Paul Bunyan’sSandwich Shop hasundergone a winter-longremodel, and is now oper-ating with more thantwice the seating.

Owner Jim Ayres saidthe restaurant, located at3150 Busch St., can nowaccommodate 55 diners.

“The place was prettymuch fill-ing up withpeople,” hesaid.

Ayressaid theyadded newcounters,carpeting,paint andlighting aspart of a

complete interior refur-bishing. The work wascompleted in Marchthough more additions,like new signage, are likelyin the future.

Butte-based EarhartBuilding Constructionwas the lead contractor,and a number of subcon-tractors contributed aswell.

“We really changed theappearance,” said Ayres.“We added big new win-dows so people have aview of the East Ridge.”

The building had notbeen upgraded in at least14 years it has been at itspresent location, saidAyres, whose family hasowned the business for 30years. It is locally owned,and not affiliated withother Paul Bunyan restau-rants around theNorthwest.

“The main thing is nowpeople can spend moretime,” said Ayres. “Thetables would fill up andeveryone felt in a rush toget out here.”

Ayres said 14 employ-ees work at Paul Bunyan,and he has added twosince the renovation.

The business is openfrom 11 a.m. to 8 p.m.Monday throughSaturday. For information,call at 494-7817.
