Science in Personal and Social Perspectives - Content Standard B:

National Standards CorrelationsBenchmarks for Science Literacy(Project 2061 - AAAS)

By the end of the fi fth grade, students should know that:

National Science Education Standards(Content Standards: K-4, National Academy of Sciences, c. 1996)

• Eating a variety of healthful foods and getting enough exercise and rest help people to stay healthy.• Food provides energy and materials for growth and repair of body parts. Vitamins and minerals, present in small amounts in foods, are essential to keep everything working well. As people grow up, the amounts and kinds of food and exercise needed by the body may change.

• Individuals have some responsibility for their own health. Students should engage in personal care - dental hygiene, cleanliness, and exercise - that will maintain and improve health.

• Nutrition is essential to health. Students should understand how the body uses food and how various foods contribute to health. Recommendations for good nutrition include eating a variety of foods, eating less sugar, and eating less fat.

• Defi ne nutrition as a science that studies the interaction of the human body and food.

• State the six major kinds of nutrients including: carbohydrates, proteins, fats, vitamins, minerals, and water.

• Provide a food example of each of the major kinds of nutrients.

• Generally explain how each of the specifi c nutrients are used by the body, and state why the nutrient is important.

• Generally explain what is meant by a “healthy diet”.

• Understand that the Recommended Dietary Allowance is a guideline to help people understand the types and amounts of nutrients they need in their diet.

• Identify and explain the meaning of a food label on a container of food.

• Using the food pyramid, state and describe the fi ve major food groups.

• List a couple of examples of food from each of the food groups.

• Understand that a person’s diet is individualized and depends on their age, gender, and activity level.

• State other important factors involved in staying healthy including eating healthy snacks, eating foods low in saturated fats, and

exercising regularly.

Introducing the Program

Program Viewing SuggestionsThe student master “Video Review” is provided (p. 18) for distribution to students. You may choose to have your students complete this Master while viewing the program or do so upon its conclusion.

The program is approximately 14 minutes in length and includes a fi ve-question video quiz. Answers are not provided to the Video Quiz in the video, but are included in this guide on page 12. You may choose to grade student quizzes as an assessment tool or to review the answers in class.

The video is content-rich with numerous vocabulary words. For this reason you may want to periodically stop the video to review and discuss new terminology and concepts.

Before showing the video program to students, ask them what they had for breakfast this morning. Write their answers on the board. Next, ask them which breakfast choices are healthier than the others. Circle the healthiest choices.

Ask students why they think the circled foods are healthier choices than the ones that are not circled. Introduce the term nutrients. Explain that nutrients are ingredients that make up food. Nutrients contain energy and raw materials the body needs to function. Explain that there are several different types of nutrients that are contained in food. Tell students to pay close attention to the video to learn more about the six different types of nutrients. After the video, ask students why some food choices are healthier than others.

That’s right, they all eat things to obtain energy and other important nutrients. 5. All animals need to eat plants or other living things for energy. 6. As you well know, you can’t go too many hours during the day without eating. 7. What kinds of foods are important to keep us healthy?8. What kinds of things are in different foods?9. How much food should we eat, and how often should we eat?10.During the next few minutes we are going to try to answer these questions and others,11. ...as we explore the topic of nutrition.12.Graphic Transition- What is Nutrition?13.We just said that all living things need to eat.14.As you know, there are hundreds of different kinds of foods we can eat.15.Nutrition is a science that studies the interaction between the body and food.16.A registered dietitian is a person trained to understand how foods effect the body.

Dietitians sometimes also help people plan their food intake.17.Food comes in a wide variety of colors, shapes, textures, and tastes.18.One of the ways of describing food is based on the nutrients it contains.19.Let’s take a few minutes to explore the different types of nutrients found in food.20.Graphic Transition- Nutrients21.A car needs a number of things to work properly, including gasoline, oil, and coolant to

name just a few. 22.You Decide!

What does your body need to keep it running?23.Your body needs nutrients.24.Nutrients are the substances in food that provide the energy and raw materials our

bodies need to stay healthy.25.There are six major kinds of nutrients. These include carbohydrates, proteins, fats,

vitamins, minerals, and water. Let’s briefl y investigate each one.26. If you like to eat fruit, pasta, certain vegetables, or bread, you are familiar with

carbohydrates.27.The body breaks down carbohydrates into simple sugars which are the body’s main

source of energy.28.Dietitians estimate that as much as 55-60% of the foods we eat should be

carbohydrates.29.But it is important to eat the right kind of carbohydrates, called complex carbohydrates.

These are found in fruits, vegetables, and whole grains.30.Simple carbohydrates like those in candy and other sweets are not as healthy, and

should be consumed sparingly. 31.Proteins are another type of nutrient that you have probably heard about.32.Meat, eggs, milk, and certain plant products contain lots of protein.33.Proteins are essential for growth, repair of body cells, and many other body processes.

Page 9: NutritionVitamins also trigger many important chemical reactions. 39.There are a wide range of vitamins. One such example is Vitamin C which is abundant in oranges, strawberries, and

Video Script34.While we often think of fats as being a bad thing, fats are essential for our health.35.Fats, such as those found in dairy products and meats serve as a source of energy, and

are important for growth and cell development.36.Too much fat however may result in fat being stored in the body as extra weight.37.Fatty foods, such as potato chips and fried foods, may also contain substances that are

bad for the heart and blood vessels. 38.Vitamins are nutrients the body needs in small amounts to function properly. Vitamins also

trigger many important chemical reactions.39.There are a wide range of vitamins. One such example is Vitamin C which is abundant in

oranges, strawberries, and tomatoes.40.The human body also needs another type of nutrient - minerals.41.We need many different kinds of minerals such as calcium, magnesium, and iron to name

just a few.42.The body needs minerals to build strong bones, to regulate heartbeat, to produce red blood

cells, and to carry out chemical reactions.43.The last essential nutrient we all need is something you may take for granted- water.44.Water is often considered the most important nutrient.45.You should drink 8 glasses of water everyday to provide your body with the liquid it needs.46.Good health comes partly from consuming each of the nutrients we just discussed.47.Let’s now take a look at how much of these nutrients you need.48.Graphic Transition- A Balanced Diet49.The word diet generally refers to the food and drink we regularly consume.50. If you think about the things you eat and drink each day, you get an idea of what your diet

is.51.Everyone has a diet, but some diets are healthier than others.52.You Observe!

What’s the problem with a diet consisting of these foods?53.This diet has too many sweets and fatty foods. It doesn’t include other nutrients the body

needs.54.A well balanced diet involves eating a wide variety of foods from each of the major food

groups.55.So how much food, and what kinds of nutrients should you eat on a daily basis? This is not

an easy thing to fi gure out.56.To help, scientists developed the Recommended Dietary Allowance, or RDA for short.57.These are guidelines that help explain how much of the different nutrients we should

consume. 58.Perhaps you’ve noticed a Food Label on the package of spaghetti noodles or on the side of

a soup can.59.The food label states a lot of information. One of the things it states is the Recommended

Dietary Allowance the food contains. It lists the major nutrients the food contains as well as other things such as the amount of sodium and different vitamins.

60. It is possible to see if you have consumed the right amount of nutrients by looking at the RDA numbers on food labels, but this takes a lot of time.

Page 10: NutritionVitamins also trigger many important chemical reactions. 39.There are a wide range of vitamins. One such example is Vitamin C which is abundant in oranges, strawberries, and

Video Script61.An easier way to help achieve a balanced diet is to eat a variety of foods from each of

the food groups. 62.This diagram is of the food pyramid, each color represents a different food group.63.Food groups are based on foods that contain the same types of nutrients. For

example, the grains food group contains carbohydrates as well as several vitamins. This group includes whole grain breads, pasta, cereal, and rice.

64.The food pyramid is most valuable when it is individually tailored to a person’s dietary needs based on their age, gender, and activity level.

65.For example it is recommended that a healthy10 year old female, who exercises at least 30 minutes a day, should eat 6 ounces from the grains group everyday.

66.During a course of a day this female might consume a cup of whole grain cereal, a piece of whole wheat bread, half of a bagel, and 1⁄2 a cup of cooked brown rice.

67. It is recommended that she eat at least 11⁄2 cups of fruit each day from the fruit group.68.And she should eat 21⁄2 cups of vegetables which might consist of 1 cup of carrots, 1

medium potato, and half a cup of asparagus. 69. “Strive for Five” is an expression that means that teenagers and adults should try to

eat a total of 5 fruits and vegetables daily.70.Another food group includes milk, cheese, and yogurt. These foods contain protein,

carbohydrates, and some fat.71.The last major food group contains meat, poultry, fi sh, dry beans, eggs, and nuts.72. It is recommended that a 10 year old female eat 5 ounces from this group.73.These foods tend to be high in protein. However some foods in this group, such as

fatty meats, egg yolks, as well as some nuts, are high in fat and should be eaten sparingly.

74.Graphic Transition- Staying Healthy75.You’ve probably heard the expression, “You are what you eat.”76.While this expression isn’t literally true, your health and the way you feel is certainly

related to what you eat.77.You Compare!

What snack foods are a healthier choice- chips, soda, and a candy bar; or an apple, nuts, and raisins?

78.That’s right, apples, nuts, and raisins are healthier snack foods.79.Foods such as potato chips, soda and candy are often referred to as junk food

because they are low in nutrients. 80.Try to avoid junk food. Instead eat a wide variety of healthy nutrients.81.Many dietitians today also promote a diet that is low in fats, specifi cally saturated fats

such as those in fatty meats and fried foods. 82.They also encourage a diet that is high in fi ber. Fiber is the fi brous material in plants

that aid in digestion.83.Foods high in fi ber include the skin of fruits, whole grains, and raw vegetables such as

carrots. 84.There are several other things that contribute to your health including regular exercise.85. If you are healthy, you should exercise 4 to 5 times a week for at least 30 minutes a

day.

Nutrition is a science that studies the interaction between the body and food. The substances in food, called nutrients, provide the body with energy and raw materials. There are six major types of six major types of sixnutrients. Carbohydrates, for example, are abundant in breads, fruits, and pasta. One way to categorize foods is into fi ve groupsbased on the types of nutrients they contain. A well balanced diet involves eating a wide balanced diet involves eating a wide balancedvariety of foods from each of the major food groups. The food pyramid illustrates the pyramid illustrates the pyramidimportance of eating foods from the fi ve major food groups. A person’s diet needs to be individually tailored to their age, gender, individually tailored to their age, gender, individuallyand activity level.

1. The substances in food are called nutrients. It is important for all living things to eat food in order to get energy and raw materials from nutrients.2. A balanced diet is a diet that contains many nutrients. To eat a balanced diet you should eat a wide variety of foods from different food groups. 3. The food pyramid illustrates the importance of eating foods from the fi ve main food groups.

1. Potato Chips are Label 1, Yogurt is Label 22. The yogurt label has a larger serving size of 6 oz. This shows us that junk foods such as potato chips should be eaten in very small amounts.3. For a lower calorie snack, you should choose the yogurt (label 2). This is the food with the larger serving size.4. Looking only at the saturated fats and trans fats, there is no difference between the labels. However, the yogurt has a lot less total fat.5. Based on the vitamins and minerals, the yogurt (label 2) has the greatest nutritional value.6. It would be best to choose yogurt as an afterschool snack because you could eat enough to no longer be hungry, and it is healthier. It contains less fat and sodium, but has more vitamins.

Daily Food LogBackground: This morning when you got up, you may have eaten a bowl of cereal. Later, you probably had a snack such as a piece of fruit or some pretzels. For lunch you might have eaten a sandwich. Every day we make many choices about the foods we eat. It’s important that those are good, healthy choices.

grain group includes bread, pasta, rice, and other foods such as popcorn. When choosing grains, it’s important to choose whole grains. When choosing from the vegetable group, you should select dark green and orange vegetables like broccoli and carrots. It’s easy to get all the fruits you need from the fruit group. Just be sure to choose fresh, dried, or canned fruit instead of fruit juices, which often contain a lot of sugar. The milk group is your main source of calcium. Besides drinking milk, you can also eat yogurt, cheese, or any other dairy products. Getting enough calcium is essential to having strong bones. When you choose foods to eat from the meat and beans group, they should be lowfat. You can also eat nuts, which are high in protein. The Food Pyramid is not the same for every person. It should be individualized based on each person’s age, gender, and activity level.

At the right you can see the USDA Food Pyramid, a useful guide helping you to make good food choices. Each section of the pyramid represents a different food group. The

An active 13-year old girl studied the food pyramid and decided to record what she ate for a day. Her selection from the grain group included a cup of cooked oatmeal, two slices of whole wheat bread, and a 1 cup of cooked brown rice. She chose to eat 2 medium carrots, 1 cup of broccoli, and one medium sweet potato from the vegetable group. The choices from the fruit group included large strawberries, and an 8 ounce glass of orange juice. She selected a 8 ounce carton of yogurt, 2 slices of chedder cheese, and an 8 ounce glass of skim milk from the milk group. From the meats and beans group she ate 1 small chicken breast and 1 cup of bean soup. By recording her diet for a day, she could see that she was making very good decisions about what she was eating. Her diet was full of fruits and vegetables, lowfat dairy products, and whole grains.

Directions: In this activity, you will use your Daily Food Log Worksheet to record everything you eat for a day. Beginning in the morning, use each table on the worksheet to record the type, amount, and food group of each food that you eat throughout the day. At the end of the day, answer the questions below on the back of your worksheet.

Questions:1. How many cups of fruits and vegetables did you eat throughout the day?2. Were any of the grains that you ate whole grains?3. What did you eat from the milk group?4. Overall, do you feel that you have a healthy diet? What should you change about your diet?
