As we make our way through the Lenten season and on into Easter we are reminded that whatever family traditions we have stem from our ancestry, whether we have an Italian background, a Latin American one or our roots are from elsewhere. This is a season of many celebrations, rebirth in the Northern Hemisphere and in this issue we want to take the time to celebrate those beautiful roots. We hope you will take the time to reminisce and be thankful for the rich flavors that are engrained in your holiday traditions. Whether sweet or savory, spicy or exotic - these flavors have shaped our lives for many years and are worth the thoughtfulness.

This issue we are featuring a restaurant guide with an international flair, cuisines from around the world right here in our own backyard. Also, a few old world recipes to try in the comfort of your home which will help you connect with the flavors of our ancestors. We know there are way to many to choose from around our area, but we hope you enjoy a small sampling of what our diverse area has to offer.

The calendar this issue is full of a wide variety of events - from charity benefits, food festivals & wine tastings. We are sure you will find something delightful and delicious to fill your time (and your belly!).

Fusilli alla Bella LisaFrom the kitchen of Chef Vincenzo Esposito with his Daughter Lisa

Preparation time: approx. 30 minutesServings: 4 to 6

INGREDIENTS1 lb. boneless chicken breast (cut in to strips)1 lb. fusilli or rotelli pasta4 cups ripe fresh tomato (diced)2 cup fresh mushrooms (sliced)¼ lb. butter½ cup onions (finely chopped)2 tbsp. fresh rosemary½ cup fresh basil (finely chopped)¼ cup fresh parsley (finely chopped)2 cloves garlic (finely chopped)1 cup white wine 2 cups chicken stock 1 tsp. sea salt1 tsp. black pepper2 tbsp. corn starch1 cup flour 1 cup vegetable oil

INSTRUCTIONSCut the chicken in to finger like size, dust the chicken in the flour and set at side for frying, in a large frying pan sauté the floured chicken in the vegetable oil till golden and set aside.

SAUCE: in a large frying pan, melt butter add garlic, onions and mushrooms, sauté for one minute and add diced tomato, basil, parsley, rosemary, salt, pepper, sauté for 3 more minutes, add the sautéed chicken, white wine, 1-1/2 cup of chicken stock and sauté for 10 more minutes, in a bowl mix the reaming ½ cup of chicken stock with corn starch, whisk until combined, add to the sauce and stir until thicken.

Boil the pasta and salt the water to taste and the pasta with the BELLALISA Sauce. Buon Appetito! Chef Vincenzo

Old World Recipes

IRISH SODA BREADAdapted from Irish Country Cooking

Makes 1 loaf

INGREDIENTSVegetable oil, for greasing3 2/3 cups all-purpose flourplus extra for dusting1 teaspoon salt1 teaspoon baking soda1 3/4 cups buttermilk

INSTRUCTIONSPreheat oven to 425ºF. Grease a baking sheet.

Sift flour, salt, and baking soda into a mixing bowl. Make a well in the center and pour in most of the buttermilk. Mix together well using your hands. The dough should be soft but not too wet. If necessary, add the remaining buttermilk.

Turn the dough onto a lightly floured surface and knead it lightly. Shape into an 8-inch circle. Place the loaf on the prepared baking sheet and cut a cross into the top with a sharp knife.

Bake in the preheated oven for 25-30 minutes, until golden brown and it sounds hollow when tapped on the bottom. Transfer to a wire rack and let cool slightly. Serve warm.

A special thank you to Island Fresh Market on Anna Maria for providing us with this tasty recipe based on the fresh catch of the season – Pompano! Visit Nancy Feely at 5604 Marina Drive, Holmes Beach for the freshest local fish and all the makings for a scrumptious fresh and local meal.

Florida Pompano, in season January through April is a delight to catch as well as cook and eat. Fun to catch on hook and line with artificial or natural bait or netted commercially. Usually on the smaller side of 1-2 pounds but can get up to 7 pounds with a moderate oil, pearly white raw flesh. The meat is quite dense with a mild sweet appealing taste.

Recipie Suggestion: My favorite is sautéing garlic and ginger in sesame oil until the garlic is brown and crunchy, drop the filet in skin side down and sprinkle with fresh lemon or lime. Cook on a medium heat for 3-4 minutes and then turn flesh side down to finish for a crunch sear with the garlic and ginger. Serve immediately over a bed of seaweed salad.

One of the most contested and confusing parts of enjoying wines is the alleged “Pairing of Wines” by the “Experts”!

As the premier winery in Manatee County, BHV is constantly asked about ‘How’ wines should be paired. With this Blog, we will attempt to answer this question.

The mystery surrounding wine has been with us for a very long time. Today, most of us are removed from the process of growing grapes and fruits and creating wines. We have lost our connection to our wine heritage. Our daily lives dictate that we rely upon a plethora of ‘Experts’ and ‘Consultants’ to help us function in our modern world. Wine purchasing and enjoyment seems to be a perfect candidate for this ‘Expert’ help.

Please understand, most of our ‘Wine Experts’ today, are involved in the distribution and sales of wines. They rely upon the information provided by mostly distant and factory wineries. Most of these ‘Experts’ have never made a single bottle of wine. Most cannot even tell us the basic difference between ‘Unfiltered’ and ‘Filtered’ wines. When we go to ‘Wine Festivals’ or nice Restaurants the wines most often ‘Paired’ are those wines being promoted by the factory wineries. So, what do we do?

Well, the answer is to ‘EMPOWER’…YOU!!From this day forward, YOU are empowered to make

100% of all the decisions regarding your choices of wines! What really counts is YOUR…Taste. If YOU like the taste, flavor and bouquet of the wine, then that’s a perfect choice! If YOU choose to enjoy your wine at room temperature, refrigerated or even with an ice cube, then that’s a perfect choice! If YOU choose to enjoy a red wine with a fish dinner or a white wine with a steak dinner, then that’s a perfect choice! If YOU choose to add a little extra sugar or a cinnamon stick to your glass of wine, then that’s a perfect choice!

The Saucy SicilianBy Gaetano Cannata of Ortygia Restaurant

Although rice inspired dishes do oc-casionally appear on Southern Italian and Sicilian menus, they are more known for their pasta dishes than they are for their rice dishes. Rice inspired dishes such as risotto or risi e bisi originated from the northern part of the country where rice is cultivated. However, in my opinion there is a rice based culinary creation in Sicily that beats out all the rest; Sicilian rice balls, otherwise known as arancine, an Italian word mean-ing “little oranges” as that is what the finished product resembles. The epitome of Sicilian street food, which has a reputation for some of the best street food in the world, arancine are creamy Parmigiano rice spheres filled with a succulent ragu, dipped in egg whites and toasted bread crumbs and fried to a golden perfection. A combination of textures and flavors that dances on your tongue, the best ones can take you to the most orgasmic places your palate has ever gone and the worst ones can leave you wondering what all the hype is about. I was able to experience both on our latest tour.

Before leaving on our trip, I contact-ed my cousin who lives in Siracusa and Catania to ask him to set me up with the best arancine in Ortygia to enable me to show my group what I was so keyed up about. He ensured me that he had the perfect place to take us.

It was a hot, humid, stuffy day in Ortygia that afternoon. After tak-

ing my group to some of the more interesting places such as, Apollo’s Temple and the majestic Duomo, we attempted, unsuccessfully for 30 minutes to find this arancine café whose name will remain anonymous. At this point in time we were all tired, hot, sticky, and hungry. Finally, we found my cousin and the café. I told my group that it would be worth it. When the arancine arrived I was salivating with eager anticipation. I took the first bite, then the second, then the third. Nothing happened. I looked up at my group and appar-ently they were having the same experience. When I asked one of our group, Pat what she thought she said” they’re o.k.”, which is her way of saying that something is edible and she probably won’t get sick or die from it. She was correct. I bought them all a nice dinner that evening to make up for it. I was thankful that everyone in my group had a good sense of humor.

Later that week April and I took a walk through the city to do a little shopping. As the day wore on we thought we’d stop in somewhere for a snack. We saw this hip little café on a hill on the side street. The name of the restaurant was Punto G. On the menu were 7 types of arancine. With some trepidation I ordered a sampler of traditional and nontraditional types. Again, I took the first bite. My eyes rolled in the back of my head, the same with the second and third bite. Each bite got better and better

and I hadn’t even reached the prize in the center yet. And when I got to the center…jackpot!!!! The arancine were so incredible that could have stood on their own without the filling however, the rich center comprised of ground tender beef in a perfectly seasoned tomato based meat sauce with peas and mozzarella cheese was the embodiment of everything Sicilian. The only difference between theirs and mine is that I like to add freshly ground cinnamon to mine as a reminder of the influences that both the Arab and North African cultures had on Sicily’s cuisine. Un-fortunately, we weren’t able to get the rest of our group back to sample the cuisine at Punto G. However I did promise Pat I would make some for her when we got back to the states. But since I haven’t had the chance yet, here’s the recipe. People often ask me why I only make these at my place once or twice a year. The answer is that to create these incred-ible soft and crunchy treats properly, it takes quite a bit of time and extra time here at Ortygia is a luxury which doesn’t come that often. ARANCINETHE RICE3 tablespoons of unsalted butter1 pound of Arborio riceLarge pinch of saffron in a half cup of warm waterAbout one quart of water, or better yet, chicken or beef stock 1 ½ cups freshly grated parmesan cheeseSalt and pepper3 eggs

THE FILLINGSmall onion dicedTablespoon of olive oil½ pound of ground beef or vealSmall can of Italian tomato paste (or your favorite homemade sauce)Large tablespoon of freshly ground cinnamon ½ cup of frozen or fresh peas (not canned)Salt and pepper to taste

To FinishHomemade Bread crumbs or pankoLightly beaten egg whitesFlourVegetable oil

RECIPEFor the riceMelt the butter in a large saucepan and add the rice. Cook on medium heat and stir until the rice changes color and becomes translucent. Add the water or stock. (You can add it slowly as you would a risotto, but it takes quite a bit of time, but feel free to do so in that way if you know the steps) Add the saffron and its soaking water. Turn down heat to low until rice is cooked al dente, times will vary. When done, immediately drain in a colander and dump on to a clean wooden board or stone slab. Beat the eggs with the cheese and fold it into the rice and continue folding the rice until there is no longer any steam. For the fillingSautee the onion in the oil for about 5 minutes. Add the meat and cook until brown. Drain the oil . Add two tablespoons of tomato paste, the cinnamon, peas, one half cup of water (or 50/50 water and red wine) salt and pepper to taste. Cook for 10 minutes on low flame until mixture thickens slightly. This can be done 2 days in advance and refrigerated. Assembly Grab a handful of rice about the size of a small tangerine. Shape it into a ball, and then make a small hole in the top of it. Spoon in a half teaspoon or more if you’d like of the meat mixture and close the hole with a bit more rice. Roll into a ball and set aside until all are completed. This can be done up to one day in advance. When ready to cook, heat about 3 inches of vegetable oil in a pot. Roll the arancine first in flour, then in egg whites, and lastly in the panko. Drop a piece of bread in the pot of oil, when it floats to the top, the oil will be ready. Drop in the arancine, a few at a time, and turn gently until golden brown. Put on paper towels to drain. Salt lightly and serve on their own or with a side of your favorite tomato sauce. Buon Apetito.
