In it, Gomer was geing nightmares from eating Welsh Rare- bit. I thought they were calling it Welsh RABBIT. My mom found this recipe and made it one night for supper and that’s when I found out it wasn’t rabbit! I love cheese, so we still have it every so often. Welsh Rarebit 1 Tablespoon buer or margarine 1 Tablespoon flour 1 Cup milk ½ Teaspoon salt Dash of pepper ¼ Teaspoon dried mustard. ¼ to 1 Pound of cheese (according to richness desired) Shaved or cut fine. I use cheddar 6 Slices of buered toast Make a white sauce, in the top of a double boiler, of the first six ingredients, mixing the mustard with the other dry ingredients. Set the top part of the boiler over hot, but not boiling water. Add the cheese, cook and stir until it is melted. Serve on hot toasted bread or on saltines. If you like cheese you will like it. The Senior Center in For- est City welcomed their new manager, Carrie Whitney, on Tuesday. Carrie is being trained by Pam Derose of the Area Agency on Aging for the Counties of Bradford Sullivan Susquehanna and Tioga. Carrie lives in North Jackson and is very excited about her new position. Some of the activities at the Senior Center are a Trunk Show on August 30th where you can display your crafts. On September 6th there is a Wellness Group meeting at 1pm and there will be free giveaways, snacks and a raf- fle. On September 13th stop in and get your blood pres- sure checked. On September 20th it is history day. Bring your photos and stories to share. On Thursday mornings at 10:30 there is a movie with the exception of Septem- ber 21st when the Center is closed for the day. You can call the Center for more in- formation at 570-785-3386 or stop in and meet Carrie. There are lots of fun and in- teresting programs going on. Recently the House of Flowers had a program and on another day visitors to the Center had a chance to make some jewelry. There are always oppor- tunities for volunteers at the center. The Senior Cen- ter serves delicious meals 5 times a week, Monday through Friday. Carrie and the rest of the nice people at the Senior Center are hoping you will stop in to enjoy all they have to offer. Not pictured is Christopher Burnis. Our season contin- ued with an away match against Riverside at Pine Hills on the front 9 holes. Best performance of the day was turned in by Zach Striefsky who had a 2 up lead during his match. Henry Nebzydoski also played well. Our young team continues to improve each match but in the end it was a Riverside win. Riverside 9 Forest City 0 Our next match also featured our longest bus trip of the season as we traveled to Tall Pines for a match against Elk Lake. We were missing a couple of our starters and most of the matches finished quickly. Our 7th and 8th grade golfers continue to get playing time in practice matches. Lucas O’Neill, Zach and Chris - topher Burnis put up their best fight but again it was too much to ask for a win. Elk Lake 9 Forest City 0 The weather forecast was not good but Carbon- dale Area said, “Game on,” and so we met them at Panorama. Carbondale is off to perhaps their best start ever with a 7-0 re- cord. It was great to field a full team of 6 players once again. Henry Nebzy- doski, playing against Carbondale’s number one, did more than his part with a win in individual and with George Marak- O’Connor a win in better ball also. Still not a match win but not shut out. Car- bondale 7 Forest City 2 Next week we’ll have a recap of matches against a really good Dunmore team and also our match with Western Wayne. They will meet at Luciana Park, Lanes- boro, near the Starrucca Via- duct, on September 16th at 10 AM where they will then drive a short distance to the trail head. On this 2-3 hour hike they will explore the fascinating history of this section of trail. They will hike past the Cas- cade Wye and learn of its his- torical significances. Wyes are used for turning railroad equipment such as engines around. It is the equivalent of a three point turn, where a lo- comotive can turn around and face the direction from which it came. This hike is rated easy. Bring water, snacks, hiking stick, wear sturdy hiking boots or sneakers and be ready for some secret fun. There are no handouts, no set schedule and no pre-regis- tration. This weekend is about geing together and carving. When you arrive, every par- ticipant is expected to sign a waiver. I remember watching an episode of Gomer Pyle when I was a kid. In it, Gomer was getting nightmares from eating Welsh Rare-bit. I thought they were calling it Welsh RABBIT. My mom found this recipe and made it one night for supper and that’s when I found out it wasn’t rabbit! I love cheese, so we still have it every so often.

Welsh Rarebit1 Tablespoon butter or margarine 1 Tablespoon flour1 Cup milk½ Teaspoon saltDash of pepper¼ Teaspoon dried mustard. ¼ to 1 Pound of cheese (according to richness desired)Shaved or cut fine.
