Welcome back! Yes we made it to our second edition of The LOCAL Mag!

As predicted last time, we are back with a bigger issue jam packed with lots of events and features on some known and not so well known locals.

This month we feature a much loved local legend Aub Gillespie who arrived in style at his gala 94th birthday bash at the recently re-opened ‘Tenterfield Saddler’. Aub was in fine form at his birthday bash, reminiscing, and even having a dance with the ladies.

In our ‘The People you meet’ we caught up with business woman, accountant and mother, Kristen Lovett who talks about life, work and juggling motherhood and career.

You’ll also find in this issue the recipe to the wonderful Christmas cake that’s in

Boho SummerFun fashion for a light and breezy summer day, these bohemian inspired pieces can take you from the beach to a bbq or perfect for a casual Christmas party. Check out some of our local boutiques for some similar styles.

FASHION

We’re not talking about hippie caftans and tunics, flower crowns, or the kind of wears you’d sport at summer music festivals even though these are all good things. The new boho is all about making bohemian-inspired styles wearable for your everyday life, whether you’re going to the office or anywhere else where a flowing maxi dress or fringed crop top may not be appropriate.

By pairing bold, eclectic prints with classic silhouettes and giving structured pieces touches of exotic flair with beaded and dangling embellishments. The results are outfits that convey bohemian sensibilities but that don’t have to be restricted to just a holiday wardrobe.

HEALTH & FITNESS

TIPS for “Ditching the Exercise Excuses This Summer!”

Get your sweat on this summer when the weather heats up! Your body will thank you for it. Michelle from Jubilant Fitness - www.jubilantfitness.com.au - gives us some tips on how to keep motivated to exercise even when it’s sticky and hot and it’s the last thing you feel like doing.

Muscle up mentally to form habits that enhance your life...80 % of your health and fitness is determined by your habits.

Own up to your personal responsibility!

Motivation problems? Set regular exercise dates with friends and do not jilt the dates! Sign up for a fun run, ocean swim or team sport together. Join a group class.

Uncomfortable in the heat? Exercise very early, or in the cool of the evening. Invest in light stretchy clothing and decent shoes.

It’s a heat wave today! Pools are not only used for swimming! Bodyweight exercises, walking, running, aerobics...

Tenterfield pool opens between 6am and 8am specifically for early morning fitness.

You don’t know how? Have health issues? Lacking motivation? Hire a professional Personal Trainer! Jubilant Fitness takes appointments from 4am until late.

Visitors you have not seen in years have arrived? Choose a place of natural beauty and flood their visual senses. We have the “Creek Walk’, Mount Mackenzie, and national parks for walking, running and cycling. Stop under a shady tree to do a few step ups, bench press-ups and stretch.

Stay hydrated throughout the day.Avoid diuretic drinks like tea, coffee, and manufactured energy drinks.

Try Jubilants Healthy Exercise Refresher: Mix 1 cup coconut water with 1 juiced lemon, 1 cup water, 1 teaspoon honey and a pinch of Himalayan salt. Garnish with mint leaves!

LM: DO YOU HAVE A RITUAL OR CERTAIN THINGS YOU DO WHEN YOU’VE HAD A REALLY CRAPPY DAY? KL: I try not to get bogged down in negativity or bad experience but do feel that these ‘days’ are given to us to learn something from. I do have a tendency to over think things so I do like to process what it was that made the day crappy but then quickly move on once I establish how I could have done things better LM: SAY YOU WERE ABLE TO TAKE 6 MONTHS OFF WORK… YOU’RE FREE TO DO WHATEVER YOU WANT. MONEY ISN’T A PROB. WOULD YOU TRAVEL? WOULD YOU WORK ON A PERSONAL PROJECT? HOW WOULD YOU SPEND YOUR TIME? KL: I have never had the passion to travel overseas and as my father says ‘why would

you when there is so much to see here’. I would most certainly round up my family and travel Australia. It may only be the coast line, as I’m a little attached to the ocean, but it would be certainly an Australian trip. In that time, I’d struggle to sit still or ‘do nothing’, I would write a blog as I really enjoy writing and never seem to find the time

to do it now. LM: NAME 3 PEOPLE OR BRANDS YOU ADMIRE, AND WHY YOU DIG ‘EM. KL: Richard Branson is my all time life hero and role model. A man that started with nothing, has dyslexia and started as a student operating a magazine from a basement that then turned into the biggest brand of our time in Virgin, is truely inspirational. He has a passion for life and business, a certain rebellion that sees him pursue any quest no matter how insane (Ballooning around the world) and is not afraid of risk. Big Bets, Big Wins! I use his blog, books and all things Branson as an avenue for generating fresh ideas and thought patterns. I also love his respect for his workforce and the relation-ship he has with them and their families. If I were to be stranded on an island (one could only hope it would be Necker Island) I would love to be there with Sir Richard Branson. Pink or Alecia Moore to be more correct, is also another of my idols. She represents great change for me and

We love chatting to people about what they do, where they’ve been, and where they want to go. It’s even more fun being able to share these snippets of their lives. First up is Kristen Lovett, she’s an accountant, Founder and Director of KLAS. She’s a passionate entreprenuer and fitness lover. She’s also a proud Mama to Reagan and Beau and loving wife to Ben. LM: GIVE US THE LOW DOWN ON WHAT YOU DO. WHAT’S YOUR BIG WHY? WHY DO YOU DO WHAT YOU DO? KL: I help time poor business owners redirect their energy to grow and better run their business. KLAS helps you look at your business in a new light and work on how your end picture is going to look. Begin with the end in mind. This brings achievement of goals - which is my WHY LM: WHAT’S THE MOST COMMON MISCONCEPTION PEOPLE HAVE ABOUT WHAT YOU DO? AND HOW DO YOU DEAL WITH IT? KL: That accountants are boring! Our Facebook page is full of life and an illustration of the FUN accountants have. LM: WHAT’S BEEN THE BIGGEST LESSONS YOU’VE LEARNT SINCE YOU’VE BEEN IN BUSINESS? KL: Associate yourself with the people you want to be like, success is contagious and by being with positive enthusiastic and driven people you will ultimately achieve the same. LM: HOW DO YOU SPEND YOUR TIME WHEN YOU’RE NOT WORKING? KL: With my family at our home or exercising. Work does consume allot of my time but for those few hours I’m not working or sleeping this is where you will find me. Sweat beats stress, hands down. LM: WHAT ARE YOU MOST GRATEFUL FOR? KL: My husband and my children. LM: WHAT’S YOUR NUMBER ONE LIFE VALUE THAT YOU STICK TO NO MATTER WHAT? KL: Family comes first! It is so easy to become consumed by career, business and working for clients that family can be overlooked. I am also a big believer in giving. Winston Churchill said ‘We make a living by what we get, But we make a life by what we give’ and I believe this is incredibly true. It is important to remember someone is always less fortunate. By giving, even if it is simply our time, we can make a difference.

THE PEOPLE YOU MEET

“We make a

living by what we

get, But we make

a life by what

we give”Winston Churchill

I feel was a turning point in the current phase I am in in life. She represents power, strength, health and individuality. She is an amazingly strong and influential women and again another that has built a life from nothing to become a world wide success. Although she has been known to fly into situations somewhat uninformed like when she protested for PETA against sheep Mulsing, she usually gets things right and is able to get her point across. Emma Isaacs is my third but equally influential person. She is an extremely successful, young, female entrepreneur and has achieved allot in her 34 years. She has a young family and I often relate to what she is experiencing in life but I also admire her ability to identify a market and take a hold of it. She is the CEO of the largest Women’s network in Australia and a passionate philanthropist. I adore everything about Emma. LM: WHAT’S ONE THING YOU HAVE NOT YET DONE IN YOUR LIFE THAT YOU REALLY WANT TO DO? KL: just one? My Bucket list could fill your whole page. I would like to do the Tour De Cure. I have watched this event over the last few years and feel really compelled to be involved. With the recent inclusion of Lyn and Dick Atkinson, our great friends who recently moved to Ten-terfield and who also lost their grandson Conner to cancer, I suspect it won’t be too far off before I am pedalling next to Dick and dancing on tables with Lyn. I just have a bit of conditioning to do first, particularly on the tail region!

LOCAL LEGEND

Aub Gillespie, 94 years young, is as much a part of Tenterfield’s history as the famous saddlery that put the town on the map.

So it was only natural that the Tenterfield Saddlery and the local townsfolk got together recently in the famous and iconic old building to help Aub celebrate his milestone birthday. Friends and locals gathered around the famous veranda to wish the retiree many happy returns, listen to some of his yarns and enjoy an afternoon of music and dance.

Rebecca Carpenter, who hosted the party on behalf of the Tenterfield Saddlery,

said Aub was as well-loved in the town as the saddlery he still visited almost every week.

“He is such a lovely man and gives his time freely to talk to visitors and give a bit of background about the saddlery and Tenterfield. We thought it would be a nice gesture to throw him a birthday party,” she said.

“People love to hear his stories about the saddlery and town from the old days; and he has hundreds.

“He met his late wife Noreen at a dance and they eventually married. She passed away a while ago but he never remarried. He still talks about her as if she was here. It is quite touching.”

Aub was born in Maclean in the Clarence Valley in 1920, moving to Tenterfield with his family when he was 20 years old. He

soon got a job as a butcher at the old Tenterfield meatworks.

He knew singer Peter Allen when he was a boy, as well as Allen’s grandfather George Woolnough. George was the town’s saddler and the subject of Peter Allen’s famous song, Tenterfield Saddler. It was through this song that the Tenterfield saddlery legend was born.

Aub told guests at the party that, despite having family scattered around the state, he considered Tenterfield his true home and would never consider leaving.

“This is the greatest place on earth,” he said.

Stop in to the saddlery for a look at the memorabilia and it is quite possible you’ll meet Aub on the veranda and he’ll be ready, willing and able to spin you a yarn.

Christmas isn’t Christmas without bowls full of the queen of the stonefruit.

Tenterfield and the Granite Belt is the perfect place to grow cherries and when the season has been good to the growers you can’t find a better fruit to grace your christmas table. If ever there was a fruit that typified christmas and the

summertime the cherry would be it.

I remember as kids spitting mouthfuls of seeds at siblings and dangling perfect sets of cherries off our ears imagining them to be ruby red drop earrings.

The mystery of Tenterfield’s abandoned Commercial Hotel may never be fully resolved, but locals and visitors alike can once again enjoy the comforts of the 70-year-old building’s original style.

The ‘new’ Commercial Boutique Hotel has re-opened its doors as a wine and tapas bar following a full renovation to revert the building to its original grandeur of the 1940s. The many ‘modernisations’ of the 60s, 70s and 80s have been removed, rediscovering the pub’s original polished wooden floors, vaulted ceilings and decorative cornices.

Taking pride and place at the front of the building is the long, stylish bar specialising in the best available wines and a large assortment of craft beers on tap and in the bottle. The kitchen caters for either a la carte dining, or a sumptuous Spanish tapas menu to be shared among friends.

The 19 pokey hotel rooms have also been demolished and replaced with eight stylish and modern suites,

complete with bathrooms and in some cases baths. It is the perfect place for weary travellers to rest after enjoying a cold drink, meal and coffee downstairs in the dining room.

The hotel, abandoned and empty since 2006, was taken over in August last year by a partnership of the Sibley family – twins Justin and Jodie Sibley, their younger sister Cassandra Dillon and her husband Tim, and the Sibley parents Robert and Colleen. Cassandra and Tim Dillon live on the premises and manage the bar, restaurant and accommodation.

The first thing that struck them was the massive task that lay ahead to get the once glorious building back into shape.

“It was just as it had been when it was abandoned in 2006,” Jodie, the Commercial’s marketing director, said. “There were beer kegs in the cellar still tapped and ready to pour and beds were still made up with folded towels and bars of soap on the ends. We even found an old soup container with soup still in it.”

What was even more daunting was the extent of the renovations that would be needed. The ‘improvements’ over the years had concealed some of the best attributes of the building, such as silky-oak doors with original lead lights, fireplaces, ornate cornices and charming balustrades.

In particular, the suspended ceiling throughout the building simply had to go.

Today the charm has returned, with locals and visitors once again able to stop in for a meal or a night’s accommodation in a style the architects no doubt envisaged during the original construction in 1942.

The Commercial Boutique Hotel is open for lunch and dinner from 10am, Wednesday to Sunday and for weekend breakfasts on Saturday and Sunday.

FOOD & WINE

Put something different on the Christmas table this year. Smoked Duck, Premier Salami and Kabana from Premier Meats Country Smokehouse. Don’t forget to put in orders for our Traditional Hams

YOUR PARTNER IN CHRISTMAS ENTERTAINING

A MERRY CHRIstmas &happy new year

FROM EVERYONE AT

A sweet and spicy glaze to compliment a warm and smoky cooked ham, perfect for Christmas Day or just to feed hungry hordes over summer. You can even do this recipe outside in a covered barbeque.

TIP: Use a disposable baking tray for easy cleanup

spiced quince glazed ham Preheat oven to 180C.

Stir 120gm quince paste, 80ml dry white wine, 3 tbsp apple juice, 2 tbsp vinegar and ½ tsp each ground chilli, ground cumin and ground allspice in a small saucepan over medium-high heat until melted and smooth. Add 150ml maple syrup and stir until combined.

Peel back skin from the ham, make sure not to tear the fat. Use a sharp knife to score around the shank, then detach the skin and reserve (use it to cover leftover ham to help prevent it from drying out).

Score the fat (not the flesh) evenly with a small sharp knife, maintaining an even depth all over. You can either score in a crisscross pattern to form diamonds or in parallel lines.

Place ham in a roasting pan, brush with half the quince glaze and roast, brushing occasionally with remaining quince glaze, until sticky, golden and warmed through (1-1½ hours). Rest for 30 minutes before carving.

ENTERTAINMENT

If you still haven’t found the perfect Christmas gift or New Year’s treat for your partner or loved ones, rock on over to Kraze Maze and Café for a music event that is not to be missed.

A day of outdoor entertainment, food and refreshing drink could be the order of the day to wind up the holiday season. Kraze Maze and Café is hosting its inaugural outdoor music event on January 10, and it is already proving popular with locals and visitors alike.

The event would feature Johnny Cash tribute band Cashville, backed by audience favourite Little Phoenix.

Cashville pays tribute to the legendary Johnny Cash covering his lengthy career across various styles and periods

of music, including the many duets he performed with wife and love of his life June Carter. They have been invited to perform in Nashville, Tennessee (USA) next year and have featured at Woodstock-style festivals and Cooly Rocks on the Gold Coast to name a few.

Die-hard Johnny Cash fans claim that the Johnny Cash Carter Tribute Show presented by Cashville is the best show of its kind and they say they’ve seen them all. You won’t want to miss them, whether you’re a Johnny Cash fan or not. But if you are a fan, you certainly won’t be disappointed.

Playing as a support act to Cashville is Little Phoenix, the little lady with the big voice. Little Phoenix will perform a blend of 60’s, 70’s and rock & roll favourites, including a special tribute to the music of Patsy Cline.

The entertainment kicks off at 10.30am, with a wide variety of food and sumptuous tempters on offer throughout the day until close. All food types will be catered for, including gluten free and vegetarian. The Kraze Maze café is a fully licensed venue and will be offering a selection of wines, champagne, beers, ciders and non-alcoholic drinks.

This is really an event not to be missed, and if you haven’t yet decided what Christmas gift to get your loved one, a ticket to the outdoor concert could be just the thing. A word of advice though. It’s going to be popular so get in early to reserve your spot.

Bookings can be made at Clobbers, Ballandean Tavern and Kraze Maze or by phoning 0427 361 393.

Since 1876 the Tenterfield School of Arts has operated from this site where its buildings have evolved to meet changing needs. For over a century it has been the focus of Tenterfield’s community life, serving as a town reading room and library, public hall, performances and events, recreational venue, cinema, skating rink and now a museum. The Tenterfield School of Arts also played an influential role in the development of the Commonwealth of Australia. For it was here on 24 October 1889 that former NSW Premier, Sir Henry Parkes, made his provocative Tenterfield speech which set in motion the popular movement resulting in the Federation of Australia. This nationally historic site now conserved houses the Sir Henry Parkes Collection, a museum devoted to Federation and the history of the School of Arts. enormous balancing granite stones. Why not camp the night & head to the summit for a sunset or sunrise.

Basket Swamp National Park is well worth a visit. Recommended 4WD access and no facilities, there’s plenty of places to camp, swim and hike. Explore Basket Swamp Falls, pack a picnic and head to Timbarra Lookout for sunset, or visit Woolool Woolloolni Aboriginal Place/Balancing Rock.

Boonoo Boonoo National Park is the perfect spot to head to cool down this summer. With spectacular river & gorge scenery, head to the lookout and watch as the Boonoo Boonoo River falls 210m into the gorge and rainforest below. There are plenty of walking tracks, camping by the river and shady picnic spots, as well as secluded rock pools.

Koreelah National Park hugs the steep slopes below the Acacia Plateau and offers World Heritage listed rainforest to explore. Enjoy easy walking, remote camping and fantastic bird-watching. Take a stroll along the rocky gorge and spend the afternoon swimming in natural pools and spotting wildlife.

Tooloom National Park has the most diverse kangaroo and wallaby popula-tion found anywhere in Australia, and offers visitors a picnic area and two short walking tracks.
