“Extraordinary Measures”, two leading actors, one powerful messageReview by Stan Robinson Admittedly, movies that are based on or inspired by true stories, or events, have a way of settling in to our psyche. The mesmerizing perfor-mances of Brendan Fraser and Har-rison Ford as two men with conflicting views and opposites in professions, and distinctly different personality types, are striving for common ground in the pursuit of a common goal, for
different reasons. As regular readers know, I’m fond of ‘taglines’. Some are very intuitive on providing multi-layered insight for an overall theme of a film. “Don’t hope for a miracle. Make one.” is the tagline for “Extraordinary Measures”. Inspired by a true story, this drama centers on the efforts of John and Aileen Crowley (Brendan Fraser and Keri Russell). John is a high-powered senior executive with acute skills at understanding and delivering presen-tations for closing those big corporate deals. Two of their children have a rare genetic disorder with no hope of longevity for them.
John has applied the same ethics for research of his professional life to knowing everything he can about the genetic disorder. He learns of the research of Dr. Robert Stonehill (Har-rison Ford). A meeting reveals to John that the doctor is so involved in the research to prove his theory for a cure that he’s buried the human aspect of the disorder. And in turn, the doc-tor feels that John is too emotion-ally involved (since his children are affected) to understand his point of view, creating a distinctive impasse between them. The two men’s per-sonality types are as different as night and day, with neither one willing, at the onset, to appreciate the perspec-tive of the other, as they both have the common goal as a driving force, find a cure. With powerful performances by Brendan Fraser and Harrison Ford, along with exceptional portrayals by the young actors as the children, and an insight in to the aspects of a genetic disorder most of us know little about, the tagline of “Don’t hope for a miracle. Through the ages, it has been a common belief that wine is the best beverage to match
with food. There is a belief that it enhances the food experience far beyond any other drink. However, a more modern school of thought holds that beer, in fact, is the superior beverage to pair with meals. Beer can be the perfect complement to a meal, while wine can sometimes overwhelm the palate. Virtually every cuisine can be enhanced by pairing the proper beers with it.
There are no traditional, fi rm rules about pairing food and beer. The biggest rule is that there are no rules, although some guidelines do exist to help you fi nd the best pairing. Hoppy beers generally pair well with heartier foods. Spicy foods, such as good Mexican fare, go great with a nice IPA. The hops stand up well to the spice and help prepare the palate for the next bite. Of course, complementary fl avors always do nicely (sweet with sweet), but so do contrasting fl avors. If you can’t get past the idea of wine as a food pairing, you can look at the more full-bodied ales as red wines, and the cleaner, crisper lagers as white wines. Hoppier beers tend to equate to a more acidic wine and would be used in place of those.
In the same way wine can be incorporated into the cooking process, so to can beer. There are many great recipes out there that include beer, and it gives you a ready made beer to drink with the dish. For those of you ready to step beyond the traditional beer and pizza and explore a little bit, let’s take a look at some interesting Belgian beers and some possible pairings. Belgian beers are known for their complexity and fl avors, consequently they pair well with a variety of foods.
The Belgian beer culture arose much the way the wine culture did in France or Italy. Much like these two countries, production was often done on an individual basis. Many of these in-home producers were family farms where the beer was brewed for the family as well as any workers. Traditional farmhouse ales are known as saisons and are now brewed in the French speaking portion of the country. The most well known of these beers is Saison Dupont, which is still brewed on a working farm. Of course, a beer like this goes well with farm style foods, sausage, root vegetables and the like. But to really appreciate it, try it with peppery foods, steak au poivre, Cajun, Vietnamese, and for a great cheese pairing, aged Gouda. Really, with the exception of desserts and tomato-based sauces, this beer will pair well with anything. It might be the ultimate food beer.
Tripel Karmeliet from Bosteels Brewery is a nice Belgian Tripel with a pleasing fl avor and a subtle complexity. Made from barley, wheat and oats, the beer provides a combination of spicy and creamy with a hint of sweetness. All of this

makes Tripel Karmeliet and excellent food beer. Salmon or roasted chicken would make a good match, or take a stretch and pair it with a light Italian meal. Any lightly sauced dish, especially a mild pork dish makes a good pairing with this beer. Like many of these beers, it will go with a wide range of food.
Van Steenberge brewery makes many wonderful beers from Augustijn, a nice table beer to Gulden Draak, a very interesting dark trippel. Unique in that trippels are usually light in color and a little spicy, Gulden Draak
changes the playing fi eld. Redolent with fl avors of roasted malts, butter, candied sugar, raisins, plums, bread, and a slight alcoholic kick, this is the beer for bigger foods. Short ribs, venison, other game foods, even roasted chicken would all be an absolute perfect match for this. Sweeter barbecue sauces would be a nice pairing as well.
At the other end of the Belgian spectrum are the witbiers, or Beligan Whites. These are similar to their German cousin the Hefeweizen in that they are unfi ltered wheat beers. That is the end of the comparison. Unfettered by the Reinheitsgebot that ties German brewers to four basic ingredients, the Belgians look for adjuncts that enhance the fl avor and the body of the beer, not dull it down or make it cheaper to produce. Witbiers are no different. Left for dead in the late 1940’s this style was
revived by a milkman named Pierre Celis in 1966. Mr. Celis recreated the style and almost single-handedly became responsible for the current proliferation of this beer. The traditional witbier is fl avored with Curacao orange peel and a little coriander. The consensus is that this beer is the perfect beer to pair with salads, as long as it doesn’t have a sugary sweet dressing. It’s perfect with vinaigrettes and will stand tall with any salad fi xings you choose to use. This is also an excellent brunch beer. The beer provides the perfect contrast in egg dishes and the acidity makes it a good match for breakfast meats.
One of the most unusual styles from Belgium is the Flemish Red or Brown. Brewed with house yeasts and bacterial strains designed to produce an amazing range of fl avors, these beers can be an acquired taste. However, once you have discovered these beers, there may be no turning back. Typically darker in color, these beers have a bit of nuttiness with a hint of chocolate. They also are acidic, even vinegary (but in a good way). Typically they will remind the drinker of a nice dry sherry. Rodenbach is the best selling of these beers. Pair this beer with shrimp or egg dishes, a nice shrimp and gruyere omelet sounds like a good match. Other shellfi sh go equally well with this delightful beer, in fact Continued on Page 22...

5 STEPS TO BETTER COCKTAILS
Quick and Easy Tips to Mix like a ProEver wonder why your cocktails don’t taste quite like the pro’s drinks? Sometimes it’s the little things that can make the difference between a great cocktail, a mediocre one and one that gets spit into the sink. If you pay attention to the world’s best bartenders you will notice that there are a few steps they take when making almost any cocktail that add that “WOW” factor to the drink. If you were to follow these five easy steps every time you shake or stir your favorite drinks you will soon find that the quality of your cocktails is improving.
1. Upgrade Your Liquor CabinetThere is a significant difference between the distilled spirits on the top shelf and the bottom shelf of the liquor store. Your drinks will reflect the quality of their ingredients and, because liquor is typically the strongest ingredient in a drink, it is important to spend a little extra money on quality. A Martini made with a 5 dollar bottle of gin is going to be disappointing compared to one made with a 40 dollar bottle of gin. That doesn’t mean that you have to spend a fortune every time you go to the liquor store. There are very good mid-range brands available that
are perfect for “everyday” mixing that cost around $20-30 a bottle. This simple upgrade will start your cocktails off on the right foot.
2. Use Fresh IngredientsWhenever possible choose fresh instead of canned or bottled ingredients for your cocktails. This primarily refers to fruit juices but can also be applied to other mixers such as using a soda siphon as opposed to buying bottled soda water or club soda and making your own simple syrup, sour mix or grenadine. With fruits the answer can be as simple as squeezing lemons, limes and oranges with a hand juicer or getting an electric juicer to make fresh apple, cranberry, pear or any other type of fresh fruit juice. Many of the bottled mixers will include unwanted additives that take away from the freshness of the cocktail.
3. Match the Drink and Glass TemperatureThis seems like a simple, possibly unnecessary, step to mixing drinks but it makes a world of difference. When you are serving cold drinks, chilling the glass before pouring will keep the drink colder longer and the experience of drinking is better from beginning to end. This can be as simple as placing a glass in the freezer for a minute or pouring cold water or ice in the glass while you shake and dumping it out before the pour. The same theory applies to warm drinks. If you are making a
Hot Toddy, warm up the glass before hand by pouring some hot water inside while you’re preparing the ingredients. Nothing ruins a drink worse than getting to the bottom and a cold drink is warm or a warm drink is cold and this simple step can stop that.
4. Use Garnishes When AppropriateNot every cocktail needs to be garnished but those that do call for a lemon, lime, orange or whatever depend on that addition for flavor and balance. Garnishes also complete the drink’s presentation. For instance, a Gin and Tonic without the lime is missing that essential, subtle citrus and a Martini without the olives lacks the soft brine flavor that infuses the drink. Garnishes are important and even if their absence doesn’t ruin the finished drink, it certainly is not enhancing it like it was designed to do.

MARBURY OFF TO CHINA
Two-time NBA All-Star Stephon Marbury will become the highest profi le American to play in the Chinese Basketball Association after he agreed to join the league’s Shanxi club. The 32-year-old, a free agent since leaving the Boston Celtics last season, had agreed to a deal with the northern club and would arrive in Shanxi next week, the team announced on its offi cial Web site.
“The aim of signing Marbury is to pay back our fans and try to win more games in the rest of the season,” said Shanxi boss Wang Xingjiang. The 2001 and 2003 NBA All-Star was expected to help boost Shanxi’s ticket sales as well as their chances of making the playoffs. Shanxi is currently 15th in the 17-team league.
Wang added that Marbury’s salary would not be too high because the former New Jersey Nets and Phoenix Suns player wanted to promote his personal brand of shoes in China. Shanxi last season hired former NBA player Bonzi Wells, who scored as many as 50 points a game. The contract ended after less than two months when Wells went on vacation but failed to return on time.

WADE AND MOURNING TURN FOCUS TO HAITI
The Haitian earthquake relief fund founded by Alonzo Mourning and Dwyane Wade has received initial pledges of well over $800,000 from at least 27 professional athletes, including LeBron James, Kevin Durant, Chris Paul, Michael Vick and Gilbert Arenas.
Wade’s donation was a one-game salary, about $175,000. Mourning, James, Durant and Paul each pledged $100,000.
Mourning spent about 36 hours in Haiti last week, working at a makeshift hospital and trying to assist rescue workers and fi rst responders in the devastated capital Port-au-Prince get badly needed supplies
such as water, food and medical equipment.
Mourning and Wade are calling their venture the “Athletes Relief Fund for Haiti” and began soliciting donations Friday.

Styx, one of the most successful “arena rock” groups of all time, was born on the South Side of Chicago in the late 1960’s.
First known as Tradewinds, the band offered a distinctive blend of driving rock ‘n’ roll rhythms with classical-influenced melodic themes. Styx is the first musical act to ever have four consecutive triple platinum albums, and they remain one of the most popular musical acts in history.
The band members eventually decided on the name ‘Styx’ when they signed to Wooden Nickel Records; several suggestions were made, and Styx was chosen because at the time, it was “the only one that none of them hated.” Named after a river from Greek mythology that ran through “the land of the dead” in the underworld, Styx has seen enormous success throughout the years with several successful albums and countless fan-favorite hits. Guitarist Tommy Shaw joined the
group in 1975 following the departure of Curelewski. Tommy Shaw left in 1983 and returned again in 1995. Glen Burtnik played guitar, vocals in 90/91 and bass guitar, vocals from 1999 to 2004. Dennis DeYoung was removed from the band due to a viral ailment that left him sensitive to light in 1999 and was replaced with Lawrence Gowan-Keyboards, Vocals. The present lineup includes new members Todd Sucherman drums, percussion, Lawrence Gowan vocals, keyboards, guitar and Ricky Phillips bass guitar, vocals.

LOUDEN SWAIN - A BRAND NEW HURT (3 CAR WRECKORDS)
This is simple, stripped down, organic and straightforward pop fl avored mid-tempo driven rock reminiscent of 90’s era commercial radio fare. Picture the opening act for any number of 90’s bands and you’d see them fi t right in: Gin Blossoms, Toad The Wet Sprocket, Hootie & The Blowfi sh, Third Eye Blind, Matchbox 20, etc. “All I Need”, “Kind Of Guy”, “Downtown Letdown” are all fi ne, simply crafted tunes while “Mrs. Vance” shows a slightly more upbeat feel. But this is track #6 into a 12 song
disc. IMO, this track along with a few others buried in the 2nd half of the album would better balance the record closer to the beginning, if not the start of the album. “Election Day” is another good track, as a matter of fact I didn’t fi nd any tracks that sounded as though they were “fi ller” at all, but nothing jumped out as being incredibly catchy
either. Just good songs with very little hooks. Certainly worthy of multiple listenings as it shows potential of perhaps what is to come. If this were released 15 years ago, this would have had aspirations of being regular radio tuneage. Coming out now it sounds slightly retro and perhaps not cutting edge for what radio seemingly deems “hip” by today’s standards.
