Agnolotti with young peas, broad beans,

mint, marjoram and sariette de banon

Pickled and charred fennel salad,

smoked mackerel, dill crème fraîche and cucumber

‘Steak tartare’

with nasturtiums and Manni olive oil

wrapped in kombu, sesame

with shiitake mushrooms and grilled onion

Côte de porc with coco de Paimpol,

Morteau sausage, grain mustard and apple

Roast poussin

with girolles, wild asparagus,

black garlic and ‘livers on toast’

with lime and rum granité, cocoa nibs

Strawberry custard tart

with honey and lavender ice cream
