For added creaminess, try adding a scoop of greek yogurt!

vita daicquiriBlend:1.5 oz. Vita Coco Coconut Water1.5 oz. White Rum (or coconut rum)0.5 oz. fresh lime juice1 tsp. Agave nectar

Shake ingredients well with ice and strain into a chilled martini glass. Garnish with lime.

coco mojitoBlend:2.5 oz. Vita Coco Coconut Water1.5 oz. rum4-5 mint leaves3 lime wedges

Muddle together the sugar, mint leaves, and lime wedges in a tall glass. Add ice, pour in the rum, and top with Vita Coco. Stir well. Garnish with lime wedge.

sweet potato chipsMakes 4 ServingsIngredients: • 2-3 tbsp. Vita Coco Coconut Oil• 2-3 large sweet potatoes sliced 1/8 – 1/4 inch thick, with skin or without • 2-3 tsp. spices (combination of choice garlic powder, onion powder, etc.)• salt to taste

Directions:1. Preheat oven to 350 degrees F, 2. Take the sliced sweet potatoes and toss in a bowl with 1 tbsp. of melted Vita Coco Coconut Oil, seasoning with the spices, 3. In an oven safe sauté pan, heat over medium heat then add the 2 tbsp. of Vita Coco Coconut Oil and, working in batches, cook the sweet potatoes on either side until they begin to take on some color, 4. Transfer to the oven and bake for 12 minutes, or until they are cooked throughout. Remove from oven and place in a dish – serve warm.

lettuce cupsMakes 4 ServingsIngredients: • 2 tbsp. Vita Coco Coconut Oil• 1 inch piece of fresh ginger, minced • 3 garlic cloves, minced• 3 chicken breasts, cut into thin strips• 1/2 tsp. crushed red pepper • 1 organic green pepper, diced • 1/2 pack button mushrooms (or to taste), diced • 4 organic scallions (green onions) sliced, greens and whites • 2 tbsp. gluten free tamari • salt to taste • 1 head of bibb lettuce, leaves detached, rinsed, and dried

Directions:1. Heat up the Vita Coco Coconut Oil in a skillet and add the ginger and garlic. Sauté for a few minutes, 2. Add chicken and crushed red pepper and cook 5-7 minutes or until cooked through , 3. Add green bell pepper and mushrooms and sauté a 2-3 more minutes. (Optional: If you like your vegetables cooked more, add them in before the chicken), 4. Add the scallion in last with the tamari, 5. Serve in lettuce leaves (as a cup or wrap).

no bake barsMakes 18 BarsIngredients: • 1/2 cup Vita Coco Coconut Oil• 1 cup unsweetened peanut butter• 1/2 cup honey• 2 cups rolled oats• 1-1/4 cups dark or semisweet chocolate chips• 1 cup unsweetened shredded coconut• 1/2 cup chopped salted almonds

Directions:1. Grease a 9 x 13 baking dish or spray with nonstick cooking spray or line with parchment paper, 2. In a medium saucepan, heat the peanut butter, honey and Vita Coco Coconut Oil over medium-low heat until smooth and well-combined. Then remove from heat, 3. Stir in the remaining ingredients, mixing well until the chocolate chips are completely melted, 4. Pour the mixture into the prepared pan. Before chilling, sprinkle cocoa nibs on top for texture, 5. Refrigerate until the bars are firm. Cut into squares. Store the bars in an airtight container in the refrigerator.

coconut PROtein pancakes hot wingsMakes X ServingsIngredients: • 1/2 cup Vita Coco Coconut Oil• 1/2 cup hot sauce• 2 tsp. garlic powder• 1 tbsp. white vinegar• 1/3 cup melted butter• 2 1/2 lbs. chicken wings

Directions:1. Preheat oven to 325 degrees F, 2. Combine all wet and dry ingredients together, 3. Coat wings with mixture, 4. Bake for 50-60 minutes.

Makes 4-6 PancakesIngredients: • 2 cups rolled oats• 1 scoop protein powder• 2 teaspoons baking powder• 1/4 teaspoon cinnamon• 3/4 cup egg whites• 3/4 cup almond milk• 2 tbsp. unsweetened applesauce• 2 tbsp. coconut oil + more for greasing

Directions:1. In a food processor or high powered blender, process the oats until they are finely ground with a flour-like consistency, 2. Place all the dry ingredients into a large bowl and mix together, 3. Add all the wet ingredients and whisk until smooth, 4. Heat a large griddle or skillet over medium-high heat and grease with coconut oil, 5. Pour about 1/4 cup of batter into the skillet and let cook until small bubbles begin to surface and the undersides are golden brown, about 2 minutes on each side, 6. Serve warm with blueberries and honey drizzle on top.
