Creating Custom Variations of Rich’s Bread ProductsEncrusted Variations:1) After aging and before proofing bread dough brush in a oil based mixture (pesto, herb oil, flavored oils, etc.).2) Roll flavored dough in a 50/50 cornmeal and flour mixture. 3) Place on sheet tray, cover with film and proof until doubled in size.4) Uncover and bake at 325-350 F with low fan until golden brown.

Honey Oat or Maple Oat Variations:1) After aging and before proofing bread dough, spray dough with butter-flavored pan spray, brush dough with honey or maple syrup, then roll in oats.2) Place on sheet tray, cover with film and proof until doubled in size.3) Uncover and bake at 325-350 F with low fan until golden brown.

Seasoned Variations:1) After aging and before proofing bread dough, brush dough with oil or butter flavored Pan Spray.2) Sprinkle on seasoning blend of choice (Blackening, Italian, Montreal Steak, BBQ, Jamaican Jerk, etc.).3) Place on sheet tray, cover with film and proof until doubled in size.4) Uncover and bake at 325-350 F with low fan until golden brown.

Pretzel Roll:1) Mix 5 oz. water, 5 oz. liquid egg and 2 tablespoons baking soda.2) Brush on the roll prior to proofing and score just before baking.

Creating Custom Variations… BreadCheeses, sautéed onions, mushrooms, peppers, fresh herbs, roasted garlic, etc. can be sprinkled on top of or folded into the dough prior to proofing and baking. This gives an extra value and added possibility to these rolls.

After baking and cooling, the finished product can be brushed with any oil or sprayed with butter flavored pan spray on the bottom side of the product and then flash grilled for 10 seconds or less. This will add a nice smoky flavor and char marks to the finished product giving it added value and high desirability among customers. This can also be done a la carte to warm and refresh the roll for immediate preparation and serving.

Pizza dough can be used for more than just

Quarter the dough and use it for different, customizable items such as:• Breadsticks• Twists • Garlic knots• Calzones• Strombolis• Lavash

Regular pizza toppings can also be used as fillings for a Calzone or Stromboli.Use Italian Seasoning and Parmesan cheese

to flavor and serve with Marinara.
