Blood Orange Parfait

12 oz ChocoBlanka white chocolate silk4 oz Heavy cream1 1/2 oz Blood orange puree16 oz ChocoScura dark chocolate silk1 1/2 oz Blood orange puree

Melt white chocolate silk and whisk together with cream and puree. Set aside.

Melt dark chocolate silk and whisk together with puree. Fill wine or parfait glasses with approx 2 1/2 oz dark chocolate silk mixture and refrigerate for 10 minutes to set.

Next layer approx 2 1/2 oz white chocolate silk mixture into glass. Chill the parfait and serve cold with candied orange and chocolate. Garnish with orange zest or chocolate decorations of your choice.

Note: Orange liqueur can be added if desired.

Pumpkin Silk Tart

One 9" or six 3" baked tart shells

Pumpkin Silk Filling:10 oz ChocoBlanka white chocolate silk7 oz Pureed pumpkin (we prefer Libby's)1 Tbsp Pumpkin pie spices

(cinnamon, alspice, clove, nutmeg)

Melt white chocolate silk and whisk in pumpkin puree & spices

Vanilla Mousse:8 oz ChocoBlanka white chocolate silk8 oz Heavy cream1 tsp Vanilla extract

In mixer, whip together white chocolate silk and cream until thick. Add vanilla, then whip at high speed until mousse texture is formed.

Assembling the Tart:Place pumpkin silk mixture into tart shell(s), allow to set in freezer or refrigerator. Top with vanilla mousse & sprinkle with cinnamon.

Garofalo Pasta was founded in 1789 in Gragnano, near Naples, Italy, when by Royal Decree Mr. Garofalo obtained the permit for the production and sale of “well-made” Pasta. Since then, Garofalo became synonymous with excellence, so much so that books referred to “high quality pasta” as “Garofalo-type” pasta. It is in Gragnano, where nature created the ideal environment for pasta production and drying, that the tradition of durum wheat pasta has a history of more that five centuries.

Garofalo pasta is made with the highest quality durum wheat semolina, so when you smell it, it has the color and aroma of wheat. Each pasta shape is different and Garofalo knows that well. This is why each cut is processed individually with artisan knowledge, giving it its own specific taste. There are no secret ingredients, just full disclosure. You can tell simply by looking at its transparent packaging: nothing to hide, everything to share. Garofalo is one of a few to bronze-die their GMO Free Gluten-Free Pasta just like their regular pasta. As a result, the texture is coarse and porous and the sauce clings better to the pasta.

Spring Brook Farm is a traditional dairy farm located in Reading, Vermont. It spans more than 1,000 acres and is home to a wide array of livestock, including over 100 registered Jerseys. The 42 milking cows produce over 600,000 lbs. of milk each year, now used to make our artisanal Tartenaise and Reading cheeses. In addition to the cows, we have goats, chickens, roosters, pigs, turkeys and even some humans—just for good measure. The farm sells hay for horses, sweet corn to the local market, and chickens and turkeys seasonally.

Tarentaise: Inspired by the famous French cheese Abondance, Tarentaise is aged for 6 months and has attractive grassy, nutty, buttery notes

For only a few weeks in late Spring, fields of elderflower bloom throughout Northern Europe, and are especially prized in the French Alps. For hundreds of years, these delicate white flowers have been hand harvested, quickly dried to preserve their flavor at its peak, then used to flavor traditional desserts and liqueurs. The flower’s sweet fragrance of honey and vanilla has captivated the inhabitants of the Alsace region for generations.

Recently this delicate flower has seen global acclaim, finding its way into some of the world’s best kitchens as well as into craft cocktail bars utilizing St. Germain. Recognizing its growing appeal, family-owned Alsatian cheesemaker Haxaire has begun infusing a traditional Alsatian cheese with elderflower blossoms, creating a new tradition all its own. Our La Cigogne Elderflower Tomme is aged a minimum of four months, yielding a gentle floral flavor with notes of toasted bread and a slight nuttiness. This exceptional flavored cheese is a stunner on the cheese plate, a great melter, and pairs quite well with a dry martini.
