views South Mesa Club.

The NRA is Back!

I was recently talking to Dennis Maruska, a long-time IMCEA member who is currently our Position
Member at Fort Huachuca, Arizona. He mentioned that he missed “the old days” when we had a solid
partnership with the National Restaurant Association. I told him some of the things that we were currently
doing to bring that partnership back, and he said, “You need to get that word out to everybody!”
So here‟s what has happened in the past nine months:
Three members of the NRA national staff in Chicago have joined IMCEA as Affiliate members.
NRA bought a booth for Catersource as an IMCEA member, and participated in our IMCEA Bingo promotion.
An NRA executive attended both Alex Shortsleeve‟s presentation on sanitation and my presentation on Sandwich Magic at
Catersource.
NRA furnished IMCEA two complimentary registrations and a complimentary kiosk in the NRA Power of Partnership
Pavilion on their trade show floor in Chicago in May.
NRA has trained Alex Shortsleeve to both teach and proctor ServeSafe®, ServeSafe Alcohol®, and ManageFirst® programs.
NRA promoted and arranged for IMCEA to present “Selling to the Military” for 52 NRA Show exhibitors. This seminar was
promoted in two NRA exhibitor newsletters, signage, and in the convention program. Three NRA executives attended the
program.
NRA has created an unprecedented pilot program in which IMCEA members can get a discount on their NRA ServeSafe®
training.
IMCEA Director of Education and Training, Alex Shortsleeve, and I have joined
both the Texas Restaurant Association and the National Restaurant Association
as Associate/Allied Members.
NRA has agreed to work with IMCEA to develop a “Military Manage
First” (MMF) certification to be provided by NRA through IMCEA for military
managers, as part of a career ladder which spans both military and civilian
foodservice careers.
NRA will be in booth #230 at “A Fiesta of Flavors,” the IMCEA trade show in
San Antonio on July 20.

Leadership by Abilities, Actions & Attitudes
The NRA show was a week filled with networking, booth visits, and socializing not to mention a sampling of a variety of food
and beverage delectables. The NRA also graciously allowed IMCEA to conduct a seminar on “Selling to the Military.” There
were several highlights throughout the week culminating in our own BOD George Miller being recognized by IFMA
(International Foodservice Manufacturers Association) with the Prestigious Gold Plate Award to go along with the Silver Plate
Award for a lifetime of service to the Food Service Industry.
During my time in Chicago I had the opportunity to observe on several occasions leadership by example. For me, the most
memorable moment out of many during this Conference was the opportunity to listen to one of our great American leaders in
General Colin L. Powell, USA (Ret.). His presentation touched on a variety of subjects, all related to leadership in the Food
Service industry.
Gen. Powell‟s presentation focused not only on the demonstrated abilities of a leader but that these abilities were directly related
to your actions and attitudes. This presentation included certain leadership attributes that included: Supporting your troops,
infectious leadership, recognizing performance, involved leadership, creating bonds of trust.
When you think of „supporting your troops‟ what comes to mind? There could be several actions that can reflect the attitude you
have for your subordinates. For instance, the willingness to allow them to develop their careers whether through additional
training or education can communicate the positive attitude you have towards your subordinates and in their professional
development.
„Infectious leadership‟ is not only contagious it is desired. This type of leadership perpetuates your attitude and creates an
environment for exchange of ideas. This also begins to lay the groundwork of empowering your employees so that they begin to
make similar decisions that you as a leader are trying to implement.
How are your employees rewarded? Believe it or not, „recognition‟ has been proven to be just as strong a motivator than an extra
bonus or day off. One of the reasons for this impact is that „recognition‟ is ongoing. If an employee earns the designation as
“employee of the month”, that recognition will always be with them, whereas an extra day off is easily forgotten. The question to
ask is, do I want a short term or long term effect?
„Involved leadership‟ can take on many facets. How well do you know your subordinates? How updated are the job descriptions
and duties of each of your employees? Knowing what motivates your employees and what they face each day can endear you to
them in addition to improving working environments. Hopefully you are not a candidate for the TV show “Undercover Boss.”
The last topic Gen. Powell discussed was „creating bonds of trust.‟ Trust is not only essential to a cohesive team that follows their
leaders, but a team that is willing to change course at their leaders‟ direction. Are your employees willing to embrace change? If
so, then they are showing you a measure of trust in your ability to lead.
There is a debate as to whether leaders are born or made, but in either case, successful leaders are judged by their decisions and
the performance of their teams. Are your leadership
abilities being effectively utilized by your actions? Are
your attitudes guiding the very framework of your
decisions? It is important to reflect on these issues since on
the battlefield it can be life or death, and in the workplace it
can be the life or death of your organization.

Mrs. Maggie Bonner, Director of Protocol and Special Events Management from Headquarters Air
Force Services Agency was the guest speaker for the IMCEA Kanto Plains Chapter General
Membership meeting on 16 Feb 2011.
After sharing a brief overview of her history with the United States Air Force, MWR and Services,
Mrs. Bonner discussed the how Protocol as we know it originated from the Garden of Versailles.
Laughter was also elicited from the attendees as Mrs. Bonner demonstrated with members how
the handshake was originally a method of two men testifying before one another.
In closing, Mrs. Bonner thanked the Chapter for their contributions to the community and
reminded them to grow their organization beyond the reaches of the Kanto Plains.

Prestigious Gold Plate Awarded to Headquarters, Air Force
Food and Beverage Operations Chief, George Miller
CHICAGO, Ill. (May 24, 2011) – The International Foodservice Manufacturers Association
(IFMA) sponsored the 57th annual Gold & Silver Plate Awards Ceremony, the „Academy
Awards of Foodservice,‟ on May 23, 2011 at Chicago‟s Navy Pier.
Hosted by Food Network‟s Chef Robert Irvine, the ceremony recognized and honored the most
innovative and outstanding foodservice operators in the nine segments.
Air Force Food and Beverage Operations Chief George Miller received the most prestigious
award, the coveted Gold Plate, for his dedication and service to the U.S. Air Force foodservice
operations. In addition to recognizing the nine outstanding nominees, IFMA donated $10,000,
a portion of the event‟s proceeds, to Wounded Warrior Project™.

HONOLULU — Special Olympics Hawaii selected K-Bay Lanes
as the 2011 Organization of the Year for its outstanding continued
support. The award was presented during the Summer Games
Opening Ceremonies at the Les Murakami Stadium at the
University of Hawaii at Manoa, May 27.
“For years they‟ve been there for us for programs and practices,”
said Nancy Bottelo, president and chief executive officer of Special
Olympics Hawaii. “We just appreciate everything they do for us.”
Jeff Chaney, director, Marine Corps Community Services and
Elden R.T. Doi, manager, K-Bay Lanes, attended the ceremony on
behalf of the base.
“For a good number of years K-Bay Lanes has supported Special
Olympics,” Chaney said. “We‟re just thrilled that the athletes will
now be able to enjoy a newly renovated facility. We are also excited
that MCB Hawaii will continue to support Special Olympics events
in the future and that we are receiving this great award.”
For more than 10 years, MCB Hawaii has offered its bowling alley
as a venue for Special Olympics events such as the annual Holiday
Classic. Every year, from August to December, Special Olympics
athletes also attend weekly bowling practice at K-Bay Lanes.
This year, the athletes will find a newly-renovated K-Bay Lanes, which
officially celebrated a re-opening in October 2010 with new pinsetters,
seating, restroom facilities and eatery.
In 2004, the base was also recognized as the Outstanding Volunteer
Organization of the Year. Last year, more than 70 Marines and sailors kept up
this volunteering tradition at the Holiday Classic from Dec. 4 to 5.
“The Marine Corps base personnel and facilities have just been wonderful,”
said Nip Ho, vice president of area services, Special Olympics Hawaii. “We
really cannot do our programs without them and we‟re very, very grateful for
them.”
Ho said in the past, the organization struggled to find volunteers and a venue.
They first approached then-Hickam Air Force Base, and have since used
several military base facilities for games and practices. In addition to gaining
access to base facilities, many service members have also offered to volunteer for Special Olympics.
“Finding 2,500 volunteers in three days is extremely difficult,” Ho said. “We‟re very, very lucky here in Hawaii because we have all the
branches.”
The feeling is mutual at K-Bay Lanes, for Doi, who has been working with Special Olympics groups since he was the bowling center
manager at Naval Air Station Barber‟s Point bowling center in 1990.
“We appreciate them coming to our facility,” said Doi, a certified military
community executive, recognized for excelling in leadership and job
knowledge through a Department of Defense Morale, Welfare and Recreation
certification program. “We want to host them every year for their
tournament.” Doi said working with the Special Olympics athletes is a “very
rewarding experience” and that the athletes are all well behaved and easy to
get along with. K-Bay Lanes staff and service members helped escort
wheelchair-bound athletes to their lanes, and assist them with ball ramps.
“The commands were very, very helpful,” Doi said. “We appreciate their
volunteering every year for the Special Olympic events.”
