“If you build it they will come…” A famous line from Field of Dreams, but it holds so much truth and hope in one sentence that it has become iconic. As the Editor of Stimuli magazine Chilliwack, this has been my mantra since the beginning. This undertaking has been years in the making, even if Maryanne, our Editor-in-Chief, and I didn’t fully realize it. I have watched her grow from the moment I met her and was there with her when she took her leap of faith going on six years ago now. Stimuli magazine was born of an idea and a whole lot of hardwork and dedication. At the time I didn’t realize the significance of helping her name her business and how the universe would bring it back to me full circle. But here I am, in this city I love, launching our inaugural print edition as the Editor of something I have had personal experience with as a retailer, supporter and now an intricate part of its success.

I am so excited about the launch of this magazine here in Chilliwack. A city I love with people that are hard working, dedicated and authentic. My hope for this magazine is that it provides a positive experience for all who come across it. To me, Stimuli is more than just a magazine, it is a place where we can all gather and enjoy this beautiful city together.

I will work hard to make sure it encapsulates who we are in the valley and everything that makes us unique.

CHURCH & STATE 2012 TREBELLA - $19.90With a change in season I have chosen a wine that transitions well into cooler weather and of course, Thanksgiving. I hope you enjoy my Fall Wine Pick this edition.

Vibrant yellow and straw in colour, this wine offers a complex aroma of lemon crème, acacia flowers, nectarine, green apple, vanilla and toast, stone fruit and minerals.

On the palate, the flavours are framed in a smooth creamy feel that is rich and fat. Additional flavours of yeast, honey and lanolin can be found along with notes of smoky oak and peppery spice.

in North America, for their clients. The hard work and dedication to their trade is evident with the product knowledge and honest answers Jim, Colette and their family provide their customers. An authorized La-Z-Boy dealer for over 32 years, the Ballam family’s commitment to excellence is evident in everything they do. Nicole, Jim and Colette’s daughter who is now working along side her dad at Ballam Furniture says it best, “Everything the downtown stores have we have. There is no need to leave Chilliwack to look for quality or unique pieces. We rival the trendy Vancouver stores and with a smaller overhead and no sales staff we are always the more affordable choice.”

With years of experience in home furnishing and strong relationships built with suppliers it made sense for the Ballam family to branch out and open The Bedroom Gallery. Just a few doors down from the original Ballam Furniture Gallery, the new store has the same feel and ideals that drive their furniture business; a commitment to quality and a

Walking into Ballam Furniture Gallery is like going to visit old friends. I imagine walking in for the first time 30 years ago it would have been much the same. The Ballam family has a unique knack of putting you at ease and making you feel right at home. With a relaxed sales mantra that Jim Ballam, the current family matriarch, openly admits to, you don’t feel any pressure. Jim’s father taught him the importance of customer service and a quality customer experience every time. It is a lesson well learned and executed by the Ballam family as their customers return again and again. Jim and Colette agree, “The biggest compliment we can get from a customer is their repeat business and that is our goal each and every time we help people make home furnishing decisions.”

Ballam Furniture Gallery has created a loyal customer base with quality service and products; a place you can feel confident in knowing they have your best interest in mind and have worked hard to source out quality product, often made

focus on North American made products. One thing that has always been important to the Ballam family is that you deal with family when you deal with them. Putting Ryan, Jim and Colette’s son, at the Bedroom Gallery is the only way they felt they could continue that tradition. Ryan, following in his family’s footsteps, understands the importance of the Ballam traditions and you can tell that he has worked hard to follow his father’s lead and build on the foundation of customer service excellence. Ryan also brings a new perspective and a younger vibe to the store, offering a forward-thinking edge with a traditional twist.

For over 60 years the Ballam family has serviced Chilliwack and built strong relationships with this community. They have seen some changes over the years but one thing has stayed the same, their time-honoured family traditions. “It is a privilege to have been born and raised in this city and have the trust of our customers time and time again,” says Jim. It is a lesson taught many years ago by J. Ballam Sr. and has been passed down through the generations as we see Ryan and Nicole stepping into their perspective roles. The community of Chilliwack can expect to see Ballam Furniture Gallery and The Bedroom Gallery for many years yet to come.

ingredientsPastry:3 cups all purpose flour2 tsp sea salt1/2 cup unsalted butter, chilled,

cut into cubes1/2 cup vegetable shortening,

cubed1/2 cup ice waterMore flour for dusting & rolling

Filling:6 strips bacon, cut into chunks2 Tbsp olive oil1.5 lbs sirloin steak, cut into

bite-sized chunks2 Tbsp all purpose flour1 medium onion, diced4 cloves garlic, smashed1 carrot, sliced2 stalks celery, diced12 small new potatoes, cut in half12 white or cremini mushrooms,

cut into quartersSmall handful each: fresh rosemary

and thyme, chopped3 small bay leaves1 398ml can diced tomatoes2 Tbsp tomato paste3 Tbsp Worcestershire sauce1 650ml bottle Stout beer (not

bitters)1.5 cups organic beef brothSalt & pepper to taste

DirectionsFor the pastry: In a food processor, combine flour and salt and pulse until combined. Add chilled butter and shortening and pulse until mixture resembles rough pea-sized crumbs. Turn mixture out onto floured counter and sprinkle with ice water. Mix dough together with a fork, press into a disc shape, wrap in plastic, and refrigerate for at least an hour. Remove dough from refrigerator about a half hour before you will roll it out.

For the filling: In a large dutch oven style pot, cook bacon on medium heat until cooked. Remove bacon to drain on paper towels, pour out bacon fat but reserve 1 tablespoon in the pot. Add 1 tablespoon olive oil to the bacon fat. Roll steak chunks in flour until lightly coated and over medium heat, lightly brown chunks of steak, a few at a time. Remove steak chunks to a plate; repeat with remaining steak chunks.

Add remaining 1 tablespoon of olive oil to pot and add onion and garlic, cooking until soft and translucent, about 5 minutes. Add carrot, celery, and potatoes, and cook for another 5 minutes. Add back the steak and bacon, and add mushrooms, herbs, diced tomatoes, tomato paste, Worcestershire sauce, beer and broth. Increase heat until bubbling, then reduce heat to low. Simmer gently for 1.5–2.5 hours or until meat is tender, vegetables are cooked, and sauce is thickened. Remove from heat.

To assemble and bake: Pre-heat oven to 375° F. Remove bay leaves and pour filling into a pot or pan. Sprinkle your counter with flour, and roll out pastry dough to about 1/8" thickness. Gently cover pot or pan with pastry. Cut off excess pastry, leaving about 2" of overhang. Roll and crimp up excess pastry around edge of pot to seal in the filling.

Bake for about 45-55 minutes, when pastry is browned and filling is bubbling. Let cool for about 15 minutes before serving. Enjoy!
