Greetings,
On May 24, 2004 Don Brookfield Sr., founder, mentor,
inventor and leader of Brookfield Engineering
Laboratories passed away. His inventions and his
Company have enjoyed 70+ years of success to the
point where they have become the world standard for
viscosity measurement. The reasons for this are very
important to recognize.
Don was a consummate engineer. He was a
perfectionist who believed that his products could
always be improved no matter how successful they
were. He had an abiding desire to support and service
his customers to a degree that often caused him to lose
money rather than have a dissatisfied customer. Don
believed that for a business to have a future it must
never take advantage of its market position, never
overcharge its customers, and always provide excellent
service at very reasonable cost. He liked to say “if you
give the customer the best value, they will come back
to you over and over again”.
Don imbedded these ideals into the culture of
Brookfield, and we continue to honor the legacy
of Donald W. Brookfield, Sr. by maintaining and
reinforcing those ideals. Quality, customer support and
peerless value for your money, all are paramount in the
way Brookfield does business. As CEO I am committed
to furthering those attitudes, because I always want
our customers to think of Brookfield as “quality, service
and value”. I know my father would agree.

Brookfield enhances the LFRA Texture Analyzer
with improved test capabilities for QC & R&D
Brookfield has redesigned the world standard Steven’s LFRA Texture Analyzer, combining simplicity of operation with increased load capacity and expanded test flexibility. In stand-alone mode, the LFRA provides increased test method choices, better resolution and improved accuracy. An automatic Bloom test option facilitates analysis for our established gels and gelatin markets. Expanded testing, including Texture Profile Analysis, is available via our Excel based software, enabling the technologist to generate analytical data comparable to other more costly instruments.For complete information regarding this exciting development, turn to pages 66 and 67.

The ability to gather data on a material’s viscosity behavior gives manufacturers an important “product dimension.” Knowledge of a material’s rheological characteristics is valuable in predicting its pourability, its performance in a dipping or coating operation, or the ease with which it may be handled, processed, or used. The interrelation between rheology and other product dimensions often makes the measurement of viscosity the most sensitive or convenient way of detecting changes in color, density, stability, solids content, and molecular weight.

The Selection Method
Standard Brookfield Viscometers/Rheometers are supplied witha standard spindle set constructed of stainless steel (#302). Additional spindle options are available in #316 stainless steelor with teflon coating for increased corrosion resistance.
Cylindrical SpindlesCylindrical spindles are particularly valuable when measuring non-Newtonian fluids and are applicable to any Brookfield Viscometer model with the use of appropriate range tables. Cylindrical spindles may be substituted for standard spindles upon request.

Software Requirements
“Loader” programs are supplied with the DV-II+Pro Viscometer or DV-III Ultra Rheometer and allow a computer to download measurement parameters into the instrument. The computer can then be disconnected, leaving the instrument programmed with your custom parameters. DVLoader™ and RheoLoader™ are shown below.
The Wingather™ data collection program for use with the DV-II+Pro collects data via a PC. The results can be graphed and plots overlaid for historical comparisons. Wingather does not offer computer control.
Control and Analysis software is used to perform automated, comprehensive testing as well as analysis on the data collected. Rheocalc32™ for the DV-III Ultra Rheometer and DV-II+Pro Viscometer, Capcalc32™ for the CAP2000+, Rheo2000™ for the R/S Rheometer and Rheovision™ for the PVS Rheometer are exclusive Brookfield Software products designed to save time and enhance measurement results.

DV Loader for the DV-II+ Pro ViscometerThis performance parameter software is supplied with the DV-II+Pro Viscometers. DV Loader is a software program that allows specific choices of parameters to be downloaded into your viscometer. It’s simple: 1. Connect your DV-II+Pro to a PC. 2. Create a custom test program on your PC. 3. Use DV Loader to download your test parameters for speed, test duration, etc. to the instrument. 4. Disconnect the DV-II+Pro from your PC. Now you have secure, user defined test methods in your viscometer that are set-up to run tests for your particular applications.
RheoLoader for the DV-III Ultra RheometerCustomize your test preferences for DV-III Ultra Rheometers. This exclusive Brookfield software, supplied with the DV-III Ultra, allows you to create customized programs for your instrument, each with as many as 50 commands. Once a program is downloaded from a host computer, comprehensive viscosity tests can be run automatically in stand-alone mode.

Wingatherfor the DV-II+PRO Viscometer
This data collection and graphing software provides an easy means to gather tabular data, graph and plot that data, and create permanent test records for analysis. Use Brookfield’s Wingather application software to collect, analyze or record test data in any of five different modes:Manual – A data point is taken when the operator chooses
Vari-Speed – A data point is taken when the operator changes the viscometer speed
Timed Stop – A data point is taken at an operator defined time interval.
Timed Torque – Data is taken at an operator defined time interval until an operator defined % torque value is reached.
Spring Relaxation – Data is taken at an operator defined time interval as the spindle “unwinds” (motor off condition).
Data is output directly to your PC. The data can easily be graphed. Overlay plots showing multiple sets of test data are possible.

Capcalc32for the CAP 2000+
Turn your CAP 2000+ Viscometer into a sensitive, accurate Rheometer. When advanced sample analysis is required, Brookfield’s Capcalc32 application software can “control” the CAP 2000+ Viscometer from any PC. Capcalc32 software provides automatic data capture and graphical data display to facilitate analysis of test samples.
The software allows control of a sample’s temperature for integrated viscosity/temperature tests between 5°C and 75°C or between 50°C and 235°C, depending on the model you choose. See page 16 for detailed information. It also allows the user to specify speed ramps and/or temperature ramps for more rigorous material testing.

The difficulty with viscosity measurements of hot melts and liquids at elevated temperatures has been in maintaining accurate temperature control that is consistent from sample to sample so that meaningful data could be obtained.
The Brookfield Thermosel solves this problem by providing a stable, precisely controlled sample environment. This, together with the inherent accuracy of the Brookfield Viscometers, is fundamental to the Thermosel System, which produces viscosity measurements that are not only accurate but entirely reproducible.
Several factors contribute to the stable environment:
Non-fluctuating temperature control
Small sample volume and insulated sample chamber which reduces temperature gradients within the sample
The rotating spindle, which acts as a built-in stirring device

The Small Sample Adapter, consisting of a cylindrical sample chamber and spindle, provides a defined system for accurate viscosity measurements of small sample volumes in the order of 2 to 16 mL. The Small Sample Adapter attaches easily to all standard Brookfield Viscometers/Rheometers.
REMOVABLE SAMPLE CHAMBER The design of the Small Sample Adapter allows the sample chamber to be easily changed and cleaned without disturbing the set-up of the viscometer or temperature bath. This means that successive measurements can be made under identical conditions.
TEMPERATURE CONTROL The sample chamber fits into a water jacket so that precise temperature control can be achieved when the Brookfield circulating temperature bath is used. The stirring action of the rotating spindle, plus the small sample volume helps to keep the temperature gradient across the sample to a minimum. Direct readout of sample temperature is provided using sample chambers with embedded RTD sensors connected to the DV-I+ and DV-II+Pro Viscometers and the DV-III Ultra. Working temperature range for the Small Sample Adapter is from –15°C to 100°C.
CYLINDRICAL GEOMETRY The Small Sample Adapter’s cylindrical geometry provides extremely accurate viscosity measurements and shear rate determinations.
DISPOSABLE SAMPLE CHAMBERS Disposable chambers for hard-to-clean materials. Kit comes complete with 100 chambers and special size water jacket, Part No. SSA-DCU. Available only for 13R Chamber. Additional chambers available in quantities of 100, Part No. SC4-13RD-100.

The Brookfield UL Adapter is used with any standard Brookfield Viscometer and Rheometer to make accurate and reproducible measurements on low viscosity materials. Newtonian and non-Newtonian materials can be measured. It is most commonly used with the LV series instrument (at 60 rpm, these models have a full scale range of 1-10 cP with the UL Adapter). The UL Adapter consists of a precision cylindrical spindle rotating inside an accurately machined tube. Its rheologically correct cylindrical geometry provides extremely accurate viscosity measurements and shear rate determinations.
The tube has a removable end cap which allows the open ended tube to be used in a beaker or tank. With the cap in place, the closed tube can be immersed in a temperature bath or used with the ULA-40Y water jacket for precise temperature control. Working temperature range is from –15°C to 100°C.

Helipath Stand
Designed for viscosity/consistency measurement of gels, pastes, creams, putty, gelatin and other non-flowing substances.
A Brookfield Viscometer or Rheometer is mounted on the Helipath drive motor and a T-bar spindle is attached to the viscometer using a special coupling. The drive motor slowly lowers or raises the viscometer so that the T-bar spindle creates a helical path through the test sample thus eliminating the problem of “channeling”.

Brookfield Viscosity Standards provide a convenient, reliable way to verify the calibration of your Brookfield Laboratory
These fluids are most commonly used to verify calibration of Brookfield Viscometers/Rheometers.
Viscometer/Rheometer. Brookfield Viscosity Standards are Newtonian, and they are available as either silicone or oil. Silicone fluids are less temperature sensitive.
For our customers needing a nonstandard viscosity or temperature range, our silicone fluids can be modified to meet most requirements. Viscosity Blends Calibrated at 25°C (77°F)

Consumer products succeed in the marketplace in part because customers perceive which “textural characteristics” are desirable. This is certainly true with food products but also applies to cosmetics, pharmaceuticals, packaging, industrial materials and even adhesive type materials.
Why Measure Texture?
Texture analysis is primarily concerned with the evalua-tion of mechanical characteristics where a material is subjected to a controlled force from which a deforma-tion curve of its response is generated. These mechani-cal characteristics in food can be further sub-divided into primary and secondary sensory characteristics.

With over 40 years experience in texture analysis, from the Boucher Jelly Tester to the Stevens rangeof Analyzers, Brookfield’s new Texture Division pro-vides customers with a complete texture assessment service. We specialize in the development of novel and innovative test applications and accessories for solid and semi-solid materials, enabling our custom-ers to maximize the practical value of their texture studies within all test environments.
Utilizing simple compression or tension forces, we are able to imitate almost all conditions imposed during the manufacture or handling of a wide range of foods, industrial materials and personal care prod-ucts. Such measures provide a “real life” insight into the physical properties of a product, often invaluable in maintaining consistent quality manufacture while minimizing rejects in production.

The key to successful quality control is designing effective viscosity test methods. Our Methodology Consulting Service brings a Brookfield consulting engineer to your facility to review and recommend appropriate test methods for your materials. We will work with you to define acceptable viscosity behavior taking into consideration relevant shear rates, shear stresses, temperature and time sensi-tivity issues.

Calibration & Certification…for long life and optimal performance of your Viscometer, Rheometer and Texture Analyzer
For your viscometers and rheometers, we will inspect your instrument for wear, clean, adjust and lubricate the internal mechanisms, replace part of the sensing system
element (the pivot support assembly and, when required, the pointer shaft), and check your spindles. Spindles that are returned to a Brookfield Service Center are also straight-ened if necessary. In addition to this main-tenance, we calibrate and certify in writing that your instrument is operating within proper Brookfield specifications. This certifi-cation states that your instrument has been calibrated against standards which are trace-able to the National Institute of Standards & Technology (NIST). This is becoming an increasingly important requirement as industry throughout the world takes steps to comply with ISO 9000 regulations. If your instrument requires any additional repairs, we will contact you before proceeding.
For texture analyzers,we also inspect for wear, clean, adjust and lubricate internal mecha-nisms, and adjust,if necessary, the zero and span for properload cell performance. Certifiedcalibration weights can be purchased for your texture analyzer.
We will automatically remind you when it is time to return your instrument to Brookfield for your next Calibration and CertificationService.

Load Cellelectro-mechanical device which records the mechanical response of the sample.
Multiple Point Analysisanalysis of the sample properties using mul-tiple points of penetration to provide a cross-sectional overview.
Penetration Testingthe sample is “penetrated” with a probe of smaller surface area than that of the sample. This creates both shear and compression forces within the sample and provides agood indication of product hardness andconsistency.
Shear Testingblades or wires are utilized to cut through the sample and evaluate cross-sectioned charac-teristics using a combination of compression, shear and tearing forces dependant upon the geometry of the cutting fixture.
Snap Testingused to assess the fracture and bendcharacteristics of solid materials supportedat either end and compressed in its center.
Stress Relaxationsample is compressed to a target distance and held for a period of time. The sample relaxes under constant stress and the rate and degree of relaxation is used to evaluate sampleelasticity, freshness, etc.

Texture Profile Analysisprocedure developed within the food industry using uniaxial compression cycles to assess the mechanical properties of a sample.Two consecutive cycles from a single point of trigger are applied under a constant speed from which seven principle sensorialcorrelations can be made.

Visco-elasticmaterials which cannot be classified as either viscous or elastic and have the properties of both. Texture analysis is used to determine the ratio of viscous element to elastic element.
