Egg McMuffin w/o the Egg or Muffin ~ Vegan Ingredients:

• Tofu (texture of your choice (I’m a fan of extra firm)) • Salt & Pepper • Earth Balance (soy free) [or oil of your choice] • Daiya (cheddar preferably) • Dave’s Killer Bread: Good Seed • Black Cherry spread (optional)

To start prepping this very simple meal: slice some [block] tofu into about ¼ inch thick slices season one side. Once your skillet is preheated (med or a dot or two past) add your margarine (or oil) and once it begins forming tiny bubbles (quemó grasa es no bueno) add your tofu w/ seasoned side down first (now is the time to season the other side). After 5-6 minutes (stoves vary) check for a nice browning, flip it then add the Daiya on top, cover the last minute or so of cooking. You could cut up some fruit to go along with this for breakfast or a decent late night snack; tater tots work just as well. Put the tofu on the bread with a little black cherry spread and munch away.
