Coriander Chicken with Cauliflower and Brown Rice

Coriander Chicken Recipe Ingredients: Chicken: 800gm - 1kgCoriander: 2 cups Meat masala: 2 teaspoonsSalt: 1 teaspoonPas phoron: 1 teaspoonRed chilli powder: 1 teaspoonTurmeric: ½ teaspoonOnion: 3 small pureed with a little

water.Ginger and garlic pastes: 1

tablespoon each

Method:Heat the pureed onions with the pas phoron in a pressure cooker for 2 minutes.Add the garlic and ginger pastes and after 30 seconds, add the chicken and stir.Cook for 3 minutes.In the mean time, blend the coriander and all the spices into a paste with ¼ cupwater.Add this mix to the chicken and mix together. Cook for 6 minutes after the 1st

whistle.

Zero Oil Cauliflower Ingredients:Ginger paste - 2 tspnsPeppercorns - 1 tspnSalt - 1 tspnCauliflower - 1 big

Method:Add the whole peppercorns to a non-stick pan over a high flame. When they start crackling, add the ginger paste. After a minute, add the cauliflower along with a splash of water and salt. Leave covered with about 1/4th cup water in the pan, over a high flame. After five minutes, uncover the pan, simmer the flame and leave it like that foranother seven to 10 minutes. Taste it after about 5-10 minutes of sitting on theflame. If it’s soft (similar consistency to a boiled potato), then the cauliflower’sdone. 

Microwave Brown Rice

Ingredients: 1 cup brown rice

2 cups water1 deep microwave-friendly bowl

Method:Wash the brown rice thoroughly and add to the bowl.Add the water to the bowl.Bung the bowl into the microwave, set the timer to 20 minutes.Come back in 20 minutes and eat!
