I would like thank all the facilitators for giving of their time to make this internship possible and
giving us further knowledge in the culinary industry. I would also like to thank most importantly
my parents for allowing me to follow my dreams , in the first place without them it wouldn't
have been so easy to follow these dreams.
1. THE HISTORY OF THE ESTABLISHMENT
Trinidad and Tobago Hospitality and Tourism Institute is located in the northwestern peninsula
in the city of Chaguramas. From the Institute the Gulf of Paria can be viewed, this huge body of
water and entertains all kinds of sea traffic. The beginning of the Institute was not peaceful as it
begun as a hospital for the Americans, during World War II where there was a military base.
The Americans possessed this location from the year of 1941 and this became a host to
garrison of 20,000 troops, this made it the biggest base outside of the United States of America
soil. About 130,000 troops were stationed during the time until 1967.
The military hospital was decommissioned in 1967 upon the Americans departure when it
was then handed over to the Government of Trinidad and Tobago. The base wasn't used for four
years until in 1971 , where the government modified the identity and the hotel school was born.
It was established on May 31st 1972 and operated jointly with the Canadian Government through
the association with Ryerson Polytechnic Institute.
In 1975 the association was over and the Government toke full responsibility and placed
The Trinidad and Tobago Hotel School under umbrella of the Industrial Development
Corporation (IDC).
The IDC was disbanded causing the school to be placed under the Ministry of Education
and a Board of Directors was put in place to govern its daily operations. This change also came
with the change of the name to The Trinidad and Tobago Hospitality Training Institute.
In 1996 the institution went another name change, becoming The Trinidad and Tobago
Hospitality and Tourism Institute . This name more fully reflects the Institute's products and
services and places it within the hospitality and tourism industry.

TTHTI consists of 19 departments and they are : Executive Director's Office, Finance
Department/H.R. , H.R. , Student Services Department, Admissions and Registration/Registrar's,
Faculty Department, Culinary Department, F&B Management Department, Tourism Department,
General Education Department, Marketing Department, Quality Assurance Department , Library,
Stores Department, Facilities Department, Purchasing, Hilltop Fitness Centre, Cafe Collage and
I.T. Department.

STAFF SIZE
The staff size at TTHTI is 69 persons, adjunct not included some the staff consists of :
Raakesh Madoo who is Food and Beverage Lecturer ,he has more than 10 years practical
experience in the Food and Beverage Industry . He was also part of the Trinidad and Tobago
Culinary Team, and conducts Mixology , Bartending and Beverage Management Workshops in
the Caribbean by partnering with the domestic and regional organizations that take part in the
Food and Beverage Industry. Jason Peru is a graduate of TTHTI in 2004 with an Associate
Degree with Culinary Management. He was presented with three scholarships to attend Johnson
and Wales University located in Miami, to continue with his culinary education further. This
where he attained his Bsc. in Culinary Arts where he graduated with Golden Quill Honours and
maintained the Dean's Honours List throught his stay there. In July 2007 he became a Chef
Lecturer and co-head of the Culinary department. Carlene Alleyne graduated from the University
of the West Indies with a Bsc. in Hospitality and Tourism Management. Ms. Alleyne also has a
Certified Hospitality Education from the American Hotel & Lodging Educational Institute. She
also has of five years in the Industry at Walt Disney World Resort in Front Office and Guest
Services. Kathryn Mc. Connie has been in the Hospitality and Tourism since 1987 and was
educated in the United Kingdom. She initially began in Tobago and then moved to Trinidad. Ms.
Mc.Connie is qualified in Scuba Diving, Tour Guiding, Customer Service, Events Management,
Hotel & Tourism Management and a Certified Hospitality Educator. Being affiliated with
TTHTI since its inception with assessment and certification of Tour Guides , now she is the
Student Activities Coordinator and Lecturer.
