At the heart of the Gulfood Manufacturing business proposi-tion is Dubai’s strategic position as a recognised manufacturing and logistics gateway between East and West and the primary re-export hub to emerging countries and economies across MEASA. Despite its vast trading potential, the GCC remains largely depend-ent upon food imports with more than 75% of consumption being imported according to Alpen Capital’s 2015 GCC Food Industry Report. Securing a steady supply of food remains a key challenge for GCC governments.

With GCC food imports fore-cast to reach US$53.1 billion by 2020 according to a report by the Economist Intelligence Unit, Gulfood Manufacturing will reverse the ‘finished foods’ focus of February’s annual Gulfood showcase and, instead, highlight the region’s ripe business poten-tial as a leading international manufacturing and processing hub to serve both domestic and international demand.

High-tech production processes are enabling continued growth in the Middle East’s soft drinks sector, so Italian company A DUE, which specialises in automated systems for carbonated and still soft drinks, is showcasing its equipment and solutions at Gulfood Manufacturing.

“The exhibition is considered a key appointment for our company, which relies on the greater Middle East as one of our most active regions – approximately 20% of A DUE’s turnover is generated in the region,” said the company’s com-mercial director, Gianluca Catellani.

A DUE counts among its cus-tomers some of the biggest names in beverage production, Catellani added: “The latest generation of continuous sugar dissolver, made for a Coca Cola installation, will be shown on the A DUE booth.”

In addition to designing and con-structing the systems, A DUE directly handles the installation, start-up and testing at the customer’s premises, as well as providing comprehensive

Hydrosol, a leading international supplier of stabilising systems, is presenting several new products at this year’s Gulfood Manufacturing, including functional systems for cheese products and recombined alternatives, as well as all-in com-pounds for flavoured milk drinks. For the meat industry, the company also offers stabilising systems for the low-cost production of poul-try products, as well as all-in com-pounds for manufacturing vegetar-ian and vegan products. Visitors to the show can learn about the ben-efits of the various formulations.

Among the new products in Hydrosol’s portfolio are customised ingredients for processed cheese products, as well as recombined alternatives to white cheese, pro-

cessed cheese and mozzarella. With these stabilising systems, production is economical and the final products have the desired flavour, consistency and processing properties.

The new all-in compounds for fla-voured milk drinks ensure simple and reliable production. The com-pounds contain hydrocolloids, emul-sifiers and a range of flavourings, from vanilla and cocoa to banana, mango and orange, to nutty, spicy notes like almond and cardamom. Hydrosol also offers industry-proven stabilising systems for making Greek yogurt and labneh.

The stabilising systems Hydrosol offers for poultry products are cen-tred on solutions for reducing the costs of making poultry sausages. In addition to reducing the amount

of meat without sacrificing quality, this also means developing custom-tailored formulations that are suit-able for processes like co-extrusion with edible, alginate-based casings.

The company also offers solutions for halal products, such as com-pounds for emulsifying vegetable oil in cooked sausages or for making diceable fat analogues.

To meet the growing demand for vegetarian and vegan products, Hydrosol has developed the new HydroTOP Vegan all-in compound. HIGHLIGHTSINGREDIS INTRODUCES NEW AGAVE SYRUPWith growing demand for organic and natural ingredients, the Ingredis brand, a trade-mark of Integrated Packaging Systems (IPS), is striving to develop healthier products. Flowcrete achieves HACCP certification

Global resin flooring manufac-turer Flowcrete Group has secured international Hazard Analysis and Critical Control Point (HACCP) cer-tification for its Flowfresh range of antimicrobial-enhanced polyure-thane floors.

This certification means that food and beverage producers operating an HACCP-based food safety pro-gramme can specify flooring mate-rials, safe in the knowledge that they will meet the relevant regula-tory authority’s standards for safe procurement, production and pro-cessing, as well as the requirements of the world’s leading quality and food safety standards.

HACCP certification is a glob-ally recognised benchmark of food safety, and as such is an important set of criteria for businesses eager to gain access to lucrative export mar-kets. Flowfresh has also been prov-en to meet the ISO 22196 standard, which measures a surface’s antibac-terial effectiveness.

Flowcrete Group’s technical director, Grant Adamson, said: “Our polyurethane range has been able to achieve the HACCP International certification thanks to its ability to deliver a long list of strict food industry flooring requirements.

“To provide food manufactur-ers with a floor that goes above

and beyond the highest food safety standards, we’ve created Flowfresh out of an exclusive global part-nership with the antimicrobials manufacturer Polygiene. A silver-ion based bactericidal additive is added into the Flowfresh material, empowering the floor finish with the ability to eliminate up to 99.9% of bacteria in contact with the coat-ing.”

The Polygiene agent is homog-enously distributed throughout the Flowfresh finish. A Flowfresh coat-ing can be laid to falls and incor-porate stainless steel drainage to effectively channel contaminants and excess liquid out of the area.

IWM SHOWCASES ITS RANGE OF SPECIALISED PRODUCTSIndustrial Washing Machines Limited (IWM) is showcasing a spe-cialised date and vegetable basket washer at the trade show.

The T200 date and vegetable bas-ket washer is smaller than similar washers and its design is based on IWM’s popular T200 washer. This specialised version benefits from enhanced pumps that spray high-pressure water jets, and additional heating capacity, ideal for removing tough, sticky residues.

Sustained jetting with hot water, re-circulated from a heated wash tank, powered by a 5kW pump, ensures sanitation of the trays. The T200 is also water and energy effi-cient, as well as maximising the use of detergent if required.

In addition, the T200 date tray washer is designed to suit very low or intermittent throughputs, or areas where operational space is minimal, and requires just a single operator.

The T200 can accommodate up to 200 trays, crates or boxes per hour. Due to its small size, the machine is delivered fully assem-bled, ready to be plugged in to a manufacturing line.

“The T200 date tray washer is a bespoke machine developed with the fruit and vegetable processing industry in mind”, explained Carl Hollier, managing director at IWM.

“We understand the challenges manufacturers face and their need for dependable and repeatable washing and sanitising. If sanitis-ing is done manually, one operator can wash about 200 trays per day. Our machine can sanitise 200 trays or baskets per hour. Therefore, it is a pleasure to be able to unveil our newest model at this year's Gulfood trade show”

IWM is also exhibiting the SAN100e range of sanitising tun-nels on this year’s show. Customers can chose from 10 standard models, including a new low-cost entry-lev-el machine, thereby ensuring that there is a model that accurately matches the requirements and budget of virtually every user.

Multi-sensory experiences from Doehler

For Doehler Middle East, technol-ogy is at the forefront at this year's exhibition. The German company, which is active in more than 130 countries and has 26 production sites, provides advice for its custom-ers on food safety and microbiology, food law, and what it calls “Sensory and Consumer Science”, and puts the multi-sensory experience at the heart of all its product development.

“The company introduces ingre-dient solutions that fulfil the tech-nological requirements of spe-cific applications, and harmoni-ously appeal to all the senses in

the final product,” said Shashank Vengsarkar, managing director of Doehler Middle East.

Doehler’s strategic approach to innovation comprises market intel-ligence, trend monitoring, and the development of products and product applications. At the exhibi-tion, the focus is on cereal ingre-dients, which optimise the sensory and nutritional properties of baked goods and confectionery, according to Vengsarkar.

Granulates, bakery products, and food ingredients such as cream, yoghurt and fat powders, are also included in its range.

Perfect pizzas with Heraeus NoblelightAn infra-red cheese grilling oven from Heraeus Noblelight has helped Food Point of Dubai to solve an in-flight house-keeping problem as airlines strive to meet passenger demand for pizza snacks on-board. By pre-grilling and browning pre-pared slices in Food Point’s food production facility, the packaged slices can now be baked on-board the aircraft in the minimum of time without burning the bread base. A light crisp texture is achieved in only 15 minutes in the dedicated aircraft ovens.

Dubai-based Food Point, 90% owned by Emirate Airlines Group, has the only food production facil-ity of its kind between Europe and the Far East, and produces meals to be served on all Emirates Airline flights, as well supplying other commercial carriers and non-airline customers. Its 10,000m2

facility has a capacity of 80 million meal equivalents per year.

Pizza slices have become increas-ingly popular in-flight snack during the ultra-long haul routes to the US and Australasia, but without being pre-baked, the cooking time for the 120g pizzas would result in either undercooked cheese, or a burnt bread base.

To solve the problem, Food Point contacted Heraeus and the company sent an infra-red test unit out to Dubai for trials. The units were successful both in melt-ing the cheese satisfactorily and in improving the overall appear-ance of the pizza, and as a result, a full-scale oven was ordered and retrofitted at Food Point’s facility. The oven features six 2.3kW car-bon medium wave emitters, with a total power of 13.8kW. It has been designed for a throughput of 1500

pizza slices per hour, and has been coupled up with a cryogenic freez-ing system, capable of achieving a -18˚C core temperature in seven minutes, straight from the infra-red oven.

“The infra-red oven has helped to ensure the high quality of our food products, right up to point of use,” commented Steve Carlyon, senior operations manager at Food Point.

“Its introduction into our pro-duction line, from pre-production tests to final installation and com-missioning has been easy and seam-less. As a Halal-certified producer, Food Point product is in demand throughout the Middle East and enquiries for client bespoke solu-tions such as pizzas are on the increase. We required a quick turn-around and Heraeus turned out to be the perfect partner.”

essential benchmarks, and Gulfood Manufacturing provides a valuable platform for businesses in the industry to highlight and showcase their capabilities, codes of conduct, and product development mapped against these food safety standards,” says Trixie LohMirmand, senior vice president, Exhibitions and Events Division, DWTC.

The region’s high reliance on imports and unprecedented population growth have led governments to encourage domestic and local food production. At the same time, a growing base of expatriates and educated young consumers is driving the need for accurate information about food quality, ingredients, and nutrition and standards, to give consumers confidence that products are following international safety and quality standards.

Reliability through regulationWith food safety declared a top government priority, the UAE Federal National Council earlier this year passed a tough new federal law on food safety, to be enforced in all UAE territories. The 21-article bill regulates food production both inside the country and from imports, and aims to tighten control on the food supply chain by using interna-tional best practices.

At the same time, according to the Alpen Capital Report 2015, the UAE government is working on the launch of a uniform system, Rapid Alert System for Food and Feed, meant to improve and standardise food recall processes across the country – a system similar to that implemented in the European Union.

Both globalisation and the intensification of food trade and agriculture are driving increasing awareness for standardisation of food safety and quality practices at local, regional and global levels, which is key for con-sumer protection, food trade and economic development. Countries such as the UAE are taking the lead in advancing international food safety standards across the region, which will have a positive impact not only on consumer confidence, but on the region’s overall competitiveness and food security ranking.

Underscoring the unprecedented emphasis on food safety at a global level, the US Food and Drug Administration (FDA) last month took one of the most significant steps in decades to prevent foodborne illness by finalising the first two of seven major rules under the bipartisan FDA Food Safety Modernization Act (FSMA). This the first step in putting greater emphasis on the prevention of foodborne illness, holding import-ed food to the same food safety standard as domestically produced food, and developing a nationally-integrated food safety system in partnership with state and local authorities.

Another signal that food safety is a major concern at a global level is the revision of the ISO 22000 currently underway, addressing the food safety management system, with the draft version available for purchase from mid-2016. The final version, expected to be ready in early 2017, will address several key concepts that need further clarification and simplify standards, making it more coherent and easier to use.

The knowledge and resources provided by an event the stature of Gulfood Manufacturing are essential for policy-makers and companies that are looking to explore the latest innovations to boost return on investment, streamline business processes, and evolve business models while at the same time maintaining high safety standards and avoiding food safety related incidents that could have a devastating impact on business and public health.
