Wewalkoverit,liedownonit,mowitonceaweekduringthesummer,andknocklittlewhiteballsintoholescutinit,butthethoughtofeatinggrassseemsabsurd.UnlessyouhappentobethewinneroftheKentuckyDerby,orAuntNellie’sprizeheifer,youprobablyhaveneverentertainedthethoughtofchewingonabunchofgrass.Andifyouhaven’tvisitedtheHippocratesHealthInstitute,chancesarethatyouhavenottriedwheatgrassjuice.

InthisbookIhopetopersuadeyoutoconsiderusingwheatgrassanditsjuiceasfood,medicine,andanoveralltonicforvariousailments.Whetheryousufferfromchronicfatigue,sinusitis,ulcers,oramoreseriousillnesslikecancer,wheatgrasschlorophyllextractedfromseven-day-oldwheatsproutsmayhelpyouevenwhereothermedicineshavefailed.Ofcourse,nothingcanreplaceasounddiet,exercise,andapositiveattitudeinkeepingyouintopshape.Butwheatgrasscangiveyouenergyandstrengthtohelpyougainbettercontrolofyourhealth.

Chlorophyll,thegreenjuiceofgrasses,hasbeenvaluedsincebiblicaltimes.Grasshasbeenusedasafolkmedicineremedybymanypeoplearoundtheworld.DuringtheFirstWorldWar,Ibegantolearnaboutitsremarkablehealingproperties.MygrandmotherusedgrassestohealwoundedsoldiersintheEuropeanvillagewhereIwasborn.IcametoAmericatolivewithmyparentswhileIwasstillachild.Itwasn’tuntilaboutthirtyyearslater,duringtheearly1950s,thatthememoriesofmygrandmother’suseofgrassesandotherplantsresurfacedasaresultofpersonalhealthproblems.

Ibeganmyownexperimentationwithwheatgrassandothergrassesonanimals.Wheatgrassprovedtobethefastestandeasiestvarietyofgrasstogrow.Thewheatberriesusedtogrowitwere(andstillare)inexpensiveandeasilyobtained.Moreover,wheatgrassturnedouttobefavoredbymypets.Itworkedmiraclesfortheirwell-being(IwillshowyouhowyoucanuseittohelpyourpetslivelongerandinbetterhealthinChapter8),yetIstilldoubteditsusefulnessforhumanhealth.SoIexpandedmystudyofgrasses,focusingonwheatgrassinparticular.

IcontactedmyfriendandassociateDr.G.H.EarpThomasforhisexpertopinionofthepotentialusefulnessofwheatgrassforhumanhealth.Asoilandplantscientist,Dr.Thomashadpriorknowledgeofgrassesandchlorophyll.Yet

afterafewweeksofchemicalanalysisandlibraryresearch,hewasquitesurprisedtofindthatwheatgrasscontainedmanyvitalnutrientswhichhefeltcouldserveasregenerativeandprotectivefactorsinhumanhealth.Accordingtohisfindings,freshwheatgrassjuicewastheoreticallycapableofsustaininghumanhealthandlifeforweeksorevenmonthsatatime.Dr.ThomasalsocameacrosssomeresearchpaperswrittenbyDr.CharlesSchnabel,whoadvocatedtheuseofyoungwheatandothergrassesinanimalandhumannutrition.Schnabelestimatedthatfifteenpoundsofwheatgrasswasequalinproteinandoverallnutritionalvaluetothreehundredandfiftypoundsofordinarygardenvegetables.IwillspeakmoreaboutthenutritionalcontentofwheatgrassinChapter5.

Therealprovinggroundwasmyownbody,whichwassicklyandweakaftertwentyyearsoflivingandeatingasanaverageAmerican.AfewweeksafterIstartedchewingandjuicingyoungbladesoffreshwheatgrass,andeatingfreshsproutsandgreens,afesteringcaseofcolitisthatIhadsufferedwithformonthsbegantoimprove.Theproblem,whichisparticularlydifficulttoremedywithconventionalmedicaltreatments,eventuallyclearedupentirely.

MyenergylevelsoaredandIfeltwellagain.Iknewthatwheatgrasswasapowerfulinvigoratorofthebody.ToprovetomyselfthatitwouldalsohelpothersgetwellIbegandeliveringfreshwheatgrassjuicetoanumberofbedriddenillandelderlypeopleinmyneighborhood.Iwasamazedattheresults.Inamatterofweeks,allofthemwereabletogetoutofbed,andtheybecamemoreactivethantheyhadbeeninyears.

I’msurethatmuchofthedegenerationandillnesswesufferfromtodayisbroughtonbythelackofvitalityandlifeinthefoodweeat.MostfoodthatAmericanseatisovercookedandhalf-dead(forexample,100percentoftheenzymesinfoodaredestroyedbycooking).Beveragesareloadedwithsugar,alcoholorstimulantsthatcreateanillusionofenergywhichfadesquicklyasthedaywearson.Incontrast,thenutrientsinwheatgrassandrawfoodssuchassprouts,freshvegetables,fruits,nuts,seeds,andHippocratesDietpreparationsmadefromthem,arenotdestroyedbycookingorprocessing.Theselivingfoodscanrestorevigorandenergytoanailing,tiredbody.

Foryears,attheHippocratesHealthInstituteinBoston,wehavebeenwitnessingatransformationinourguests—theyarrivewornoutandrundown,andreturnhomevitalizedandfullofpep.

HippocrateslivefoodDietanddrinkingwheatgrassjuice,thebloodisdetoxifiedandtheimmunesystemisstrengthened.Bothofthesechangesleadtomoreenergyandanimprovedabilitytocombatandreverseillness.

Wheatgrassisnotonlyhealthful,it’seasytogrowandeasytouse.Withahandfulofwheatberries,somewater,atrayfilledwithaninchoftopsoil,andacover,youcangrowyourownwheatgrassinjustsevendays—atacostofabouttencentsatray.Ifyoucan’tgrowthegrassyourself,youcanprobablybuyitlocallyfromsomeonewhodoes,becausetherearewheatgrassandsproutgrowersinalmosteverymajorcityintheU.S.andabroad.

Atrayofwheatgrassyieldsaboutseventotwelveouncesofjuice(dependinguponthesizeofthetray).Onceyougetsomejuice(aboutonetofourouncesatatimewilldo)allyouhavetodotogetitshealthbenefitsisdrinkit.Somepeopleenjoythetaste,butevenifyoudislikeitatfirst,youwilllovethewayyoufeelwithinafewminutes—andforhourslater.

Inadditiontodrinkingwheatgrassjuice,therearedozensofotherwaysyoucanbenefitfromit.Forexample,wheatgrassjuicecanbeusedasascalptreatmentforlusterlesshair,orasacleanser,astringent,andtightenerforalltypesofskin.Severaldropsineachnostrilwillhelptoclearblockedsinuses,andafewouncesinyourbathwaterorrubbedintoyourskinwillstimulatehealthycirculationandgiveyouawarmglow.Butthat’snotall.Truetomychildhoodmemoriesofwoundedsoldiersbecomingwellthroughtheuseofgrasses,wheatgrasshelpshealcutsandbruisesfaster,anddrawspoisonsoutfromdeepinsidethebodysotheycanbeeliminated.

unfittobreathe,ourwatertooacidandpollutedtodrink,andthousandsofacresofourtopsoilareerodedeachyear.Manycitieswhichwereoncethelifebloodofcultureandtheartsareslowlybecominghugeconcreteandelectronicwastelandswherepeoplespendtheirdaysbeforehurryinghometothesuburbsatnight.Buteveninthesuburbs,industrialpollution,autoexhaust,andtoxicchemicalshavetakentheirtoll.Itseemsthatunlessweexperienceamajorenvironmentally-basedtechnologicalrevolution,pollutionanditsattendanthealthriskswillbeheretostay.

Fortunately,thereisasensiblewaytocombatthe“cityblues.”Wecanprotectourselvesfromenvironmentalhazardsbystrengtheningourinternaldefenses.Ifoureliminatoryprocessesworkmoreefficiently,toxinsthatdoenterthelungsandbloodwon’tstayaslong.Poisonsthatdolingercanbemoreeasilyneutralizedbyahealthierliver.Withfewerheavyfoodsinthediet,wecanincreasetheamountofoxygeninthebloodandeasetheburdenonthecirculatorysystem.Thenpollutionwillaffectuslessseverelythanitwillstrikepeoplewhoremainheedlessoftheirhealth.Thereisevenevidence(whichIwilldiscussinmoredetaillater)thatwheatgrasscanprotectusfrombothlow-andhigh-levelradiation.

Inthisageofmassinformationandtelecommunication,fewthingshavebeenkeptasecretforaslongaswheatgrassjuice.Thingsarechanging,however.Thepastfewyearshaveseenthefirstsignificantresearchonchlorophyllandwheatgrasssincethe1940s,andallofthereportsIhavestudiedconfirmthatwheatgrassisatop-notchcleanser,builder,healer,protector,andrejuvenatorofhealth.Fewfoodsormedicinescontainasmanyactiveliveingredientsaswheatgrass.Wecannotdenythefactthatwithoutwheatgrassandtheothergrassesthatcovertheearth,thehumanracecouldneverhavesurvived.Norcanweturnourbacksontheamazingpotentialofwheatgrassasasuperfoodandmedicinethatiscompletelysafeinanyamount,andavailabletoeverybodyforjustpenniesaday.

Maybeyoutakethespringtime,withitsmyriadofgreenandthephysicalandmentalreliefitgivesyou,forgranted.Orperhapsyouaretoobusychasingafterpapertonoticethegreentreesandgrassesthatgrowinyourbackyard.Butchancesare,somewheredeepinyourmindyourememberthatplantlifeonearthisresponsibleforyourexistencehere.Withoutthemiracleofphotosynthesis,therewouldbelittlewarmth,airforustobreathe,orfoodtoeat.Ihavecometotheconclusionthatthefurtherfromourconsciousmindsthismemoryis,thecloserwecometofailingasacivilization.

InthischapterIwilldiscusstheimportanceofgreenplantsinourecosystemandhowchlorophyll,the“blood”ofaplant,isrelatedtohumanblood.Thenatureofchlorophyllitself,andtherelationshipbetweenmodernagricultureandnutritionaldeficiencies,willalsobediscussed.

Whenwestopappreciatingthegreenlife—thetrees,grasses,andplantsthatwecallnature—wetendtoabusethem,toourdetriment.Wheregreenlifehasbeeneffectivelyextinguished,ininner-cityghettosandprisons,mentalillnessandviolencearecommonplace.

TheresidentsofLosAngeleshaveknownoftheimportanceofgreenplantsandtreesforyears.“TreePeople,”aLosAngeles-basedconservationistgroup,estimatesthatifitwerenotforthemillionsoftreesandgreenplants,manycitieswouldbeuninhabitableduetopollution.TheTreePeoplehavebeencommissionedbythestateofCaliforniatoplantonemillion“smogresistant”trees,asmanyoftheexistingtreesaredyingduetopollution.

InJapan,researchershaveconcludedthattheamountofoxygenrequiredtosupportthepeopleandindustryinthatcountryfarexceedstheamountsuppliedbygreenplantsthere.IfitwerenotforthesteadysupplyofoxygengeneratedbytheAmazonjungleofSouthAmerica,anddistributedbywindcurrents,countrieslikeJapancouldsufferfromashortageofoxygen.Thejunglesofthe

PLANTBLOOD

Youcouldsaythatgreenplantsaretotheearthasthelungsaretohumansandanimals,excepttheyworkinreverse.Thatis,plants“inhale”carbondioxideand“exhale”oxygen,whereashumansandanimalsexhalecarbondioxideandinhaleoxygen—aperfectsymbioticrelationship.

Yearsago,Dr.HansFischerandagroupofassociateswonaNobelprizefortheirworkonredbloodcells.Duringtheirresearch,thescientistsnoticedthathumanblood,whichcarriesoxygentoallourcells,ispracticallyidenticaltochlorophyllonthemolecularlevel.Inthehumanbody,redbloodcellsarecharacterizedbytheoxygen-carrier,hemoglobin,whichhasasitscentralnucleusthemineralelementiron.Mostgreenplants,ontheotherhand,arecharacterizedbychlorophyll,whichhasmagnesiumasitsnucleus.Acarefulexaminationofthetwomoleculesshowsthemtobestrikinglysimilar(seeillustration).

In1930,Dr.AZinshowedthataninjectionofchlorophyllincreasedtheredbloodcellcountofanimalswithnormalhemoglobincounts.ScientistsJ.H.HughsandA.L.LatneroftheUniversityofLiverpoolwentonestepfurther.Intheirstudy,reportedintheJournalofPhysiologyin1936,anumberofanimalsweremadeanemicbydailybleeding.Aftertheirhemoglobinlevelswerereducedtolessthanhalfthenorm,theanimalsweredividedintotengroups.Fiveofthegroupswerefedvarioustypesofchlorophyllintheirdiet.Thefivegroupsofcontrolanimalsdidnotreceiveanychlorophyll.Thoseanimalsreceiving“crude”orraw,unrefinedchlorophyllwereabletoincreasethespeedofhemoglobinregenerationbymorethan50percentaboveaverage,toapproximatetheirpreviousbloodvaluesinabouttwoweeks.However,thegroupreceivingsyntheticchlorophyllshowednoimprovementinthespeedofhemoglobinregeneration.Intheirreport,thescientistsconcluded:“Itseems,therefore,thattheanimalbodyiscapableofconvertingchlorophylltohemoglobin.”Raw,unrefinedchlorophyllseemedtobethebestforthispurpose.

Chlorophyllwasformerlyusedbysomephysicianstotreatanemia.Butevenifyou’renotanemic,anincreaseofredbloodcellscouldmeanbettercirculationandoxygenationtothecells,andrapidbodycleansing.Myempiricalevidencehasshownthistobethecase.Andsinceoxygenisquicklyusedupinthemanybodyfunctionsitisresponsiblefor(thebrainaloneusesabout25percentoftheavailableoxygeninthebody),theinfusionofitintothebloodviawheatgrassjuice,amongotherthings,stimulatesanimprovementintheimmunesystem—ournaturalmeansofpreventingandhealingillness.Inotherwords,thebloodbecomesricherandthebodyhealthierbyitsuse.

CHLOROPHYLL

Youmaybewonderingexactlywhatchlorophyllis.Verysimply,itisagreen(sometimespurple)pigmentfoundingrowingplants.Itcontainsmineralandproteinouscompounds.AsImentionedearlier,itisthebloodoftheplant.But,likeDr.Bircher,founderofthefamousBircher-BennerclinicinSwitzerland,Ithinkaboutchlorophyllinanotherway—ascondensedsolarenergy.

Dr.Bircherwasoutspokenonthetherapeuticvalueofgreenjuicesextractedfromgreenleafyvegetablesandgrasses:“Chlorophyll,”hesaid,“increasesthefunctionoftheheart,affectsthevascularsystem,theintestines,theuterusandthelungs.It...[chlorophyll]isthereforeatonicwhich,consideringitsstimulatingproperties,cannotbecomparedwithanyother.”

Theverysamepowerthatenablestherootsoftreesandclumpsofgrasstopushtheirwaythroughcementsidewalksinamatterofdaysisavailabletoourbodies,now,intheformofwheatgrassandothergreenjuices.Thelackofthisvitalforceisresponsibleforourillstoday.Nomatterhowwemayneglectgreenplantsinourdietandourlives,wewillnevereraseourneedforthemfromourinstinctivememories—andourphysiologicalsystems.

THENEWGREENREVOLUTION

Manypeoplearelookingtothescienceofthefutureforanswerstotheirproblems,butasfundingforbasicresearchisdwindling,andmoreandmoreresearchbecomesorientedtowardsindustry,canwereallytrustsciencetoguideusinourlifefromdaytoday?Nodoubtweoweagreatdealtothescientificachievementsofthepasthundredyears,butasourenvironmentbecomesincreasinglypollutedandthedeathrateduetocancercontinuestoclimb,theonlyhopewehaveistomakeourbodiesstrongerandhealthier.Noamountoflibraryresearchormedicinewillgiveyouastronger,healthierbody.Onlyagooddietwithplentyofrawgreenfoodsandwheatgrass,moderateexercise,andapositiveandcaringattitudewilldothis.

Thankstothemuch-praised“greenrevolution,”wehaveinrecentdecadesseengreateryieldsofalargervarietyofplants.Whilethisgreenrevolutioniswell-intentioned,theagriculturaltechniquesthatwecall“revolutionary”and“improved”involvemuchshort-sightedthinking,andbringlimitedpositiveresultsintermsofhumanhealth.Muchoftheincreasedcropyieldsaresquanderedonanimalsproducedforslaughter,andtheeffectmodernindustrializedagriculturehasonourtopsoilisdevastating.Moreover,chemicalfertilizers,pesticides,andherbicideshavedetrimentaleffectsonourbodies.

ThenewgreenrevolutionwhichIhavebeenadvocatingforyearsisamorepersonalone.Itisallaboutbringinggreenplants,grasses,andfoodsintoyourhomeandlife.Weeatsofewgreenvegetables,fruits,andrawfoodsthatitisastonishingthatwecontinuetosurvive.Mostofourfoodisprocessedwithchemicals.In1977,theUnitedStateshadthedubiousdistinctionofbecoming

chemicals.In1977,theUnitedStateshadthedubiousdistinctionofbecomingthefirstnationinhistorywhosepeopleconsumedmorethan50percentoftheirdietasprocesseditems.Thisexperimentwithprocessedfoodsisdangerous;ithascreatedepidemicproportionsofdegenerativediseases,manyofwhicharelabeled“incurable.”Inlightofthisfact,howcanwebesoarrogantastobelievethatwecanimproveonnature?Clearlywhatweneedtodayisanewgreenrevolution.Onethatisconcernednotonlywithreplenishingnature’streesandgreenplants,butalsowithcleaningoutthe“nationalbloodstream,”usingfreshgreenfoodsandwheatgrassjuicetodoso.

MODERNTOPSOILANDMINERALS

Thesoilwegrowourfoodonshouldbeaveryrealandseriousconcerntous.Notonlyisourtopsoilerodingbythethousandsofacreseachyear,butitislosingitsvitality,justaswearelosingours.Whenthemineralcontentofthesoilispoor,ityieldscropsthataredeficientinnutrients.Withoutvitalsoiltogrowfoodon,farmershavecometodependincreasinglyonvariousfertilizersandchemicalspraystokeeptheirweaklingplantsalive.

Thecolorandtasteoffreshfoodsreflectsthemineralvalueofthesoilsusedtogrowthem.Wouldyoueverdarecomparetomatoes,corn,cucumbers,oranyothervegetablesshippedintoyourareaoutofseasononanequalbasiswithlocallygrownfoods?Evenagourmandknowsthedifferencebetweenavine-ripenedlocalgardentomatoandtheonesavailableinthemarketsduringthewinter.Thenaturalredofbeets,orangeofwintersquash,andgreenofkaleorgrassbecomesricheranddeeperwhenthesoilisinherentlybalancedandvital.Unfortunately,inmanycases,fruitsandvegetablesareartificiallycolored.Theseitemsusuallyhavelittletasteandaroma.

Chemicallytreatedfruitsandvegetableswhicharedeficientinflavor,aroma,andcolorcanbelikenedtoanobesepersonwhohasgainedweightonexcessfatandcarbohydrates—bloatedwithwater,yetcontaininglessmineralsandvitaminsthannormal,healthy-sizedindividuals.

Numerousexperimentsonanimalandhumansubjectshaveshownchlorophylltobeeffectiveintreatinganemia(alowserumironcount).Asmanyas30percentofallwomenbeyondtheageofpubertyintheUnitedStatesmaybeanemic.Formentherateofanemiabeginstoincreaseattheageoffifty.Themajorsymptomsofanemiaarefatigueandlossofappetite.

Threecompoundsfoundabundantlyinwheatgrasshelptheliverstayvitalandhealthy.Cholineworkstopreventthedepositionoffat,magnesiumhelpsdrawoutexcessfatinthesamewaymagnesiumsulfate(epsomsalts)willdrawpusfromaninfection,andpotassiumactsasaninvigoratorandstimulant.

Dr.WattenburgoftheUniversityofMinnesotaSchoolofMedicinefoundthatwhenratswerefedadietcontainingalltheknownvitaminsandnutrients,buthighlypurified(ourmoderndietis50–75percentpurified),theywereunabletomanufacturecertainenzymeswhichdeactivatecarcinogensintheliver.However,whenthesameratswerefedaportionofgreens,theywereabletoproducetheenzyme.Thecompoundinthegreensthatmadethispossibleiscalledanindole,andisfoundinwheatgrass.

AnotherinterestingfindingontheabilityofgrassestoinvigoratetheliverwasreportedbyDr.CharlesSchnabelinanarticlecalled“Grass:theForgivenessofNature,”publishedinAcresUSA,inJanuary,1980.Writingonthenutritionalandhealthbenefitsofyounggrasses,includingwheatgrass,onbothhumansandanimals,Dr.SchnabelcomparedtheoverallhealthofaflockofLeghornhensreceiving5percentfreshyounggrassintheirdiettothatofanotherflockofLeghornsbeingfedidenticalrations,withtheexceptionofreceivingalfalfainsteadofgrass.Thegrass-fedhenswerefarhealthierthantheothers,asindicatedbytheirricher,darkerbloodandlivers(thegrass-fedhenshaddarkmahogany-coloredlivers,whilethealfalfa-fedhen’sliverswerelighttanincolor).

Unfortunately,notenoughresearchhasbeenperformedonhumanlivers,butthereisgoodreasontobelievethattheadditionofgrasstothedietstimulatesliverfunctionandenrichestheredbloodcellcount.ThetestsmadebyDr.ThelmaArthur,mentionedinthePreface,alsoindicatethebloodcleansingeffectofwheatgrassinhumans.AttheHippocratesInstitute,guestsareinstructedtousewheatgrassimplants,whichinvolveputtingseveralouncesoffreshwheatgrassjuiceintothelowerbowelandretainingitforabouttwentyminutes.Aportionofthejuiceisabsorbeddirectlyintotheportalcirculation,whichleadstotheliver.Thismethodallowstheindividualtogetmorechlorophylldirectlytotheliverthanheorshecouldcomfortablydrinkatonce.Wewilldiscusstheusesandbenefitsofwheatgrassimplantsinmoredetaillater.

Oneobviouswayoftestingtheeffectofwheatgrassonbodytoxinsistheabsenceoffoulbodyodorsreportedbyusers.InastudybyR.W.YoungandJ.S.Beregi,reportedintheJournaloftheAmericanGeriatricSocietyin1980,sixty-twonursinghomepatientsweregivenchlorophyllintabletform.Althoughtabletsarelesspotentthanjuice,theywereneverthelessfoundtobehelpfulincontrollingbodyandfecalodors.Thechlorophyllalsoeasedtheseverityofchronicconstipationandreducedthepresenceofgas.

In1950,Dr.HowardWestcottfoundthatonehundredmilligramsofchlorophyllareasgoodadeodorantasanyother.Whereasmostdeodorantsmerelycoverupabadodor,hediscoveredthatchlorophyllextractssuccessfullyneutralizedoffensiveodorsinfoods,alcohol,andtobaccoinvitro(inatesttube).Moreover,inpatientsandvolunteers,iteffectivelyneutralizedbadbreath,bodyodorfromperspiration,menstrualodors,andfoul-smellingurineandstools.

IntheirbookMedicineOfChlorophyll,Drs.KeiichiMorishitaandKaneoHotta,Japanesescientistswhohavestudiedthepropertiesofchlorophyllforyears,reportthattheywereabletoobserveitsremarkabledeodorantproperties.Inonetest,tenvolunteersweregivengarlictoeat,followedbythreetotwelvegramsofchlorophyll.Intwentyminutes,theodorofgarlicwasnotpresentineightofthevolunteers.Thesamephenomenonoccurredafterexperimentalsubjectsdrankalcoholandsmokedcigarettes.Bodyodor,beingasecretionfrominsidethebodythatbeginstosmelloffensiveafteritreactswithbacteriaontheskin,isalittlemoredifficulttocorrect.However,inamatterofweeksthesecretionsthatcausetheodorcanbeneutralized.

Scientistshaveknownaboutthedeodorizingpropertiesofchlorophyllforsometime.Itisforthisreasonsomedrugs,chewinggum,breathfresheners,vaginaldouches,andantisepticscontainchlorophyll.

Let’sbeclear:syntheticvitamin-mineralsupplementscanhaveadruglikeeffect,creatingsymptomsfromconstipationandheadachestokidneyandliverdamage.Furthermore,theyhavealimitedeffectcomparedtotheirnaturalcounterpartsfoundinfreshfoods.SyntheticVitaminE,forexample,islessthanone-tenthaseffectiveasnaturalE.Lessofthesyntheticvitaminsandmineralsgetabsorbedthantheformsfoundnaturallyinfoods.Allvitaminsandmineralsfoundinnaturecome“packaged”withothernutrientstoensuretheiroptimalabsorptionanduse.Thisisthewaywehavebeengettingourvitaminsformillionsofyears—anditisstillthesafestandbestwaytodoso.

Itisinterestingtonotethatwhentheseenzymesdeclineinquantityandstrength—whichhappensaswegetolder—thebody’sabilitytohandleheavyfats,proteins,andexcesscaloriesweakens.Thiscouldberesponsiblefortheproblemsofoverweightandprematureaging,whichplaguesomanyAmericanstoday.Itisalsointerestingtonotethatthreeoftheseenzymes—cytochromeoxidase,peroxidase,andcatalase—arefoundinrelativelyhighconcentrationsinnormalredandwhitebloodcells.Inthebodyofacancerpatient,however,theirnumbersareusuallydecreasedsignificantly.

Workingindependently,Dr.BarryHalliwell,abiochemistattheUniversityofLondon,Dr.M.Rister,attheUniversityofCologneinGermany,andDr.IrwinFridovich,abiochemistatDukeUniversity,havefoundSODinallbodycells.Theyhaveinvestigatedtherolethatthisenzymeplaysinslowingcellularaging.Remarkably,SODlessenstheeffectsofradiation,actsasananti-inflammatorycompound,andmaypreventcellulardamagefollowingheartattacksorexposuretoirritants.WheatgrassisasuperiorfoodsourceofSOD.

SODoccursnaturallyineachcellasabalancingagentthatneutralizesthetoxiceffectsofsuperoxides,whichalsoresideincells.Superoxidesaresubstancesproducedbyeverycellinthenormalmetabolicprocesses.However,whenthequantityofsuperoxidesinthecellsincreaseswithoutacorrespondingincreaseinSODproduction,theycandamagecellsandstimulateaging.

ArecentbookbyDurkPearsonandSandyShaw,entitledLifeExtension,hasbroughtmuchattentiontofreeradicals.Theauthorspointoutthedamagefreeradicalscancause,andsuggestwaystoeliminatethemasameanstoalongerandhealthierlife.Unfortunately,theiradvicecouldbeharmful,sincethedrugsandsupplementstheyrecommendhavenotbeenthoroughlytestedforlong-termeffects.Theirpremiseisthatcertainchemicalscalledantioxidants,containedinfoodadditiveslikeBHTandBHA,canneutralizeandreversetheaccumulationoffreeradicalsinthebody,improvinghealthandextendinglongevity.

However,accordingtoDr.JeffreyBland,abiochemistattheUniversityofPugetSoundinWashington,preliminaryresultsofstudiesonthelong-termuseofBHTandBHAasanti-agingsupplementsindicatethatthesefoodadditivestendtoinhibittheproduction,intheliver,ofcertainenzymesthatarenecessaryforhealthandlonglife.

Nexttowater,proteinisthemostplentifulnutrientinthebody.Morethan50percentofthedryweightofthebodyisprotein.Proteins,inturn,arecomposedofsmallerproteinous“chains”calledaminoacids.Aminoacidscanbecomparedwiththerawmaterialsusedinbuildingahouse,whereasenzymesdotheactualbuilding.Together,enzymesandaminoacidsareresponsibleforcellrenewalandahugearrayofdiversefunctionsfromthecreationofhormonestobuildingofmuscles,blood,andorgans.

Thereareeightaminoacids,called“essential”aminoacids,whichthebodycansynthesizeonlyfromtheproteinsweeat.Iftheseaminoacidsarenotpresentinourfood,ourbodiesareunabletorejuvenateourcellsproperlyanddeficiencysymptomsarise.Inadditiontotheseeight,thereareadozenotheraminoacidswhicharereallyjustasessential—butcanbeformedbythebodyinternally.

Aroundthe1940stheuseofchlorophyllinmedicines,toothpastes,andbreathfreshenerscameinvogue.Leadingnewspapersandmagazines,includingReadersDigest,ranarticlesonthepromiseofchlorophyllinmedicineandpersonalhygiene.InJulyof1940,acomprehensivereportwrittenbyDr.BenjamineGurskin,directorofexperimentalpathologyatTempleUniversity,waspublishedintheAmericanJournalofSurgery.Forthefirsttime,chlorophyllwassingledoutasaneffectiveandimportantdrug.ThepaperwaspreparedbyDr.Gurskinandtwocolleagues,Drs.RedpathandDavis,bothear,nose,andthroatspecialists.Some1,200casesofpatientstreatedwithchlorophyllwerementioned.Thecomplaintsrangedfromdeepinternalinfectionsandulcerstoskinandgumproblems.Dr.Gurskincommentedonhisassociates’experiencewithchlorophyll:“Itisinterestingtonotethereisnotasinglecaserecordedinwhichimprovementorcurehasnottakenplace.”

Butdespitealltheinterestinchlorophyllanditssuccessesinclinicaltrialsduringthe1940s,thereseemedtobelittleroomforitshighlyunstablenatureinthecommercialevolutionofmodernmedicine.Thoughafewcompaniesdidsynthesizechlorophyll,theresultsofitsusewereinconsistent.

cancerpatientsbehindme,Iknowthat—contrarytopopularbelief—alltypesofcancercanbeovercome.However,myownopinionisthatwewillneverfinda“cure”forthisdreadedproblembecauseitcan’tbecured.Thebodyofthecancerpatientmusthealitselfintheverysamewayanybodyreboundsfromacut,bruise,orcommoncold.Althoughtherearedrugswhichseemtohelpbydestroyingthisorthatcancercell,alltheycandoishelp.Thebodymustreplacethelostcellswithnewcancer-freeones.

OneveryinterestingtheoryofferedontheproblemofcancerhascomefromNobelprizewinnerOttoWarburg,M.D.,whoshowedthatcancercellsthrivedinanoxygen-poorenvironment.Heviewedcancernotasavirus,butasaprocessofcellmutationcausedbyoxygendeprivationonthecellularlevel.Warburgarrivedathisdiscoverymorethanfiftyyearsago,yethistheorystillstandsuncontradicted,whiledozensofothersarediscreditedeveryyear.

Wenowknowthatthingslikesmoking,highproteinintake,airpollution,poorbreathingandlackofexercise,andyearsofhighfatconsumptioncanstarvethebodyofupto25percentofitsavailableoxygen.AccordingtoWarburg’stheory,it’snowonderthatAmericanssufferfromoneofthehighestcancerratesintheworld—ourlifestyle,food,andenvironmentalltendtoreducetheflowofoxygentoourcells.Freshjuices,deepbreathing,andwheatgrassallbringoxygenintothebody,stimulatingbettercirculationofthebloodandincreasingthebody’soxygencarryingcapacity.Theyalsocreateanincreaseinthenumberofredbloodcells.

Whereasexcessweightusedtobelookeduponasasymboloftheleisureclass,todayitaffectsallsectorsandagegroupsofoursociety.Itdoesitsdamagequietly.AtpresenttherearemorethanfiftymillionobesepeopleinAmericaalone,andtheproblemseemstobegettingworseratherthanbetter.

Sincethisbookisaboutwheatgrass,though,andsinceIhavetalkedaboutthedietforweightlossinTheHippocratesDietandHealthProgram,Iwillfocusthisdiscussiononthewaysinwhichwheatgrassisinstrumentalinproblemsofweightcontrol.

Evenifyoucaneasilyavoidmeats,fats,andsugarinthediet,thereareothermenacestohealththathavebeencreatedduringthepastonehundredyears.HereIrefermainlytopollutionofourair,water,andsoil;radiationpoisoningfromnuclearwaste;televisionandradiowaves;andemissionsgeneratedbyelectricandelectronicappliances.Canyouprotectyourselffromthese?

AsImentionedinChapter3,Ibelievethereisawaywecanprotectourselvesfromallofthesehealthrisks—andwithinthepastfewyearsanincreasingnumberofscientistsandresearchershavebeguntoagreewithme.Onesolution,ofcourse,istoturntowholesomelivefoodsandsprouts,andtousewheatgrassjuicedaily.

jarofregulartapwaterandthentestedforfluorideandotherchemicalspresentinthewater.Bothofusweresurprisedbytheresults.Heconcluded,“Fluorinerapidlycombineswithcalciumphosphateandotherkineticelementstoloseitstoxicproperties,andhardenteethandbones.Thatiswhyfreshgrasswouldactasacatalysttospeedilychangetheacidfluorineintoabeneficialcomponentwithapositivereaction.Byusingwheatgrass,whichiscomparativelyrichincalciumphosphate,itwouldremoveanyfreefluoricacidandchangeitsnegativechargetoanalkalinecalciumphosphatefluoridecombinationwithapositivereaction.”Iwasamazed.Notonlydidwheatgrassneutralizethetoxiceffectoffluorine—butitconverteditintoanallyinmaintaininghealthybonesandteeth!Idon’trecommendthatyoudrinktapwater,though;purespringorfilteredwatertastesbetterandismuchbetterforyou.Butifyoucannotobtainspringorfilteredwater,pouralittlewheatgrassjuiceintoregulartapwater,anditwillmakeitmorehealthful.

Thebestformofprotectionyoucanhaveagainstpollutionisastronger,healthierbody.Indirectly,wheatgrassprotectsyoufrompollutantsbystrengtheningyourownbody’sdefensesagainstthem.

Unfortunately,itdoesn’tseemasifnaturehasprogrammedintothehumanbodytheabilitytoadapttoeverythingthathumaningenuitycandevise.Whereaswehaveshownareasonableadaptationtosmogandotherpollution(thoughatanunreasonablecostintermsofpoorerhealth)therearesomethingstowhichweseemespeciallyvulnerable.Oneoftheseispoisoningbyradiation.

FormanyyearsscientistshaveknownthatradiationfromX-raysinlargeenoughdosagescancausecancerandevendeath.Thedestructiveeffectofradiationisatonceaboonandathorntothemodernmedicaltreatmentofcancer.Itisaboonbecauseitdestroyscancercells,andathornbecauseitalsokillshealthycellsandmaystimulatefuturecancergrowth.Infact,radiationisoneofthemanymethodsusedtoinducecancerinexperimentalanimals.

Nuclearradiationisevenmoredangerous.Asweareallaware,shoulditleakintotheatmosphereslowly,orbereleasedsuddenlyinanexplosion,theeffectsonthehumanbodywouldbedeadly.

Buteventhesmallerdosesofradiationgivenoffbyatelevisionsetcancauseillnessandcancer.Forthisreason,CongressputintolawtheRadiationControlActof1968—whichprotectsusfromourowninventions.Butthislegislationonlylimitstheamountofradiationgivenoffbysets,itdoesnoteliminateit.Appliances,fluorescenttubelighting,andothermodernconveniencescanalsodisrupthealthbyalteringtheelectromagneticfieldsurroundingthebody.Apartfromrelyingonfederalguidelinesandindustrystandards,consumersreallydonothaveapracticalmeansofmonitoring

radiationlevelsinthehome.Knowingthethreatradiationistohumanhealthandlife,scientistshavebeen

busytryingtofindanantidoteforit.Atthisverymomentresearchisbeingproposedtotesttheprotectivepowerofwheatgrasschlorophyllagainstradiation.Therecentinterestisaresultofsomestudiesperformedinthe1950sand’60sbyvariousinvestigators.Inoneproject,sponsoredbytheUnitedStatesArmy,HarrySpector,DorisCalloway,andothersfedseveralgroupsofguineapigsastandardchowdiet,andthenexposedthemtolethaldosesofradiation.Alloftheanimalsdiedwithinfifteendays.Theinvestigatorsthentriedintroducingdifferentfoodsintothedietbeforeexposinganimalstothesamelevelsofradiation.Beetsdidnotmakeanydifference,butcabbageandbroccolikeptmorethanhalftheanimalsalivelongerthanfifteendays.Thebestresultswereobtainedbyfeedingtheguineapigscabbageandbroccolibeforeandafterradiationexposure.Autopsiesofthevegetable-fedanimalsrevealedlarger,healthierlivers,withgreaterstoresofVitaminAandminimalfattydegeneration.Theyalsoshowedsuperiorgonadaldevelopment,indicatingthatgreenvegetablescanprotectreproductivefunctions.Inaddition,characteristicsymptomsofradiationpoisoning,includingmalnutritionandweightloss,weredelayedandreducedinseveritywhentheydidappear.J.F.Duplan,areseacherattheAcademyofSciencesinParis,France,alsofoundthatcabbageminimizedweightlossandreducedthemortalityrateinX-radiatedanimals.

Two-toThree-Day-OldWheatgrass

Oncethetraysofwheatgrassaresetoutinthelight,theywillneedtobewateredeverydayoreveryotherdaydependingontheweather,humidity,andindoortemperature.Thefirstorsecondtimeyouwatertheplants,mixinatablespoonofpowderedkelpsothattheywilltakeupaddedtracemineralsandiodine.Trynottomuddythesoil,butkeepitmoistatalltimes.Ifbyaccidentatrayisallowedtodryout,avoidthetemptationtoflooditwithwater,asthiswillshocktheplantsfurther.Moistenthesoilinstead,andmakesureitdoesn’tdryoutagainforthenexttwodays.Don’tworryiftheplantsrefusetostandupstraightagain.Droopingiscausedbylackofwater,andthewheatgrasswillstillbegoodtoeat.

Afteraboutsixtotwelvedaysyourwheatgrasswillbeabout7–10inchestallandreadytoharvest.Incoolerweather,itmaytakeafewdayslongerforwheatgrasstomaturefully,butduringhotweatheritcanreach10inchesinfivedays.

Toharvestwheatgrass,cutasclosetothesoilaspossible,becausemanynutrientsareconcentratedclosetothesoilmat.Ifyoupullupsomesoilwiththeplants,merelyrinsetherootendswithplainwaterbeforejuicingoreatingthewheatgrass.Donotrinsethegrassifyouaregoingtostoreitintherefrigerator,however,asthewaterspeedsitsdecomposition.Ideally,wheatgrassshouldbejuicedandusedimmediatelyaftercutting.Althoughthecutgrasscanbestoredforuptosevendaysinplasticbagsintherefrigerator,oncejuiceditwillbegintogobadinahalfhour,andbecompletelyspoiledintwelvehours.If

Compostingwillpreventtheproblemofsoildepletioninyourindoorgarden.Itisawayofrestoringnaturalbalance.Itaddsorganicmatterandenablessoilenzymesandorganismslikethefriendlyearthwormtothriveandmultiply,enrichingthesoilandprovidingtheplantsgrownonitwithtop-qualitynutrients.Thisispreciselythewaynaturehaspreservedplantlifeonearthforcenturies.Onalargescale,itistheonlywaywecanensurethatthesoilwillbefertileenoughtoproducefoodforourchildren—andtheirs.

Animportantworkerinyourcompostpileistheearthworm,whosejobitistodigestorganicmatterandconvertitintorichplantnutrients.Earthwormcastingsareanextremelyvaluablesourceofnitrogen,minerals,andothernutrients.Thecastingsthatareleftbehindafterearthwormseatanddigestthesoilcontainfivetimesmorenitrogen,seventimesmorephosphate,andeleventimesmorepotassiumthantheoriginalsoil.

Youcanobtainearthwormsfromacompostpileoranoldpileofleaves,oryoucanbuysomeatanybaitandtackleshop.Askforredwigglers.Acoupleofhandfulsaresufficienttogetanentirecolonystarted.Theearthwormswillgotoworkproducingtheirweightincastingseverytwenty-fourhours.

CompostingInstructions

Togetstartedwithyourhomecompostingsystemyouwillneedtwoorthreeemptybarrelswithlids.Drillholesspacedattwo-inchintervalsallaroundthesidesofthebarrels.Placeashallowcontainerofsomesortundereachbarrel.Invertedflattrashcanlidsworkwell.Itisbestifthissetupissupportedaninchortwoofftheground,toallowaircirculationunderneath.Acoupleofbrickswilldonicely.

Whenyouhaveharvestedsomewheatgrass,breakupthematsintopiecesandplacetheminalayerinthebottomofthebarrel.Ontopofthislayer,spreadsomevegetablescrapsorpulpthathasbeenejectedfromyourwheatgrassjuicer.Followingthescraps,putintheearthworms,andcoverthemwithanotherlayerofbroken-upmats.(Storescrapsandpulpinasealedcontaineruntilyouhaveenoughmatstocoverthem.)Asyouharvestmats,repeatthislayeringtechnique,onlywithoutaddinganymoreearthworms,untilthebarrelisfull.Aftereachlayerisplacedinthebarrel,coveritwithalid.Youcanalsomixinahandfulof

Whenthecompostbarrelisfull,thedecompositionofthematsandvegetablematterintensifies.Aslongasthebarrelsareinawarmplace,butoutofdirectsunlight,thecompostwilldevelopintorichsoil,readyforuseintwotothreemonths.Ifyouwanttouseyourcompostsooner,inonetotwomonths,removethelideveryweekandstirupthecontentsofthebarrelwithashovel.Thiswillexposetheinsideofthebarreltomoreoxygen,speedinguptherateofdecompositionofthecontents.

Youwillknowwhenthecompostisreadybyscoopingoutashovelfulandexaminingit.Ifitiscrumbly,dark,andwithoutanybadodorortraceofscraps,itisready.Tousethenewcompostforplanting,mixitwith25percentpeatmoss.

Compostbarrelscanbekeptinthebasement,inabackhallway,ontheporch,orinacloset.Evenbetter,purchasesomeattractivebarrelswithwheelsandtight-fittinglids,andkeepthemrightinyourkitchenwheretheyaremoreaccessible.Youdon’thavetoworryaboutanyunpleasantodorsusingthiseasycompostingsystem.Properlycompostedearthhasapleasant,woodsysmell.

Ifmorethanafewdropsofmoisturecollectunderthebarrel,thecompostisprobablytoomoist.Toeliminateanyodorthatdevelops,sprinkleacoupleofhandfulsoflimeintothepile,mixitupwithashovel,sprinklesomemorelimeonthetoplayer,andcover.Toavoidthispitfall,coverscrapstotallywithmatsandavoidaddingfreshlywateredmatstothecan.Instead,letthemdryoutuntiltheyaremoist,butnotwet,andcoverthesurfacewithahandfuloflime.

JUICINGWHEATGRASS

Sincewheatgrassissofibrous,anditsfiberisindigestiblebyhumans,wealwaysuseitjuiced.Youcoulduseyourteethtojuicethegrassbychewingitandspittingoutthepulp,buttogetseveralouncesbythismethodwouldwearoutyourjaw,andyourpatience!Itisfarbettertopurchaseaslow-turningjuicermadeespeciallyforjuicingsprouts,greens,softvegetables,andwheatgrass.Bothhand-crankandelectricunitsareavailable.Irecommendtheelectricmodel,astogetseveralouncesofjuiceusingahandunitistiringandtakesalotlonger.Thehandunitstendtowindupcollectingdustontheclosetshelfmuchmoreoftenthantheelectricmodelsdo.

Withyourelectricjuiceron,merelyplaceabunchofcutwheatgrass,abouttwo-thirdsofaninchindiameter,tipdownintotheholeatthetop.Thejuicerwilldotherest.Afewdropsofjuicewillcomeoutofthefrontofthejuicer,followedbythepulp.Thejuiceitselfwillcomeoutofthespoutonthebottomofthemachine.Iliketorunthepulpthroughthejuicertwoormoretimestogetasmuchjuiceoutofitaspossible.Aftereachuse,besuretotakeyourjuicerapartandwashanddryallthepartswithamild,non-detergentsoap.

WHEATGRASSIMPLANTS

AnotherwayinwhichwheatgrassisusedinternallyattheHippocratesInstituteisasarectalimplantorretentionenema.Inmanypeople,thelowerbowelhasbecomeadumpingground,itswallsencrustedwithdebrisandbulgingwithbubble-likediverticula.Theuseofanenematocleansethecolon,followedbyawheatgrassimplant,helpsstimulateperistalticactivityofthemusclesthatcontractthecolonwall.Thishelpstoloosendepositsthatmaybeseenlater(afterdefecation)intheformofhardenedblackmaterialandropesorlumpsofmucus.Inaddition,thehighmagnesiumcontentofwheatgrassjuicedrawsfatoutofthecolonwallandtheliver.

Inanimplant,freshwheatgrassisinsertedintotherectumandretainedthereforabouttwentyminutesbeforebeingexpelled.Implantsareespeciallyhelpfulinthecaseofillness,seriousorotherwise,astheystimulatearapidcleansingofthelowerbowel.Inmyopinion,wheatgrassimplantsaresaferthanthecoffeeenemasusedbymanyhealthclinics,becausewheatgrassdoesnotintroduce

Anidealcompromiseisthewheatgrassfast.Itoffersthesatisfactionoffastingandcleansingthebodyinoneofthequickestwayspossible,anddoessowithcompletesafety.Duringthethree-dayfast,youwilldrinknotonlywheatgrassjuice,buthighlynourishingandpalatablegreendrinksextractedfromsprouts,babygreens,andsomevegetables,aswell.SweetenedlemonwaterandRejuvelac,afermentedwheatberrydrinkIdevelopedovertwentyyearsago,canalsobeused.

WhenIfirstbeganmyworkinthehealthfieldmorethanthirtyyearsago,Iwasterrifiedofwhatmanyalternativehealtheducatorscalledthe“healingcrisis”—adismalperiodofnausea,vomiting,diarrhea,boils,lowenergy,andenforcedbedrest,which—ifyousurvived—wouldendyourhealthproblemsforever.Sincethenmyfearhasbeenreplacedbyconfidenceandcommonsense.Ifyoutakemeat,potatoes,whitebread,vegetables,eggs,cheese,fruit,icecream,junkfoods,coffee,alcohol,sodas,andmilkawayfromaperson,andgivehimonlywatertodrinkforamonth,ahealingcrisisisinevitable.Ihavehadtonursemanywell-intentionedindividualsbacktohealthaftertheytriedthiscoldplungeroute.Oncetheirhealingcrisesabated,usuallyafterafewdays,thesuperenergyanddynamismtheyhadbeenpromisedasaresultoftheirsufferingnevercameabout.Someofthemwouldhavebeenhappyjusttogetbacktheamountofenergytheyhadbeforethefast,suchwasthedrainingeffectthecrisishadontheirbodies.

Fortunately,ahealingcrisisisn’tinevitableorevendesirable.Evenifyou

Manypeoplehavebenefitedfromthewheatgrassfast,but,inallmyyearsinthehealthfield,Ihaveneverseentheso-calledhealingcrisisoccuraslongasmyinstructionswerefollowedinacommon-senseway.Forexample,Irecommendonetofourouncesofwheatgrassjuice,threetimesperdayforthreedays.Morethanonce,individualsattendingtheInstitutehaveexceededthisamount.OnepersonIrememberdranknearlyaquartofwheatgrassoveratwo-hourperiod;forthenexttwodayshecouldn’ttouchhisfood,sleptnearlyhalftheday,andstayedclosetothebathroomatalltimes.Sincewheatgrassisamedicineaswellasafood,commonsensedictatesthatyoushouldn’ttakeaquartintwohours,oreventenouncesfourtimesadayforaweek!Wheatgrassisnon-toxicinanyamount,butmoreisn’tnecessarilybetter.

Theimportantpointisthatyouneedn’tjourneytohellandbackagaintobewell.The“inevitable”healingcrisiswillprobablynevergetafootholdinyourbodyifyouusecommonsenseandfollowmyrecommendations.

PERFORMINGTHEFAST

Trynottopushyourselftoohardduringthethreedaysofthefast.Keepthedaystotallyemptyofappointmentsorerrandsandinsteadread,dolightexercise,workintheyard,goforastroll,baskonthebeach,orwhatever—butrelax.Youmayfeeltheurgetosleepalot.Aslongasyoudrinktherecommendedthreequartsofliquideachday,extrasleepwilldoyourbodygood.

Everymorningofthefast,andagainintheeveningifyouwish,performasimplewaterenematocleansethecolon.Followthemorningenemawithawheatgrassimplant.Youcantakefourormoreimplantsthroughouttheday,usinguptosixouncesofwheatgrassjuiceforeachone.

BREAKINGTHEFAST

Followingthefast,itisimportantforyoutoletyourbodyadjusttosolidfoodsslowly.Thereisatendencyforfasterstowakeuponthemorningofthefourthdayandeateverythinginsight!Unfortunately,ifyougiveintothaturge,youwillprobablyundoallthegoodyouhavejustdone—andyoumaybecomesicktoyourstomach.Itismuchbettertobreakthefastwithabreakfast(ordinner,ifyouarebreakingitatnight)offreshfruits.

Chooseoneortwofruitsandeatamoderateamount.Forexample,acoupleofapplesandahandfulofgrapes,orapearandsomecherries.Fortherestoftheday,orthenexttwoorthreemeals,youmayeatsaladswithallkindsofsprouts,greens,andrawvegetables.Usedressingsmadefromvegetables,seeds,oravocados,ratherthanfromoil,vinegar,garlic,andthelike.Youcanhavethefirstsaladaboutthreeorfourhoursafterthefruitmeal,andafteradayorsooffruitsandrawsaladsyoumaybegintoeatotherfoodsaswell.

Irecommend,however,thatyoucontinuetomakefreshfruitsandrawsalads,alongwithgreenjuices,apartofyourdiet.Graduallyaddmoreofthemtoyourdailyfare,or,evenbetter,adopttheHippocrateslivingfoodsdiet.Whateveryoudo,don’tbegintoeatheavycookedmealswithanimalfoodsimmediatelyfollowingthefast,astheywilldrainyourenergyleveltremendouslyandmaycauseconstipationandcravingsformoreanddifferentfoods—especiallytheonesthatIurgeyounevertoeatagain.

FASTINGDO’SANDDON’TS

Manypeopleexperiencesurgesofenergyduringoneorallofthedays.Theyhaveanurgetosetnewrecordsforthenumberofmilestheycanwalkorhourstheycanwork.Trynottooverdoit.Insteadbemoderateandchannelyourenergyintotheinternalhousecleaningthatisoccurring.Somemildexercisewillbebeneficial,buthoursofwalkingorworkingwillnot.

NowIknowbetter.Afteryearsofresearchandtravel,Iamconvincedthatwhatweneedmosttodayisafundamentalchangeineatingandlifestyletogiveusthestronger,healthierbodiesthatwillovercomethemanyotherproblemsfacingtheworldtoday.

Foryearsthewesternworldhasbeengamblingwithhumanhealthinagreatexperimentthathasuseatingmorethan50percentofourfoodfrompackagesandcans.Aboutthreethousanddifferentchemicaladditivesareusedinprocessingourfoods,despiteconvincingevidencethattheycanaffectthedelicateelectrochemicalbalanceinthebrainandnervoussystem.Fortunately,youandIhaveasayinthematter.Wecangainmorecontroloverourdiets,ourhealth,andourlivesbymakingsimplechangesinthewaywelive.Growingapercentageofourownfoodathomeintheformofbabygreensandsproutscangiveuscontroloveratleastaportionofwhatweeat.Wecanthenselecttherestfromthefreshfoodssoldatfarmstands,naturalfoodsstores,andsupermarkets.Wheatgrassjuicewillhelptocompensateforthenutritionaldeficienciesinmodernfoods,andprotectusfrompollutionandotherphysicalandenvironmentalstresses.

Wheatgrassisnotgoingtocuretheillsoftheworld,butitisanimportantelementinwhatIcallthenewgreenrevolution—agreateremphasis,onthepartofpeopleeverywhere,onworkingwithnaturetopreventillnessbeforeittakeshold.Untilquiterecently,oursocietywasmovinginthewrongdirection,especiallyintheareasoffoodproductionandprocessing.Butitisnottoolateforustorecognizeourmistakeandtoembracenature’sideaofnourishmentinwheatgrassandlivefoods.

Inanimalnutrition,wheatgrassjuicehasalreadyprovenitselftobeamiracleworker.Nootherplanthastheabilitytoensuregenerationaftergenerationofhealthylittersinherbivorousanimalsallbyitself.Andnootherpotentfoodsuitableforhumanconsumptionisasinexpensivetoproduce.Spirulinaandchlorella,beepollen,andothersupplementalhealthfoodsmaybechemicallypotent,butcomparedtofreshwheatgrassjuice,theyarelowinvitality,andmuchmorecostly.Vitaminandmineralsupplementsarealsocostly,andoftenunsafe.

Manyofushavepooreatinghabitsandmanyofushavecometobelievecertainhealthmythsfosteredbyoursociety.Healthisnotbestoweduponusbyourparentsorgrandparents.Whilegoodgenesarehelpful,mostofushavenoonetoblameforpoorhealthbutourselves.Itisatragicmistakeforyoutogiveupresponsibilityforyourday-to-dayhealthortolaytheblameforitonsomebodyelse’sdoorstep.

Ifyouhaveeverfeltcompletelyincontrolofyourhealth,clearandcleaninside,fullofenergy,awake,confident,andrelaxed,youknowwhatawonderfulfeelingitis.Ican’tpromiseyouthatwheatgrassjuicealonewillmakeyoufeellikethis,butitwillhelp,especiallyifyoumakeacommitmenttolearnmoreabouttheotherelementsofahealthfullifestyle.InTheHippocratesDietandHealthProgramandinmyotherbooks,Ihavediscussedtheseconceptsindetail.
