A Native Spain ChristmasA Native Spain ChristmasWe've spent 6 Christmases in Spain nowand each year it gets better. We've beenwelcomed with open arms into ourSpanish village and adopted by aSpanish family, so our Christmases areas Spanish as you can imagine.From the Christmas Eve shindig in thegarage of our adopted family, with a 6-course meal for 30 people, drinks (lots ofdrinks), singing (well, shouting), guitarsand cigars (only the men of course!) tothe quieter family lunch on Reyes day,with a 6-course meal for 30 people,drinks (more drinks!), singing (slightlymore tuneful than Christmas Eve), gui-tars and cigars. Plus the 4 parties inbetween and of course the 3King's Procession throughthe village, the bouncy cas-tle for the kids, the 12grapes on New Year's Eve,dare I go on! The SpanishChristmas period is not forthe faint hearted.This year we're reciprocat-ing by holding a lunch ofour own during the festive period, whereI'll dutifully prepare too much food, chilltoo much wine and drink too much gin.I'm planning on roast beef followed byChristmas cake ice-cream, for 30 people.Now, I just need to catch that cow…A custom when being invited to aSpanish home for food is to take some-thing to eat with you. Usually somethingsweet. Last year we excelled. We mademince pies, with our home-made mincemeat. I cooked and decorated aChristmas cake. And we made fairycakes for Reyes Day. All of them weregreeted with a little suspicion, a sniffand then scoffed! I'm still wonderingwhat I'll surprise them with this year.We also baked the Murcian Christmasspecialty of Cordiales. These are the deli-

cious little almond cakes, with angels'hair filling. They are very simple tomake, fun and sticky, taste scrummy anddon't hang around for long in our house.When you see these in the shops youknow it's Christmas, but I think they'rejust too good to only have once a year(unlike Cadbury's Cream Eggs - yuck!)and so I suggest you make some yourself.(See Debbies recipe for MurcianCordiales on page 32)But the highlight for me last year wasseeing my husband dressed up as a King.He was chosen (much in the way whenthe army asks for volunteers and 19recruits step backwards, leaving 1

remaining "volunteer")to be a King at the Reyesday procession.Whilst I had seen andread about the proces-sion, it's only whenyou're involved that yourealise how muchthought and attentiongoes into it all. From thecostumes, the gifts and

the roscón (large doughnut shapedcakes), every detail is planned, and allthe children get a gift from the Kings.What surprised me most was that theKings also visited the elderly and sick inthe village, sharing happiness and goodwishes with all people.Whilst I'm not a religious person (andthe 1 hour mass was a little tiring!), Ithink that this event totally summed upthe "meaning" of Christmas. It's notabout the cakes and the food, nor thebooze and the cigars. It's about beingwith people who care and whom you careabout. It's about taking the time frombusy lives to celebrate the young, appre-ciate your peers and honour the elderly.The Spanish really do take having funseriously!

MethodPut the cracked ice in a margarita glass.Put the rum, creme de fraises and lime cordial into ablender and blend for 30 seconds. Pour into the glass and decorate with the powdered sugar and strawberry., Serve with a straw.

After 7 years teaching Spanish mainly toBritish adults in the La Manga area, I wouldlike first to thank all my students for trust-ing in my guidance to become fluent inSpanish. 90% of my students were totalbeginners when they came to me and theydid not know any grammar at all, as formost of them it was the first time they hadtried to learn a foreign language, sotogether we have created a teachingmethod that is a simple and effective wayto speak Spanish.

The main advantage I can offer you as amature learner is that I also learnt my for-eign languages as an adult. That’s why Iknow how you feel and I will be guidingyou along the process. I will tell you every-thing you need to do to become fluent inSpanish with just a 2 hour lesson once aweek and 30 minutes daily study on yourown.

During the first 6 months we will be work-ing on the brain level as we can not sayor hear any word that is not previously inour brain. At this stage my first objective isto teach you to read Spanish with the rightpronunciation. My first lesson is called “Thereading lesson” in which I will tell you allthe rules to pronounce Spanish properly,phonetically speaking, Spanish is muchmore simple than English. Spanish has 28sounds and English 40 so you should havevery few problems.

The second step is to develop your vocab-ulary and grammar. Mainly I will teach youhow the Spanish verbs work. As in any lan-guage the sentence is the unit of meaningand the central part of any sentence is theverb. Without verbs there is no meaningand we are left with simple words whichhave no connection. At this level lessonsare translated totally into English.

After one year learning you reach the earlevel, by this I mean that little by little youstart to understand more and more but youare still unable to reply quickly enough tomaintain a conversation, at this stage youwill have more listening and speaking andalthough lessons are still translated intoEnglish I gradually introduce more andmore sentences in Spanish.

Within 2 or 3 years learning, depending onthe groups, you accomplish the mouthlevel, by this I mean you can understandeasily Spanish and you can reply quicklyenough to maintain a conversation. At thislevel lessons are held totally in Spanish.

From the moment you start to feed yourbrain with the Spanish words, grammarand sounds by all means (lessons, CDs, TV,songs, radio, etc) it takes one year at leastto understand Spanish, and 2 or 3 speak it,so only the ones who really enjoy thelearning process will last long enough tobecome fluent, that is why I always try tomake my lessons as enjoyable as possible.

You're staying in Spainfor Christmas so, apart fromthe language barrier, thereare a few typical SpanishCustoms that we shouldembrace and enjoy.

So what is it that theSpanish do that's a littledifferent? For a start,most families eat theirmain Christmas meal onChristmas Eve rather thanthe 25th. The traditional SpanishChristmas dinner is 'Pavo Trufado deNavidad' which is Turkey stuffed withtruffles (the mushrooms, not the choco-late ones!) although here on the coast it'svery common to enjoy seafood.

Boxing Day is 'just' the day followingChristmas and not one for celebrationbut you'd better keep your wits aboutyou as December 28th is 'Día de los san-tos inocentes' or 'Day of the InnocentSaints' and is very like our April's FoolsDay.

Apart from Christmas, there is anotherfestival that is celebrated in Spain,called Epiphany or Kings' Day and is cel-ebrated on 6th January the 12th night,called 'Fiesta de Los tres Reyes Mages':in English this means 'The festival of thethree Magic Kings'.

Spanish Children receive some presentson Christmas Day, but most are openedat Epiphany. Each child chooses one

King and writes aletter to them with their 'wish

list''. Some children believethat the Kings bring pres-

ents to them at Epiphany(just like Santa) but if thechildren have been bad,the Kings might leavepieces of coal made out ofsugar, in the presents!‘You have been warned.’Most of the big towns

and cities have CarnivalParades with each King having a bigfloat.

The Three Kings are :Gaspar: has brown hair and beard andwears a green cloak and a gold crownwith green jewels on it. He is the King ofSheba and represents the Frankincensebrought to Jesus.

Melchior: who has long white hair, awhite beard and wears a gold cloak, isthe King of Arabia and represents Gold.

Balthazar: has black skin, a black beard,wears a purple cloak, is the King ofTarse and Egypt and represents the giftof Myrrh.

Well, here we are, Christmas already, I don’t knowabout you, but it seems to come around quicker eachyear, which is a bit of a stupid statement when its still 12months between, must be an age thing! seems only yesterday it was summer.Anyway, for those of you who are preparing for a tradi-tional Christmas at home, here is a recipe for a short-crust pastry, perfect for mince pies that will melt in yourmouth, Vinegar pastry3 cups plain flour 1 cup shortening (1/2 butter and 1/2 lard is a good mix)1/2 teaspoon salt - 1 egg 5 tablespoons cold water 1 teaspoon white distilled vinegar (this won’t change theflavour, but will make the pastry short and flaky)

Mix flour, shortening and salt until fine crumbs about thesize of small peas. Beat in egg. Add cold water andvinegar. Combine with flour and shortening mixture.This recipe makes three single 9-inch pastries. Bake at425 degrees F.If this mix is wrapped in plastic wrap, dough will keep inrefrigerator two weeks. It can also be frozen.If you fancy having a go at making your own mincemeattry this recipe:Note: If possible, this mincemeat needs to mature for atleast two weeks before using. Once sealed, it can keepfor at least a year.Preparation time overnight - Cooking time 2 hours

Ingredients: For 6lb mincemeat:12oz (350g) seedless raisins8oz (225g) sultanas8oz (225g) currants4oz (110g) cut mixed peel4oz (110g) chopped dried prunes12oz (350g) soft brown sugar1lb (450g) cooking apples - peeled, cored and grated8oz (225g) shredded suetgrated rind and juice of 2 orangesgrated rind and juice of 2 lemons2oz (50g) chopped almonds2oz (50g) chopped pecan nuts1 tbsp (15g) mixed spice1 tsp (5g) freshly grated nutmeg5fl oz (150ml) brandy

Method1. Mix all the ingredients together, except half thebrandy, in a large ovenproof bowl and cover and leaveto stand overnight.2. The next day, preheat the oven to 110C/225F/Gas¼, cover the bowl with foil and place in the oven forabout 3 hours.3. Allow to cool, then mix in the rest of the brandy andput into sterilised jars. He read it back and wasn't happy with that one either.He tried a third version. 'Dear Jesus, I could be a goodboy if I tried hard and especially if I had a new bike.' Heread that one too, but he still wasn't satisfied. So, hedecided to go out for a walk while he thought about abetter approach. After a short time he passed a house with a small stat-ue of the Virgin Mary in the front garden. He crept in,stuffed the statue under his coat, hurried home and hidit under the bed. Then he wrote this letter. 'Dear Jesus,If you want to see your mother again, you'd better sendme a new bike.'

The equivalentof the UK’sT r a f a l g a rSquare conver-gence isM a d r i d ’ sPuerta del Solwhere tens ofthousands of people assemble to cele-brate seeing the New Year in. But wher-ever people are in Spain, they will beseeing in the New Year in the tradition-al way – with the ‘eating of the grapes’(tomar las uvas). Everyone gatheredaround the clock has twelve grapes, andas each chime of midnight rings out, sothey have to eat one grape. A good insid-er tip is to take the skins off the grapesfirst to help you eat them so quickly!

This tradition dates back to fairlyrecently – the beginning of the 20th cen-tury – and supposedly came about aftera bizarrely large crop of grapes was har-vested in Spain one unusually warm

winter. Not know-ing what to dowith the unwant-ed crop, the grapegrowers came upwith the idea ofevery person inSpain eatingtwelve grapes atmidnight to see inthe New Year.

The 12 Lucky GrapesIInnggrreeddiieennttss1kg of AlmondFlour/ GroundAlmonds (youcan makeyour own orbuy it in smallbags frommost super-markets)800gms sugar1 kg of Angels' Hair (cabello de ángel) -it comes in tins9 eggsLemon rindObleas - which are the wafer thin edi-ble sheets, a little like rice paper andfound in most supermarkets

MMeetthhoodd1. Mix the ground almonds, sugar,lemon rind and the eggs together in alarge bowl. It will form a sticky mess.

2. Place the obleas on a baking sheet.

3. Using your hands take out smallballs of the dough, poke a hole in oneend with your fingerand squish a bit ofthe angel hair inthe hole. Coverup the hole witha little dough.

4. Form the ball into asmall cone shape, place on the obleasand start on the next one.

5. Place in a hot oven (about 180º) for25 minutes or until they are a littlegolden.

This makes about 40-50 cordiales -which is plenty! They last well (if light-ly covered) for a week or so, and areprobably at their best the day afterbaking (unless you like them warm orcan't wait that long!)

This week we took a trip on Bob (the boat) to investigatethe bird life on two islands in the Mar Menor. Armed witha bird spotting sheet and a pair of binoculars, we headedfor Isla del Sujeto and Isla Redonda. These islands are sit-uated just to the north of Isla de Ciervo (which used to beconnected to La Mango strip via a causeway). Both islandsare nature reserves and many birds live and breed there.It is best, if you wish to view the birds, to do it from thewater. You should not land on the islands, as this will dis-tress the birds, particularly when it is breeding season. Most of the birds we sawwere gulls and in today'sarticle I will provide detailson the two most prevalent;the Yellow Legged Gull andthe Lesser Black Backed

Gull. We also spotted a large number of Little Egret(featured in last week's article) on Isla Redonda.These birds are pure white, with black legs and billand therefore easy to distinguish.

Both the LesserBlack Backed andYellow LeggedGulls are very sim-ilar in both size and appearance, the key differ-ence is the Lesser Black Backed Gull has muchdarker wings. Both birds have yellow legs so youcan't use that to help to distinguish them.

These gullsmake nests onpiles of grass

on the ground, this makes their nests vulnerableto predators and is why they tend to nest in loca-tions which are inaccessible by foot. They gener-ally feed on; aquatic invertebrates, molluscs andfish. Due to the volume of fish that they can con-sume they are not very popular with fishermen!Lesley SingletonAqua Adicta

Yes, even vegetables onapartment terraces.To show what can be done, for themini growing chapters of our book‘Growing Healthy Vegetables inSpain’ we managed to grow somefifteen vegetables in three largecontainers in less than one squaremetre of space.If you have limited ground areathe trick is to use the walls,balustrades plus the ceilings ofcovered terraces to support plants.The many shapes and colours ofpots, troughs, hanging pots andwindow boxes give every opportu-nity for creating eye catching fea-

tures with a little creativity.Naturally all readers will not befull time residents but the sameapplies, as many plants suitablefor small spaces are not expensiveand can be given away to friendsand neighbours at the end of eachholiday if you are not able toarrange for someone to waterthem for you, or don't trust a miniwatering system in your absence.

Thinking of water, there are nowsmall, even mini, water featuresjust right for terraces and patiosthat add the cooling sound ofwater on hot summer days andmagical sounds for late dinnersunder the stars. Thoughtfullyplaced lighting is also useful andcan make night time terraces looklarger than they are, as can endwall murals/paintings, mirrorsand wall mounted pots of plants.

Then, Mrs. Claus popped in totell Santa that her mother wascoming to stay for Christmas;which stressed him evenmore.

After a while, he went to har-ness the reindeer, he foundthat three of them were aboutto give birth and two hadjumped the fence and runaway, heaven knows whereto.

Then, when he began to loadthe sleigh one of the boardsbroke and several large toy-bags fell to the ground, scat-tering their contents all overthe place. Needless to say,Santa was not in the best ofmoods.

Suddenly, the doorbell rangand he went to the doorexpecting another problem.But when he opened it, therewas a little angel with a greatbig Christmas tree that shehad brought especially tocheer him up.

The angel greeted him verycheerfully, "Merry ChristmasSanta Claus. Isn't it just awonderful day? I have abeautiful tree for you. See,isn't it just the loveliestChristmas tree you've everseen? Where would you likeme to put it?"

Thus began the tradition ofthe little angel on top of theChristmas tree.

**************A frog goes into a bank andapproaches the teller. He cansee from her nameplate thather name is Patricia Whack.

Pattie looks at the frog in dis-belief and asks his name. Thefrog says his name is KermitJagger, his dad is MickJagger, and that it's okay, heknows the bank manager.

The frog says, Sure. I havethis, and produces a tinyporcelain elephant, about halfan inch tall - bright pink andperfectly formed.

Very confused, Pattieexplains that she'll have toconsult with the bank manag-er and disappears into a backoffice.

She finds the manager andsays, There's a frog calledKermit Jagger out there whoclaims to know you and wantsto borrow €30,000, and hewants to use this as collateral.

She holds up the tiny pink ele-phant. I mean, what in theworld is this?
