    Tomatoes 6 Medium Sized ones Cut into medium Sized slices

    Tamarind / Imli

    50 gm Turmeric Powder / Haldi 1 Small Tea Spoon

    Garlic Pieces / Lasun 5-6 cloves Chopped into Small pieces (roughly 1/2 Bulb)

    Sambar Powder 4 5 Table Spoons

    Green Chilli / Hari Mirch 5 6 units 3inch long

    Red Chilli / Laal Mirch 5 6 units 2 inch long

    Coriander / Dhaniya 1 Strip combination Typical 1 AED stuff in UAE

    Curry Leaves / Kadi Patta

    10

    11 Strips

    Typical 1 AED stuff in UAE Mustard Seeds / Rai 2 Table Spoons

    Cumin Seeds / Jeera 2 Table Spoons

    Asafoetida Powder / Heengh Tea Spoon

    Coconut Grate Powder Freshly scrapped & made roughly 50 gm

    Drum Sticks 3-4 sticks

    Refined Sunflower Oil Based on Requirement

    Salt Based on requirement

    Kashmiri Red Chilli Powder Based on Requirement

    For best taste, use either EASTERN Brand stuff wherever available

    Lastly 1 Table Spoon = 3 Tea Spoons, 1 Tea Spoon ~5 gm (Cooking Substances)

    Dal is the most important dish of SAMBAR as it is the basis and rest of them are

    mere flavors. Hence cooking and mashing Dal plays a very important for enjoying

    the whole experience of having Sambar. For best dish @ end,

    Take 500gm of Dal, wash it a couple of times

    Add 2 times of Water for Dal roughly 1 Litre of water

    Add 4-5 table spoons of Sambar Powder

    Add 1 table spoon of Haldi

    Stir it properly and boil on a pressure cooker

    Allow 6-8 whistles for better cooking of Dal and easier Mash process

    Wait for 20-25 minutes for letting out the steam

    Tanginess is one of the characteristic taste of Sambar for which people love it. This

    sour taste can be better imbibed into Sambar by below preparation:

    Clean the 50 gm tamarind taken (Take out Seeds)

    Add the sliced tomatoes to the tamarind

    Add 3 glasses (1 Glass - 250 ml) of water to it

    Grind all of them together till it becomes a thick juice

    Filter the same by taking out the bigger particles and unwanted stuff

    Boil this juice for about 10-12 minutes and leave it aside for mixing when needed

    Drum Sticks take longer time to get boiled / cooked. In order to ensure easier

    mixing of the drum stick flavor into Sambar taste,

    Cut Drum Sticks into pieces of roughly 2 3 inch size

    Boil 2 glasses (1 Glass - 250 ml) of water and then add drum sticks to it

    Boil the same for further 5-7 minutes on high flame

    Leave the same till required in final preparation

    Do not take out this water as the flavor of drum sticks is required to be added

    Sambar is not as thick as normal Dal and hence necessary treatment has to be done

    for the same to ensure proper/equal concentration of Dal. For the same,

    Take the Dal (After Steam out)

    Mash the Dal with the serving spoon properly

    Add the Drum stick juice (along with drum sticks) to the mashed dal

    Now keep the mixture on low flame, heat it

    This mixture gets heated and the same time gets mixed properly Stir once every 3-4 minutes where you make Tadka on the other side

    This will be on a light heated mode till Tadka is done and both are mixed

    For sizzling Tadka, fry the items in

    below order:

    Oil Cumin Seeds

    Mustard Seed

    Heengh

    Garlic pieces

    Green Chilli

    Red Chilli Curry Leaves

    Coriander Leaf

    Coconut grated power

    Please add items one by one with

    an interval of 15 Sec each till

    Garlic, and then add rest of the

    items with an interval of 30 Sec

    each.

    Coconut Grate shall take roughly

    2 minutes to get fried into light

    brown color in the end

    Sour Soup taken earlier is boiled only for some time, for magnification of Tadka and

    sour soup taste mix,

    Pour the Sour Soup into Hot Sizzling Tadka

    Add Red Chilli powder as desired here

    Let it boil for roughly 5 minutes where the flavors get mixed properly

    Lets proceed for mixing the entire stuff now

    We now have 2 components only to mix

    Mash Dal + Drum Stick juice (Mixture A)

    Sizzling Tadka + Sour Soup (Mixture B)

    Pour 5-6 serving spoons of boiling mixture A into boiling mixture B

    Allow Mixture B to boil for couple of minutes again, stir it slowly through out

    Now add the rest of mixture A into mixture B

    We have SAMBAR Solution ready (Not complete yetPatience please )

    Add Salt as desiredStir and Checkthe taste Chak ke dekhiye

    Saltiness is generally less when Sambar is hot/being cooked, hence please

    take care Else it will be very salty after 2-3 hours

    BOIL (Medium Flame) for 10-15 minutes further Stir all along slowly

    Relax and enjoy the taste of this AUTHENTIC SAMBAR with any of below combinations

    Any Pickle combination would be great

    A Little touch of Ghee would just do wonders YUMMY !!!

    Papads are just made & meant to be had with this

    A small touch of curd would also do as a side dish

    JUST ENJOY HHmmm !!!!!
