CHARACTERISTICS AND APPLICATIONS KAHL GUMS FOR YOUR REQUIREMENTS Kahl Gums are cream-colored, powdered Xanthan Gum biopolymers used as viscosity modifiers. They are high molecular weight polysaccharides produced by fermentation with Xanthomonas campestris bacterias. Kahl Gums interact synergistically with galactomannans to provide a wide range of rheological properties. The interaction between Xanthan Gum and Guar Gum results in a synergistic increase in viscosity while blends of Xanthan Gum and Locust Bean Gum produce heat-reversible gels. Kahl Gums work as hydrophilic colloids, thickening and stabilizing emulsions, foams, and suspensions. They are clear soluble in cold water forming high viscous solutions (using 1 % in a 1 % KCl solution the viscosity ranges from 1000 to 1800 mPas), but are practically insoluble in organic solvents. Xanthan Gum was discovered by Mrs. Allene Rosalind Jeanes and her research team at the US Department of Agriculture and brought into commercial production in the early 1960s.
