Growing interest in fermented foods

• Source: Condiments and Dressings - UK - January 2018; http://www.foodandwine.com/blogs/4-new-ways-eat-fresh-peanuts

At Empire State South, F&W Chef-in-Residence Hugh Acheson’s Atlanta restaurant, chef Josh Hopkins ferments green peanuts in two ways: in a

basic mix of sugar, salt and water, and in an unusual mix of sugar, salt, coconut water and buttermilk. The peanuts ferment for up to a

week and a half, leaving them crunchy and full of funky flavor. Hopkins uses the peanuts fermented in water, sugar and salt in a salad with

roasted peppers, arugula and couscous with a fennel pollen vinaigrette. The coconut-buttermilk fermented peanuts are served in a

ragout of eggplant, apple and scallions with farro and harissa aioli.

Traceability is increasingly sought after as the reassuring clean label. Inspiration can be taken from other categories to communicate this natural claim, even through the packaging.

Take-aways

The natural, plant-based protein

source

Adding indulgence

World cuisines open up new

opportunities

Cleaner, traceable peanuts

As high-protein products enter into the mainstream, the focus now is more on the source of protein. A natural, plant-based protein like peanut can be popular.

Peanut butter can be used to add permissible indulgence to healthier and to vegan items.

The popularity of Asian cuisines has already opened up doors for the use of peanuts in savoury foods, and now the growing interest in African cuisine could lead to more peanuts in soups and ready-meals.
