5 lb chicken wings, sepa-rated at joints, wing tips reserved for another use1 Tbsp Emeril’s Original Essence (see cook’s note)1 tsp salt½ tsp ground white pepper2 cups freshly squeezed orange juice1 cup pineapple juice1 cup sugar½ cup soy sauce½ cup mirin (sweetened rice wine)2 Tbsp orange zest

meril Lagasse’s long love a� air with food and sport began in his hometown of Fall River, Mass., where as a kid he’d follow up a game of baseball in the park with pizza

at Marzilli’s Bakery. “They had an old-fashioned coal oven,” recalls the 53-year-old chef, “and their bread and pizza were phenomenal.” During foot-ball season, the policy at Lagasse’s home was simple: open door, game on. His mom was head chef and his dad helped with everything from shopping to bartending. “My mom is Portuguese, and food has always been a big part of the house-hold. It was nothing to have 30 to 50 people over watching a game.”

Lagasse’s entertaining impulse runs equally deep, so on Super Bowl Sunday he likes to throw his own special bash. A New Orleanian for three decades—and a Saints season-ticket holder for almost as long—he’s thrilled that next week’s big game will be in the Big Easy. “New Orleans is

a great foot ball town,” says the restaurateur, who will hold Super Bowl celebrations all week long in his three local establishments (Emeril’s New Orleans, Emeril’s Delmonico, and NOLA). “The city has

extra ordinary food, hospitality, and music, plus a vibe that you can’t explain because it’s so cool.”

When hosting at home, he’s learned that meticu-lous planning allows for pain-free partying. “Your guests aren’t going to have fun if you’re stressed out,” he says. The festivities begin more than an

2 (750-ml) bottles rosé wine½ cup Spanish brandy¼ cup triple sec or orange liqueur, like Grand Marnier + Juice of 1 orange½ cup superfi ne sugar½ cup sliced fresh strawberries½ orange, sliced into thin rounds, cut in half½ lemon, sliced into thin rounds, cut in half½ plum, pit removed, sliced into thin wedges½ peach, pit removed, sliced into thin wedges1 (10-oz) bottle club soda, chilled+ Ice cubes, for serving (optional)

1. Combine wine, brandy, orange liqueur, orange juice, and sugar in a large pitcher. Stir until sugar dissolves. Add fruit and stir well to combine. Cover and refrigerate until well chilled, about 2 hours.2. Stir in club soda. Serve sangria in large wineglasses, over ice if desired.

vinaigrette. On bottom half of each loaf, evenly layer ¼ of the provolone, followed by ¼ of the mortadella, ¼ of the spicy ham, and ¼ of the sa-lami. Top each with 2 tomato slices and 3 onion slices. Divide cherry peppers among sandwiches. Stir vinaigrette and generously drizzle over onion and tomato.2. In a small bowl, toss torn lettuce with some of remaining vinaigrette. Divide lettuce among sandwiches, top with other halves of bread, and serve.

Balsamic-Herb Vinaigrette

MAKES ¾ CUP

¼ cup balsamic vinegar 1 Tbsp chopped fresh basil leaves 1 Tbsp chopped fresh oregano 1 tsp minced garlic

½ cup extra-virgin olive oil ½ tsp salt ¼ tsp freshly ground black pepper

1. In a small mixing bowl, combine vinegar, basil, oregano, and garlic; whisk well. 2. Continue whisking while drizzling oil in a slow, steady stream. Add salt and pepper and whisk to combine.3. The vinaigrette may be stored in an airtight container in the refrig-erator for up to 1 week.

1. Preheat oven to 350°F. Lightly grease a 9-inch round ovenproof baking dish and set aside.2. Bring a medium pot of water to a boil. Add spinach in batches and cook until wilted, 2 to 3 minutes. Drain and refresh under cold run-ning water. Squeeze to remove excess water. Chop and set aside.

Add cooked spinach and lemon juice and stir to incorporate. Add Brie and Monterey Jack, artichoke hearts, and bacon; stir well. Remove from heat and pour into prepared baking dish. Top with Parmesan and bake until bubbly, about 10 minutes. Remove from oven and serve hot with chips.

I’d hardly told anyone about the donations.

The captain explained that 10 years ago, he’d found stacks of my novels in a makeshift library. I almost fell out of my chair.
