Blue Cheese Vegetable Dip

INGREDIENTS:

• 18oz.containerofsourcream• 1smallpackageofbluecheese• Dashofsalt• Dashofpepper• Dashofgarlicsalt• Dashofcelerysalt

BRING IT TO LIFE

1. Add all of the ingredients in a bowl and stir until well combined.

2. Cover the bowl and refrigerate until ready to serve.

Peanut Hummus and VegetablesServes: 8Preparation time: 30-45 minutes

INGREDIENTS:

• 1-16oz.cangarbanzobeans,rinsed, drained• ¼cupfreshlemonjuice• 1/3cupnatural,creamy,reducedfat peanut butter• 1/8teaspoonblackpepper• ½bunchparsley,finelychopped (approximately 5 sprigs)• ½cupjalapeñopepper,seededand finely chopped• 1clovegarlic,finelychopped• 2cupscarrotsticks• 2cupscelerysticks

BRING IT TO LIFE

1. In a food processor, puree the garbanzo beansandlemonjuice,inbatches,untilsmooth.

2. Add some water if the mixture is too thick; process until smooth.

3. Transfer to a large bowl.

4. Stir in the peanut butter and season with pepper. Stir in a little water to thin the hummus, if necessary.

To make the topping: In a small bowl, combine thechoppedparsley,jalapeño,andgarlic.Spoonthe hummus into a serving dish and sprinkle the topping over. Serve the carrot sticks and celery sticks alongside. Each serving provides: An excellent source of vitamins A and C, and a good source of folate, magnesium and fiber.

Roasted Dandy® Celery with Blue CheeseInspired by Redbook’s Roasted Celery and Blue Cheese.Serves: 6Total Time: 50 minPrep Time: 15 min

INGREDIENTS:

• 3Dandy® celery hearts, trimmed and halved lengthwise• 1cupDandy® celery, diced• 2tbls.extra-virginoliveoil• 11/2tbls.honey• 11/2cupsapplejuice• ½cupdrywhitewine• 5oz.bluecheese,crumbled• 1/4cupswalnuts,toastedandchopped• 1/4cupsfreshparsleyleaves,chopped• Salt• Pepper,freshlyground

BRING IT TO LIFE1. Preheat oven to 450° F. Bring a large pot of salted

water to a boil and then add the celery halves, making sure they are covered with water. Wait three minutes and then strain and transfer the celerytoajellyrollpanorshallowbakingdish.

2. Pourapplejuiceandwineintothebottomofthepan and drizzle the oil and honey over the celery. Season the celery with salt and roast about 25 minutes.

3. While celery is roasting, combine diced celery, blue cheese, walnuts, and parsley in a small bowl and season with pepper to taste.

4. When the celery has begun to brown, transfer the stalks to a platter and cover partially with foil to keepwarm.Pourtheexcessroastingjuicesintoa small saucepan and reduce over medium-high heat for 10 to 15 minutes, or until thickened.

5. Spoon blue cheese mixture over celery, drizzle with reduced braising liquid, and serve.

BRING IT TO LIFE1. Marinate your chicken breast overnight in an

Asian-style marinade.

2. Bake the marinated chicken breast at 385 degrees F for 25 minutes (or until fully cooked) and then let rest for 10 minutes before you dice them into small pieces.

3. Cut your Dandy® celery stalks in half along the wait to create small 2-inch sticks.

4. In a large mixing bowl, add the chicken, Greek yogurt, cilantro, and ginger, and then mix until fully blended.

5. Spoon the mixture across the top of each celery stick, and then top with almonds before serving.

6. Serve immediately.
