This booklet provides a brief overview of the outstanding Danisco Knowledge Award submissions received as part of the 2010 competition. A high-level summary of the unique and intriguing concepts presented cannot adequately reflect the amount of time and effort program participants committed to exploring and developing each of them. Thanks to our contestants for their creativity and hard work. We hope you find the ideas outlined here to be inspiring, timely and relevant to your product development endeavors. The catalysts of innovation can take many forms, and we are pleased that the Danisco Knowledge Award program has proven to be a fruitful means of exploring the possibilities and challenges that come with innovation. The Danisco Knowledge Award Nurturing the Future of Innovation Innovators are always looking to the future, and they understand that creating the desired future state requires the planting of seeds today. That is why Danisco – a company renowned for its technical knowledge and innovative capabilities – devised a program to nurture the growth of food science’s future innovators. The Danisco Knowledge Award program was launched in 2003 to provide young food science students across the nation with an opportunity to apply their growing technical knowledge and exercise their creativity within the structures of real-world considerations such as economic viability, market trends and dynamics, regulatory requirements and more. The annual competition is open to junior-, senior- and graduate-level students attending a four-year accredited college with a declared major in food science or related major. Students compete as a team or as individuals and are responsible for physically creating a new food or beverage product. They prepare a comprehensive report to support their assertion that the product could feasibly be produced commercially and has a fair chance of succeeding in the marketplace. The report must include an explanation of the market need for such a product and the market environment, including a description of the competition, patentability and regulatory hurdles; an industrial formulation, which includes two or more Danisco ingredients and an explanation of their function in the product; nutritional information; results from sensory, shelf life and microbiological testing; and a pricing strategy. The Knowledge Award competition encourages innovation in academic institutions. All players gain knowledge through the experience. Students come away with a better understanding of the role their suppliers have in the product development cycle, and Danisco gets some fresh ideas that could bring success to our customers and resonate with consumers looking for healthy, safe and tasty food.

Participation Requirements

• Entrants must be a junior, senior or graduate student during the 2009-2010 academic year at a four-year accredited college with a declared major in Food Science or related major.

• Individual or team entries are accepted. • A faculty sponsor/advisor must verify the eligibility of the entrants and the originality of

the concept. • Develop a new food or beverage using two or more Danisco ingredients.

Judging Process • Judges remain anonymous. • A 5-10 member judging panel is selected from within the food industry with no more

than two Danisco personnel on the panel. • Judges have a diversified background with a major emphasis on new product

development. • All evaluations remain confidential.

Awards $17,000 in cash is awarded in each annual competition. i-Chips Chips for Change i-Chips are healthy baked chips made from unique, inexpensive gluten-free grains (amaranth and buckwheat). These chips are low in sodium, low-calorie, reduced-cost and they contain no sugars. Target Market This product is aimed at consumers who want a healthy snack alternative. There are currently no known chips on the market with buckwheat and amaranth as the dough base. Development of a gluten-free chip also expands the target market.

Danisco Ingredients Used GRINDSTED® Xanthan 80 provided a thick consistency and integrity to the dough. DIMODAN® HS-K monoglycerides were used as an emulsifier in dough preparation. GUARDIAN™ Green Tea Extract 20M minimized lipid oxidation. PANODAN® PowerBAKE 2099 helped to achieve the desired texture.

Second Place Winner

Gluten-Free Bagel Chips Whole Grain Bagel Chip that is Gluten-Free This whole grain bagel chip is a great choice for patients with celiac disease or others wanting gluten-free alternatives. One serving of chips provides 5 grams of dietary fiber and is only 130 calories. Target Market Celiac patients adhering to a strict diet often lack nutrients from grains, decreasing their iron, B-vitamin and fiber intake. Since the gluten-free and bagel markets have continued to grow, this bagel chip was designed as a novel alternative to this growing consumer segment.

Danisco Ingredients Used PANODAN® 205K DATEM was used to strengthen the dough and to soften the crumb, which provided a more appealing final texture. DIMODAN® PH 100 distilled monoglycerides served as crumb softeners and helped to retard staling. GRINDSTED® Xanthan 200 also helped retard staling and improve the dough matrix. Litesse® polydextrose improved crispness, as well as provided prebiotic fiber. Team Members – The Ohio State University

Super Snack Extruded Snack Made with Sweet Potatoes

Super Snack is a functional extruded snack made with real sweet potatoes. It is also fortified with fiber, resistant starches and antioxidants. Target Market Super Snack will reach a wide audience. Its rich texture and convenience as a finger food will appeal to consumers who enjoy snack foods. Sweet potatoes are gaining popularity among the general public as they are part of the campaign to fight obesity. The added nutritional benefits in this snack give it a competitive edge over other more common snacks. Danisco Ingredients Used Litesse® Two polydextrose served as a prebiotic fiber and bulking agent, and reduced calories. GUARDIAN™ Green Tea Extract 20M and GUARDIAN™ TOCO 70 were used to improve shelf life by retarding lipid oxidation.

Gordita Bites Heat-and-Serve Appetizer Gordita Bites are restaurant quality heat-and-serve appetizers that follow the trend of combining ethnic cuisines. It is an easy-to-prepare appetizer for home entertaining and can be served alone or with sauces. Three variations were developed: Thai Peanut, Creole Pork and Korean Kalbi. Target Market The target market for Gordita Bites are single Americans ages 18-45. Members of this group are often considered “foodies” who are willing to try new things. As the economy has plummeted, American eating habits have changed and more meals are consumed at home. Entertaining at home is ranked highly among activities that Americans plan to increase. Gordita Bites are an ethnic fusion bake-and-serve appetizer that meets the demands of the market.

Danisco Ingredients Used GRINDSTED® Xanthan Easy in the filling sauces controlled thickness and prevented oiling off. PANODAN® 150 was also used as an emulsifier in the filling sauces to prevent oiling off. GRINDSTED® MCC BAK 01ND in the masa dough prevented oil uptake during frying. GRINDSTED® Xanthan 80 in the masa dough improved elasticity and cohesiveness. Natamax® SF was used in the masa dough to inhibit mold growth.

Cocoa Bleuet High-Fiber Blueberry Chocolate Granola Bar Cocoa Bleuet is a high-fiber, all-natural blueberry chocolate granola bar with prebiotics and probiotics that supports gut health. One serving contains over 5 grams of fiber, has only 100 calories and contains no trans fats. Target Market Cocoa Bleuet is aimed at health-conscious people of all ages. It is a healthy snack option with the great taste of a traditional granola bar. Danisco Ingredients Used Litesse® Ultra polydextrose helped to reduce sugar, calories and fat. It also provided fiber to the bar. GRINDSTED® Carrageenan CW 594 FLX improved elasticity and gelling of the blueberry fruit leather. GRINDSTED® Carrageenan CW 392 FLX functioned as a texture modifier and stabilizer in the granola. MicroGARD® 200 provided natural antimicrobial protection. Poole Farms Fruit Juice Concentrate Single-Serve Juice Concentrate Poole Farms fruit juice concentrate is a blend of white grape, pineapple and strawberry juice concentrates that, when reconstituted with water, results in 100% juice fortified with vitamins A and D. It is packaged in a multi-pack of 24 single-serve pouches. Target Market Poole Farms fruit juice concentrate is aimed at parents of young children as a convenient juice option or a diluted juice in toddler’s cups. This product is marketed as a more nutritious and higher-quality alternative to individually packaged juice drinks currently on the market. It is stored in the freezer.

Danisco Ingredients Used GRINDSTED® XL stabilizer enhanced the mouthfeel of the product and inhibited the formation of large ice crystals of the concentrate during freezing. GRINDSTED® Star-Vite A and D blend provided vitamin fortification. AFC AS 300P was used as an all-natural color enhancer and to achieve a vibrant red color. Team Members – Clemson University

Wheelies Peanut Butter and Jelly Snack Cookie Wheelies are a children’s snack cookie based on the flavors of a traditional peanut butter and jelly sandwich. They are a cup-shaped granola cookie filled with real fruit and a nutty-tasting spread made from sunflower and pumpkin seeds. Target Market Wheelies are designed for children and are positioned to fill a niche in the market. They are aligned with the growing snack trend, specifically children’s snacks that are “inherently healthy.” Products containing real fruit and fruit juices have also been shown to have good growth potential in the marketplace.

Danisco Ingredients Used GRINDSTED® PS 105K was used in the seed butter to provide a smooth, creamy texture, prevent oil separation and create a glossy surface finish. GRINDSTED® Barrier System 200 on the granola cookie prevented moisture migration. Litesse® polydextrose reduced sugar in the seed butter filling, improved the texture and added prebiotic fiber. Ruby Cakes Healthy Snack Cakes Ruby Cakes is a new type of dessert that offers the sweets you crave with the nutrients you need. They are a delicious velvet-like snack cake with a decadent cream cheese frosting. Each cake has a full serving of fruits and vegetables. Target Market The primary target market for Ruby Cakes is children, but they can be enjoyed by the entire family. This beet cupcake recipe is composed of both apples and beets, which can help consumers with their recommended daily intake of fruits and vegetables.

Danisco Ingredients Used GRINDAMYL™ PowerFRESH 4011 helped to increase the softness, increase crumb strength, improve shelf life and reduce crumbliness. GRINDSTED® GA 1350 emulsifier improved the whipping of the batter and the texture, and it increased the tenderness of the cake. Litesse® polydextrose served as a bulking agent and contributed fiber to the icing. Team Members – Clemson University

Zucchini Minis Single-Serve, Low-Calorie Zucchini Bread Zucchini Minis are a healthy, miniature version of homemade zucchini bread. They are low in fat, sugar-free, an excellent source of fiber and have half the calories of a traditional quick bread. Target Market The target market for Zucchini Minis is women ages 25-45 since they are the most likely to eat healthy foods in an attempt to lose weight, while also valuing convenience. The product was developed as a healthier alternative to traditional zucchini bread with the added benefits of convenience, extended shelf life and functional ingredients. Danisco Ingredients Used Litesse® polydextrose was added for fiber enrichment and to improve gut health. Xylitol C provided the same sweetness as sucrose, while helping to reduce calories. It also acted as a humectant to retain moisture and improve the texture of the product. GRINDSTED® GA 1350 emulsifier was used to improve batter stability and soften the crumb. MicroGARD® 200 extended the shelf life of the cake by preventing growth of yeast and mold. GUARDIAN™ Green Tea Extract 20M acted as a natural antioxidant for shelf life extension by retarding lipid oxidation.

Strawberry Yogurt Blooms Frozen Novelty Snack Strawberry Yogurt Blooms are a probiotic, bite-size frozen novelty snack with a frozen yogurt center sandwiched by colorful, gluten-free prebiotic mochi dough. The round frozen yogurt center is a light shade of pink and flavored with a natural strawberry flavor. Two pieces of rice-based blossom-shaped mochi dough serve as the top and bottom of the sandwich. Target Market Strawberry Yogurt Blooms are aimed at consumers ages 18-34 in the middle-to-upper class who make impulse, out-of-home ice cream purchases and who are also health-conscious. The product contains only 2.5 grams of fat per serving, prebiotic fiber, probiotics and is free from wheat allergens.

Danisco Ingredients Used GRINDSTED® IcePro LF 2517 stabilizer helped to stabilize and maintain the chewiness of the frozen yogurt. Litesse® polydextrose increased the prebiotic fiber content. Yo-Mix™ 505 LYO yogurt cultures were used to ferment the milk in the frozen yogurt. HOWARU™ Dophilus premium probiotics were added for improved digestion. Team Members – Cornell University

Completely Nutz Decadent, Nut-Based Snack Completely Nutz is a decadent healthy nut-based snack that is rich in antioxidants, protein and omegas 3, 6 and 9. Almonds and coconut are combined and layered with a decadent ribbon of cocoa peanut butter for an indulgent treat that promises to leave you feeling satisfied.

Target Market Completely Nutz is aimed at health-conscious consumers who are on the go and taps into the rising popularity of nut-based snacks. Completely Nutz combines several comforting flavors into a single, delicious taste experience presented in a new way, which will appeal to many consumers. Danisco Ingredients Used GRINDSTED® PS 201 and 105K emulsifiers were used in the filling to stabilize the particulate matter within the oil. EMBANOX™ TBHQ was used as an antioxidant in the nut and chocolate layers. GRINDSTED® XL stabilizer helped make the coating more pliable and easier to mold into two distinct layers.

Pro-Pomegranola Bites

Pomegranate Granola Snack Bites Pro-Pomegranola Bites are yogurt-coated pomegranate granola snack bites with additional prebiotics and probiotics. The product provides a more convenient way to consume granola along with yogurt. It contains freeze-dried pomegranate seeds, rolled oats, crisp rice, corn syrup and honey. Target Market Target consumers for Pro-Pomegranola Bites are 18-34 years old with a typical, busy lifestyle and little time for a sit-down meal.

Danisco Ingredients Used Litesse® polydextrose provided a prebiotic fiber source. Lactitol MC replaced some of the sugar. GRINDSTED® Mono-Di was used as an emulsifier to reduce stickiness and increase softness of the granola. HOWARU™ Sprinkles delivered probiotics.

Probiotic Gelatin Snack Lemonade Gelatin Snack with Probiotic Beads This concept is a lemonade gelatin snack that contains probiotics dispersed in encapsulated beads through the gelatin base. The beads have a mild strawberry flavor. This snack is unique in that it delivers probiotics, which are typically associated with dairy products such as yogurt, in a fun snack that is lactose-free. Target Market The target market for this probiotic gelatin snack is children and health-conscious consumers with mid- to upper-income lifestyles. It will satisfy adults’ desires for healthy foods and children’s desires for a sweet snack.

Danisco Ingredients Used HOWARU™ Premium Probiotics were included in the encapsulated beads. Xylitol C enhanced the sweetness of the gelatin base with fewer calories than sucrose. GRINDSTED® Pectin LA 410 helped create the gel in the gelatin snack. Team Members – University of Georgia

WheySlim Powdered Drink Mix WheySlim is a powdered drink mix that is added to water to provide a high source of protein, probiotics and fiber. The powder’s high protein content provides the consumer with fullness and satiety, while being low in calories. The drink tastes similar to lemonade and is naturally sweetened with stevia. Target Market WheySlim is for people of all ages, but with an emphasis on 25-40 year olds. WheySlim is a natural alternative for those suffering from irregularity since it offers both fiber and probiotics. The drink is also unique because it provides only 20 calories per serving.

Danisco Ingredients Used HOWARU® Dophilus and HOWARU® Bifido Premium Probiotics were used to provide the consumer with two sources of probiotics in one convenient drink mix. These probiotics were included to promote digestive health. Team Members - University of Georgia

SOYumptious Soy-Based Cultured Frozen Yogurt SOYumptious is a mango/raspberry-flavored, soy-based cultured frozen yogurt with fiber, probiotics and calcium. Each ½-cup serving contains 9 grams of fiber, probiotics and as much calcium as a glass of milk. Target Market SOYumptious is primarily aimed at health-conscious females 18-34 years of age and secondarily at those who cannot or do not consume dairy products.

Danisco Ingredients Used Litesse® polydextrose served as a fiber source and bulking agent. GRINDSTED® SSD-5445 stabilized the yogurt. Yo-Mix™ Vegetal 7 was used to culture it. GRINDSTED® IcePro LF 2515, GRINDSTED® Eagle and GERMANTOWN™ SUMMIT were used to stabilize the frozen dessert. HOWARU® Dophilus Premium Probiotics provided a source of probiotics. Tropi-Colada Low-Calorie Tropical Fruit-Flavored Syrup Tropi-Colada is a low-calorie, tropical fruit-flavored syrup designed to maximize calcium absorption. It contains fiber, calcium and dehydrated mango pieces that are suspended in the syrup. It also contains small pearls made of vitamin D2-enriched dehydrated mushroom. Tropi-Colada is designed to contain at least one gram of fiber per serving, 13% DV of vitamin D2 and 200 mg of calcium. Target Market The target market for this syrup is women who are aware of the benefits of calcium, fiber and vitamin D. It was designed to be versatile and can be added to breakfast items, snacks (e.g., yogurt), desserts (including ice cream) or even adult beverage mixers.

Danisco Ingredients Used Litesse® polydextrose served as a bulking agent and provided prebiotic fiber. Lactitol MC was also a bulking agent and helped reduce calories. GRINDSTED® Xanthan Clear stabilizer provided body and viscosity and kept the mango pieces and pearls suspended. GRINDSTED® Alginate FD 155 was used to encapsulate the mushroom powder into small pearls. Team Members – Penn State University

Shoko-Bites Creamy Milk-Filled Dark Chocolate Bites Shoko-Bites are a sweet snack packed with flavor and low in calories. They are a fun, convenient way to indulge, while providing fiber and guilt-free pleasure. Shoko-Bites provide a sweet and delicious boost in three unique flavors: lemon cheesecake, organic green tea and caramel apple. Target Market Shoko-Bites is positioned as a refrigerated dessert. Active, on-the-go professionals and homemakers are the target market. With three delicious flavors, consumers will feel great about eating these luscious chocolates.

Danisco Ingredients Used GRINDSTED® Carrageenan CW 590 FLX was used as a gelling agent to stabilize the milk gel center. GRINDSTED® SSD-6116 stabilizer improved the texture and mouthfeel. Xylitol C served as a sweetener while reducing total calories. Litesse® polydextrose helped to increase solids and add fiber. Team Members – California Polytechnic State University

Chillaxation Chocolate Relaxation Shake Mix Chillaxation is a functional shake mix designed to aid in both relaxation and digestive health. The mix caters to the current trend of pre- and probiotics while focusing on the emerging trend of relaxation beverages. It comes in a convenient shelf-stable powder for consumer use at home. Target Market Chillaxation is suitable for all ages, but the target market is people who have trouble falling asleep and staying asleep. It helps the consumer get a full night’s rest and wake up in the morning ready to face the day.

Danisco Ingredients Used GRINDSTED® JU 543 and JU 501 stabilizers provided suspension, mouthfeel and texture. Xylitol C provided sweetness with 40% fewer calories. Litesse® Two polydextrose improved texture and added fiber. HOWARU® Premium Probiotics were used as the probiotic source.

Native K Tropical-Flavored Dairy Beverage Native K is a tropical-flavored dairy beverage made with pawpaw and pineapple fruit pieces to provide added nutrients and improve digestion. This kefir product promotes good health using vitamins, minerals, antioxidants and probiotics. Target Market Native K falls into the functional beverage category, currently the fastest-growing segment of the food market. Functional beverages are presently popular because of interest in nutrition as disease prevention, the need to reduce food allergies and intolerances and a drive for healthy, flavorful new products.

Danisco Ingredients Used GERMANTOWN™ 1200 stabilizer increased the texture and suspension of the fruit pieces in the beverage. PROBAT™ KC3 culture was used to culture the beverage and provide texture, flavor and aroma.

Brazilian Blast Exotic Açai-Based Sorbet Snack Brazilian Blast is an exotic açai-based sorbet with a granola crust enrobed with a thin layer of chocolate. It is a great dessert or snack rich in antioxidants. The sorbet incorporates the açai flavor with the tartness of cherry, raspberry and black currant and the sweetness of blueberry with a hint of banana. The combination of flavors and textures in one bite is what makes this product unique. Target Market Brazilian Blast bites satisfy both the need for health-promoting products and the desire for indulgence. They can be consumed as a fancy dessert or snack. They address trends that apply to frozen novelties and meet consumers’ needs for portability, novelty, international flavors, functional foods and antioxidant benefits.

Danisco Ingredients Used GRINDSTED® SSD-5328 stabilizer enhanced the smoothness of the sorbet and controlled ice crystal formation. GRINDSTED® Benefat B/D was used in the granola crust as a substitute for butter. It also provided adhesiveness to the crust with lower calories. After Five Champagne Gelato After Five champagne gelato creates a dynamic duo of delicate flavors by combining a rich, creamy gelato with the crisp palate of champagne, complimented with a strawberry reduction. A unique twist is added to the gelato by incorporating lively bubbles of champagne with carbon dioxide-infused sugar rocks. Target Market After Five’s target market is adults 21 and older and those who dine in restaurants. It creates an intersection of three trends: gelato, innovative flavors and retail possibilities. Current food trends, a niche for higher indulgence with traditional flare and great appeal for a large target market makes After Five champagne gelato an excellent concept for today’s market.

Danisco Ingredients Used GRINDSTED® IcePro LF 2516 stabilizer prevented undesirable formation of ice crystals during storage. GRINDSTED® Eagle stabilizer helped create a smooth consistency and promote the stiffness needed for scooping gelato.
