From the Past President Randolph D. Mitchell

The 2017 PSA Annual Meeting in Orlando was, by all accounts, one of the most successful ever. Meeting participation was at an all-time high of 1,245 attendees, not counting the many families that joined to enjoy the World Center Marriott Resort and the many entertainment attractions that Orlando offers. New records in abstract submissions and student participation were also set. An amazing 46 countries were represented at this year’s meeting, which is a great reflection on how PSA mission to be a global organization is taking shape.

Program chair Deana Jones and the entire planning com-mittee’s work was rewarded with outstanding scientific content including nine symposia. The program committee experimented with new concepts this year that combined disciplines in sessions on Muscle Myopathies and Nutri-tional Immunology. One symposia developed by Poultry Science and The Journal of Applied Poultry Research Edi-tors-in-Chief, Bob Taylor and John Carey, focused on pub-lishing in PSA’s journals to enhance the careers of young scientists and international scholars. Another concept that was part of the meeting for the first time in my memory was break out discussion groups in the Industry Sympo-sium. These new concepts are part of PSA’s on-going effort to improve the scientific content and the experience for meeting participants.

The tradition of unique and memorable BBQ events was continued at Gatorland on Wednesday evening. Although this year’s event started a little wet, the attendees did not let a little rain dampen their spirts and were soon ziplining over the alligators and feasting on Southern BBQ chicken and turkey. I think all zipliners made it across, so the gators went hungry.

The annual meeting ended with the awards banquet on Thursday evening. Many professional honors were handed out, including the naming of four new PSA Fellows. Awards were given to the outstanding student presenters and all of the undergraduate students were recognized.

For me personally, being allowed to serve as PSA President has been an honor and the 2017 annual meeting was a great way to end my term. I’d like to thank PSA’s staff including Steve Koenig, Jon Cole, and David Busboom; Debi Sey-mour and the entire FASS staff; Deana Jones and Manpreet Singh of the program committee, and all the many volun-teers and student judges that made this meeting a success.

2017 PSA AnnualMeeting RecapDeana R. Jones, Program Chair

What a busy and exciting 2017 annual meeting! Thanks to the efforts of a very hard-working program com-mittee, we had the highest number of abstracts presented at any PSA annual meeting. Due to the tireless efforts of the section chairs (Lisa Bielke, Richard Blatchford, Dianna Bourassa, Marisa Erasmus, Justin Fowler, Darrin Karcher, Woo Kim, Anup Kollanoor-Johny, Wilmer Pacheco, Sam Rochell, Petek Settar, Charles Starkey, and Jessica Starkey) abstract reviews and revisions were completed in a timely manner, allowing for notification of authors and setting of the scientific program. Manpreet Singh coordinated the judging of the highest number of student competitors in PSA history. What a year!

Thank you to all the volunteers who served in various roles: reviewers, moderators, judges, and registration assistants. PSA is a volunteer organization and I appreciate the will-ingness of all the members who assisted with this year’s meeting. Along with the PSA and FASS staff who provided meeting support, several families of PSA members pitched in when additional help was needed. It has been a pleasure assisting PSA as the 2017 Program Chair.

W. R. Graham, Ontario Agricultural College, first President of the Poultry Science Association.

The above title is taken from an article published in the March 1958 issue of Poultry Science, upon the passing of Professor William Richard Graham, Ontario Agricultural College. Graham was the first President of the Poultry Science Association; he, along with James E. Rice of Cornell University, was responsible for proposing and developing what would become the PSA.

Better known nationally and internationally as “Prof ” or “Dick”, Graham served 41 years as Head of the Department of Poultry Husbandry at Ontario Agricultural College, Guelph, Ontario, Canada. In addition to serving as the first President of the Poultry Science Association, he and Rice became the inaugural PSA Fellows in 1933. Graham Hall on the campus of the University of Guelph is named in his honor.

Debbie M. Baughn of Debbie Baughn Consulting in Madison, Alabama, is a great-granddaughter of Professor Graham. She is a member of PSA and agreed to share some memories that the family has of PSA’s first President.

Question: What fond memories does your family have of your great-grandfather?

Answer: My mother has memories of visiting their house in Guelph which was located near the campus. She remembers that the Graham household had a maid who lived at the house along with the maid’s husband, Bill, who helped take care of the chicken houses. She has fond memories of her grandfather carving the roast beef when she visited on special occasions. My Uncle Jim, who became a well-respected animal nutrition professor at the University of Vermont, remembers going out to the chicken coops in the morning with Professor Graham to let the chickens out of the coops. During that time, Graham would check on the chicken’s health and well-being. He was doing research on chick starter at the time since there was not a successful starter available. He had two small flocks of chicks that were being feed different diets. He asked my uncle if he noticed the difference in the chick’s eyes. Uncle Jim noticed that the chicks that were fed a diet containing brewer’s yeast had clearer, brighter eyes. Uncle Jim also noted that many times, they had visitors for lunch on short notice. They would not always have much meat to serve, so the plate of meat also contained hard cooked eggs. He said that under no circumstance was the family to help themselves to the meat on the plate. That was reserved for guests.

Q: When did you learn that your great-grandfather was instrumental in the early stages of the poultry industry?

A: It wasn’t until my first job at House of Raeford that my grandmother reminded me there was a strong family tie to the poultry industry. Years later, when I worked for a small breading company in Alabama, I tracked down more meaningful information. Our company had exhibited at the Southeastern International Poultry and Egg Show in Atlanta when I got a chance to talk to people from Canada Poultryman. I told them about my great-grandfather and they ended up getting a copy of The Ontario Poultry Industry by Steven Leeson. It was really interesting to read about my great-grandfather’s early work in the poultry industry and the work he did at the university. After receiving the book, I spent more time doing

“PRoF” GRAhAm – A TRIbUTE

research into his life. I have joked with friends in the industry that there is chicken in my blood, although most of my work has been on how to make the chicken taste better to the consumer, instead of what to feed the chicken.

Q: What made you decide to work in the poultry industry?

A: After working in the batter/breading industry as a supplier to the poultry industry, it was a logical step to working in the poultry industry. I worked as a consultant with Pilgrim’s Pride and then for Wayne Farms in product development for several years. I am back working as a supplier to the poultry industry. My current work is with House-Autry in Four Oaks, North Carolina. We provide ingredients to poultry processors, as well as restaurants and foodservice operations.

“Are you sure the chickens read the textbook?” – W.R. Graham in reply to a student’s complaint that a chicken was not doing what the textbook said it would.

Q: You keep a photo of Professor Graham on your desk. What significance has that photo had on your life and career?

A: My great-grandfather was involved with the industry at its infancy. His picture is a reminder of how far we have come in the poultry industry. I am proud to work in an industry that one of my relatives had such an early and profound influence on. Q: What mementos or family keepsakes do you have of his?

A: I have inherited Dr. Graham’s top hat and gloves. One of our family members has his poultry judging stick, which we used to play with as children when we visited my grandparents in Ithaca. It was a telescoping black metal stick and had a smooth wooden tip on the end. Uncle Jim has what is referred to as the “Morris Chair” that used to be at the house in Guelph. It is a very large chair with big wooden arms. Uncle Jim would sit in this chair and listen to Professor Graham entertain visitors.

Q: What would you like the readers to know about your great-grandfather and the Graham family?

A: My family members described Professor Graham as a remarkable man whose interest in nutrition has been continued down through the generations. Several of my family members have been involved in the animal and human food and nutrition fields. Professor Graham’s son, Richard, worked in R&D (eventually becoming a VP) at Quaker Oats in Chicago. James Welch learned a lot of about raising chickens from his grandfather and kept a small flock of chickens for decades as a hobby. He was also given encouragement during a time in his life when school was a bit trying for him. He attributes this encouragement to helping him in his professional endeavors. He became a successful and well-respected professor in animal nutrition at the University of Vermont. My mother developed an interest in human nutrition and became a registered dietician. My cousin, Kate Welch, did research on chick starter diets to obtain her PhD. This was very close to what Professor Graham had worked on in Guelph. In addition to chick nutrition, his research helped scientists at the Hospital for Sick Children in Toronto to formulate Pablum, a popular infant cereal, by replicating his formula for chick starter rations.

The USA and Canadian Branchesof the WPSA jointly sponsoredthe annual WPSA lecture heldduring the 2017 PSA AnnualMeeting in July. The speaker was Kevin Wellsof the University of Missouri presenting the topic, “History and future of genetically engineered food animal regulation.” His presentation was both very informative and challenging to all in attendance. His core message was that genetic engi-neering in food animals is coming and the poultry industry is significantly behind the times in preparation for this new technology that was initiated in the 1970s. His thorough and extensive review of the history of genetic engineering set the stage for outlining the challenges that will be faced by the industry.

Also, during the 2017 PSA Annual Meeting, the USA and Canadian Branches hosted a joint annual luncheon promot-ing fellowship and interaction between the branches.

The USA Branch conducted its annual business meeting in Orlando, with a majority of the board members present. Key topics discussed were a review of the financial reports, dis-cussion of the the under-utilization of the travel grant pro-gram, and discussion about opportunities to expand mem-bership and retain student members. The USA Branch also made a brief presentation during the annual PSA business meeting highlighting the leadership of WPSA and the USA branch, benefits for WPSA membership and recent WPSA activities.
