Wrap-to-Go Super Salad Luscious Leftover Soup
Any Smoothie or Shake
• 1 whole-grain wrap with lots of Romaine, fresh spinach or other greens plus unlimited fresh veggies
• Olive oil vinaigrette and/or mustard
• Your choice of ½ cup
• Tuna • Chopped chicken
breast • Shrimp • Sliced turkey
• Unlimited fresh Romaine, baby spinach, spring mix or other leafy greens
• Unlimited fresh veggies and fruits
• Olive oil vinaigrette or Balsamic vinaigrette
• Your choice of ½ cup
• Tuna • Chicken breast • Shrimp • Turkey
• 1 cup of vegetable, seafood or chicken stock
• Unlimited leftover roasted or sautéed veggies
• ¼ cup cooked brown rice or quinoa

Sweet and Tangy Chicken Wrap
Ingredients:
• 1 cooked chicken breast, diced
• 1 medium apple, peeled and diced
• ¼ cup thinly sliced celery
• 1 T chopped walnuts
• 1 T plain Greek yogurt
• 1 T Dijon mustard
• ½ tsp salt
• ½ tsp pepper
• ½ cup baby spinach leaves or spring mix
• 1 whole grain wrap or tortilla
Instructions:
In a small bowl, combine the chicken, apple, celery and walnuts and toss.
In another small bowl, whisk together the yogurt, mustard, salt and pepper until well-blended.
Add to the chicken mixture and combine well.
Place the chicken mixture onto the tortilla or wrap and top with the greens. Roll up burrito style
and enjoy. Tastes even better if made a day ahead.
Chicken and Strawberry Salad with Vinaigrette
Ingredients:
• ¼ cup diced red onion
• 2-3 T favorite Balsamic vinaigrette
• ½ cup fresh strawberries, sliced
• 1 cup Romaine lettuce, cut into chunks
• ½ cup or one small cooked chicken breast,
chopped
• 1 T chopped pecans or walnuts
Instructions:
Place the red onion in a small dish of icy cold water for five minutes to crisp them up and tone
down the bite.
Meanwhile, pour 1 T of the vinaigrette into another small bowl and add the strawberries. Toss
gently and let sit.
In a medium bowl, combine the remaining vinaigrette, lettuce and chicken breast and toss until
mixed well.
Drain the onions well and add both the onions and the strawberries to the salad. Toss gently and
serve.
Harvest Garden Leftover Soup
Ingredients:
• 1 ½ cups cups chicken broth or stock (you
can also use veggie stock)
• 1 sprig rosemary
• 1 sprig thyme
• 1 cup of mixed, leftover roasted root veggies,
such as sweet potato, carrot, cauliflower
• ½ cup unsweetened coconut milk
• Salt and pepper to taste
Instructions:
Place the chicken stock and rosemary in a medium saucepan and heat over medium heat.
Once it reaches a simmer, stir in the root veggies, salt and pepper. Simmer just until the veggies
are warmed through, about three minutes.
Remove from heat and stir in the coconut milk until fully incorporated. Pour into a deep bowl
and enjoy.
Creamy Tomato-Garlic Soup
Ingredients:
• ½ tsp olive oil
• 2 cloves chopped fresh garlic or 1 tsp
• 2 T finely chopped yellow onion
• 1 4-ounce can tomato paste
• 1 cup unflavored coconut milk
• 1 teaspoon honey
• ½ teaspoon salt
• ¼ tsp pepper
• 1 plum tomato, diced
Instructions:
Heat the oil over medium low heat in a small sauce pan.
Add the onions and garlic and sauté just until the onions are soft, about two minutes.
Spoon in the tomato paste and stir to mix well. Cook for 1 minute.
Slowly stir in the coconut milk, stirring constantly until well-blended.
Add the honey, salt and pepper and heat through.
Stir in the diced tomato, pour into a deep bowl and serve.
Tangy Shrimp Wrap
Ingredients:
• ¼ cup plain Greek yogurt
• ½ - 1 tsp horseradish
• ½ tsp honey
• ¼ tsp celery seed
• ½ tsp salt
• ¼ tsp pepper
• 2 T finely chopped red onion
• 6 medium (31-40ct) cooked and
peeled shrimp, cut in half
• ½ cup chopped Romaine or mixed salad greens
• 1 whole grain wrap or tortilla
Instructions:
In a medium bowl, combine the 7 ingredients, whisking together with a fork to blend well.
Adjust the horseradish to your liking.
Stir in the shrimp and combine.
Spoon onto the tortilla or wrap, top with the greens and wrap burrito style.
