black tank that some call a “submarine” and others call a “torpedo” due to its shape: hemispherical at each end, tubular down the middle. The shape should be familiar to many old country dwellers: it’s an old LP gas tank trans-formed into a giant grill thanks to a collaboration earlier this year between smith and his welder friend Jason alford, who has a shop in Gadsden.

in use since april, smith’s custom-made grill is 11 feet in circumference, better than 8 feet long and boasts a 6-by-3-foot cooking space inside, not counting shelves good for toasting buns or keeping meat warm.

The bottom of the tank holds plenty of charcoal, and there’s a fire box to hold wood used for smok-ing meat, and various adjustable openings con-trol heat and air flow.

The grill’s main doors aren’t the same metal that forms the rest of the tank — they’re a little thinner.

“if you had the same thickness for the doors, you would have arms like Popeye’s,” smith said.

That meat, by the way, is provided by whoever

hires out smith’s services — but he provides every-thing else, from his own 20-spice meat rub and “Johnny fleeman” brand marinade to the conver-sation he enjoys with his hosts and their guests.
