Upon arrival at the entrance to the restaurant, you’ll understand the meaning of ‘Sala Bua’. A Thai sala is set in the middle of a ‘bua’ (lotus) pond. If this isn’t enough, the highlight is really the breathtaking sea view with 150 seats between the outdoor terrace and elegant indoor area decorated in a modern Thai style.

A dining experience at Sala Bua is always memorable with fresh sea breezes and the sound of waves lapping against the shore. The restaurant comes to life with a Filipino band.

There are many great starters to whet your appetite. The Pan Seared Foie Gras on yellow Thai mango and balsamic glaze is impressive with its classic simplicity in presentation. The foie gras (translates to ‘fatty liver’) is soft and tangy with a unique texture carefully balanced by the sweet of mango.

Baked Tasmanian Salmon Fillet with bok choy and light soy sauce is rich and nutritious nestled beautifully on a colorful platter. Tasmanian fresh salmon is wild salmon imported from Australia. The moist fish is excellently combined with fresh Asian bok choy and homemade light soy sauce.

Grilled Beef Tenderloin with Horseradish Mashed Potato, Mushroom, Arugula & Barolo Sauce is a special main dish. Beef tenderloin is an extremely tender cut from the center loin and methods of cooking make for different tastes.

Chef Dirk creates a flawless dish with mashed potatoes, the slight bitter of a typical arugula Mediterranean salad, and red wine sauce of Barolo – a warm and caressing wine of Italy. The Grilled Beef Tenderloin is exceptionally juicy and well complemented with warm mashed potatoes.

• Phuket Lobster Thermidor is a rich dish you are sure to love. The grilled lobster is cooked precisely and removed from the shell. The sweet, firm 700 grams of lobster flesh is topped with cheese and Thermidor sauce and served with butter fried rice, garlic bread and grilled corn. Heavenly!

As you pass by the racks of fresh seafood on ice and in tanks lining the beachfront at Patong, you may wonder where all these juicy prawns, big lobsters, fresh oysters and lively fish are coming from – and if they are ever going to run out.

True, one of the best things about Phuket is the incredible – and affordable – seafood. Foreign and domestic tourists alike flock to restaurants to chow down on heaping servings of shrimp, fish, clams, oysters, squid, crabs and much more – eating unbelievable amounts and washing it all down with the local Singha or Chang, or even imported wines in the more upscale places.

In fact, much of this seafood is now farmed right offshore, ensuring that next year when you return to holiday here, you will still be able to eat your favourite seafood dishes at an affordable rate. Aquaculture farms ensure that the prawns are getting bigger, not smaller – and that you can have once-seasonal treats like soft-shell crab, year round.

Phuket Sus ta inab le Seafood There is even abalone farming on Koh Siray, complete with a restaurant where you can enjoy this delicious treat cooked to perfection. Abalone is horrendously expensive in most of the world and this farm ships to Japan and Taiwan; the locally eaten abalone is affordable and if you’ve not tried it, this is the best place to do so.

Thailand is in fact, one of the largest producers and exporters of farmed shrimp, and even though a lot of the shrimp you see being raised offshore goes onto your holiday dinner plate – much more of it is being shipped overseas. In fact, countries like the USA rely on farming from Thailand and other countries for at least 30 per cent of their seafood.

Although soft-shelled crabs are not farmed in Phuket, they are raised just north of here, in Ranong province – and exported to the USA and other destinations around the world. A rare delight for most Westerners, they are best tried for the first time fried with pepper and garlic, and are available at most seafood restaurants in Phuket.

Experts agree that farmed seafood can be better for you – in that at least you know what it has been fed and the cleanliness of the environment. Many people believe farmed seafood also tastes better; it’s definitely fresher as it doesn’t spend as much time travelling from the water to the plate as caught seafood.

Unfortunately unregulated seafood farming can be more detrimental than beneficial to the environment. Take for instance shrimp farms, which can become toxic and abandoned within a few years, leaving the area so damaged no other farming can be done there.

In some areas the farmed seafood is plied with antibiotics to keep it clean and healthy – but all traces should be gone by the time it is harvested. Even if you have an allergy to antibiotics (sulphonamide, tetracycline or penicillin), you should still be fine eating seafood in normal amounts. In general though, the seafood on Phuket is clean and fresh enough for export to the West – and you should have no problem consuming it.

On a good note, the Thai government has recognised the environmental problems of seafood farming and has already implemented many regulations to ensure that seafood farming moves in the right direction to provide sustainable seafood for Thailand and other parts of the world, as well as protect the country’s natural resources and environment.

If you have trouble deciding how you want your Phuket lobster, king prawns, soft-shell crab, oysters or fish cooked, then consider trying them in a Thai style that you probably wouldn’t get somewhere else. For instance, try shrimp in tom yum or as Thai spicy fried shrimp cakes; have your fish in green curry or steamed with lemon; eat your cuttlefish fried with garlic and pepper; or have your crab legs steamed and served with hot chilli sauce. No matter how you choose to have your seafood cooked, you can rest assured that Phuket’s chefs are professionals when it comes to bringing out the best in seafood.
